    Old man taught me to use a spoon flip over upsidedown to scale fish, keeps the scales from flying around

    Wish I'd watched this earlier today, I just caught a 11lb 10oz bass this morning, didn't have a filleting knife wouldn't know how to use it anyway, till now.Ended up using my electric saw to cut it into cutlets cos my knife wouldn't go through it! We live and learn!

    My god, what a sharp knife. I fillet a sea bass today, along with a red snapper, the sea bass was my second fillet and I butchered it, but I was very pleasantly surprised with how my snapper came out. It was my first not butchered fillet job. Than you for sharing!

    How about placing a chopping board in a sink with water running directly onto the board, scales seem to stick to / move toward the board??

      He is using a fillet knife. This has a flexible tip and is the right tool for the job.

    This is really a really good video, what I would like to see you do is "how to fillet a cooked seabass" every time I order one in a restaurant I make a mess of it and waste loads of flesh. I recently had one in France where they prepared it for me and there was no waste just the fillet beautifully presented. It would be great to see how to do it

      +Aida May Nope, you can just rinse off the final filet and then pat em down with some paper towel if you want.

      Brian McNulty of course, why wouldn't it be? When this was made, quite a few years ago, there were no large farmed bass, only wild. It's still quite unusual to get farmed bass larger than 1kg, most are much smaller...
