Pepper Jelly and Pesto Sandwich:
Chicken or use what meat you want!
Pepper Jelly
Pesto
Brie
Bacon
Sourdough bread
Pesto and Chicken Savory Pies:
1 box of puff pastry thawed in the fridge-cut each sheet into 6 equal rectangles and prick center with fork
Egg wash (1 egg beaten add a little water)
FILLING:
4 tbs. pesto
1/2 cup cherry tomatoes chopped
1 cup shredded rotisserie chicken
1 cup shredded mozzarella cheese
Salt and Pepper to taste
1 cup of spinach
TOPPING:
S&P and Italian seasoning
Bake at 400 degrees for about 20-22 mins

I also bake my bacon but I make it two different ways. First way is that I bake it on a roasting pan at 400 until it is perfectly crispy. The second way is to cook it the same way until it is a minute or two short of done. It won’t be crispy but that’s what you want. Drain them on a paper towel then lay them in a zip lock type bag and pop them in your freezer. When you want bacon you take however many you want and wrap paper towels around them. Microwave for 1 to 2 minutes and they are perfectly crisp!

For the "Adult Hotpockets" I would still make the full recipe. Bake half to enjoy and freeze the other half unbaked. When you need a quick dinner, take the frozen Hotpockets and bake for about five more minutes than the recipe states or until browned and heated through.

I love that you did more than one recipe with the ingredients! I always struggle with using up jars of things I have in the fridge like pesto or salsa, so it's nice to have options that helps use it up!
Great ideas. My "gas station" which carries fresh meats and far more just started doing rotisserie chickens one day a week. A very easy thing for me to pick up now and they are offering best price around. Sam's, Walmart's and Costco's here have ALL went up in price I think.
That puff pastry filling looks amazing. A salad is a great idea. I would stretch it a bit by cooking up a little orzo to add to it! YUM!!

You can make cheese tortellini to mix into the chicken pesto leftovers ! That would be amazing. Also you can put it on top of a pizza dough and bake it!

Oh lordy forgive me for the sin I will commit when I make that sandwich with the cheese and pepper jelly, my arteries will not like it but I have to try it, YUMMY. The 2nd sandwich you made with the puff pastry looks like an adult version of a hot pocket, (LOL I typed that before Bunky said the exact same thing) again yummy. You two always give us such great recipes, I do use rotisserie chicken when I make fast enchiladas and I always use rotisserie chicken when I made chicken salad for sandwiches, no recipes though, I just throw stuff together, but it's always good. For the puff pastry recipe, try sprinkling the pockets with Everything Parm bagel seasoning.
I always bake my bacon it comes out so much better it doesn't curl all up like it does in a skillet. That sandwich looks really good minus the pesto im not a?fan of pesto but love hot pepper jelly.

I would have loved to make it to chat during the premiere but y'all, we had quite a week and I slept in this morning! haha y'all are so fun as usual. ❤I'm feeling the need to experiment with the puff pastry.....so many possibilities! And we love nachos! All different kinds. haha We eat them right off the pan (it's just the two of us) and just put separate toppings on our own side. Makes for really easy clean up.
