I think for this specific run, there was just too much chaos at the front of the house. The orders were taken very early, sometimes all at once where you'd have six to eight people waiting for food with only two hobs available to one person deciphering two systems of streak orders fired at her rapidly.
Consistently they take too many orders at once. I think they get so in the flow they forget that extra few seconds really helps
That was a good run! One tip for steak sauces is to put the sauces in the dining room, then the waiters can sauce whatever steaks they need and the kitchen can focus solely on which steaks to cook. Also, best two dishes to get far are breakfast and fish. I've done a 4-person Day 32 fish run and a 4-person Day 37 breakfast run. Breakfast is great cause you can freezer an entire loaf so you start the day with it.

The issue you guys are having is overwhelming the kitchen. Two things you can massively cut down is to make the waiters deal with both plates and sides, as there isn't a reason for kitchen to deal with either. it gets confusing with all the different combinations for sides, and plates just take up space, as well as mess up orders if plated accidentally
the other obvious thing is that you guys were taking orders way too quickly at times. its tricky to say a proper timing for it, but you should aim to only take an order when the previous is done (also helps avoid confusion in kitchen)
Aenne's color coding steaks wasn't a bad idea because Jas used to get confused with medium and well done steaks.

I'm no expert as I've only played the demo and have only been watching streams. But I think your biggest issue right now is probably overwhelming the kitchen too much. Not really min/max but here are some points you could consider.
Role responsibilites. You are already doing this but can be evened out more.
- Head Chef - Focuses on cooking mains and plate dishes
- Waiter - Takes, Assembles and Delivers orders
- Dishwasher - Clear plates from tables and washes dishes. Can do research at start of day since there won't be dishes to wash just yet. If you can get dishes automated, can assist at front of the house.
- Cook/Floater - This needs to be someone who can make sense of all the chaos going around and determine where help is needed the most. Pressure on roles changes during the day so at some point in time 1 of the other 3 people will need help keeping up.
- Priority 1, cooks/preps sides/toppings at the start of the day. Get cooked pots out to dining area for waiters. Refill/Restock as needed.
- When kitchen duties are dealt with, assist waiter/dishwasher
A few more things
- Breakfast or Fish is probably the easiest to do. Breakfast is unlocked at level 8.
- Put cooked pots and sides/toppings that don't need cooking(like olives) at the front of the house. Waiter then could just pick up a main, plate it and add sides/topping as they serve. They will be watching tables the most and can best keep track on what sides/toppings need to go on the plate they are delivering.
- Sides are very flexible. It can be delivered separately from the main dish. Customers will still accept a dish with a side they did not order. Toppings will need to go on the main though and is not accepted if not ordered.
- Customers can go through one another, it's just the door itself they have trouble with. So don't worry about them, just worry about getting yourself enough room to move when setting tables. In fact, place a table in such a way that the chairs are against/towards walls and out of the way if you can. As long as the chair is green then customers can get to it just fine.
- Wait on taking the first order of the day. Use that time to prep soups/sides/toppings especially if you don't have enough hobs.
- This will come with experience and will get more complicated with additional courses. Keep track of who ordered first and who you can get out faster. If you know a table is currently ordering desserts, get to them as soon as you can and get them out. Otherwise just attend to tables in the order they come in the best you can.
- Automation is key. This is a bit hard as it all depends on RNG and how far you can get to earn the money needed to buy stuff. Having the blueprint desk, discount desk and copying desk all help with this if you can get it setup. Imagine getting all the grabbers, mixers, prep stations for free. A big investment to setup but worth it in the long run.
- Prep stations are gold. The frozen one even better. Place those at the serving window and chefs just have to stock it up and waiters are free to get what they need. Use freezers as counters for the soups/sides at the dining area if you have them.
You can have the dishes and the sink in the dining room and have the waiter grab plates as needed. The lower distance for clearing plates would be much more efficient.
13:04 The diners don’t collide, and if you need to go outside to throw out the trash, you can actually push a diner out of the way if they’re blocking the door.

Honestly, I think if you guys just start making use of the other desks (i.e. the blueprint desk) and setting up automation it would be really easy to get to franchise. Also Salads are the easiest , in my opinion, but you have to try not to get the onions and olives card.

I've been saying this in previous episodes but yall need to put the sauces in the dining room so the waiters can get it themselves while the kitchen can focus solely on cooking the steaks.

I was able to franchise on salad, so I would personally consider that the easiest option.
Love watching you all play this game, I feel like everyone is always so excited that sometimes ash’s comments don’t get listened to but overall a great run!
If there is anything that i've learned from the latest episodes, is that Anene would not survive in a solo run. Anyways, decent run.
Other people have brought up good points as well in the comments, but I think you severely underestimated how bad messes could get when picking relaxed atmosphere, especially if you don't have a mop or napkins to help deal with the situation. Add the fact that the FOH was really disorganized, and it just devolved into utter chaos. With the red wine jus steak sauce, you would have just needed to make sure to get one pot of each sauce ready at the beginning of the day, something you can pace out as long as the FOH knows not to take orders until the BOH is fully prepared (something Aenne has a bad tendency of doing). Then, since a steak order will never want both of them, it actually means one pot of each will be almost guaranteed to last for the entire day (at least until you get insane numbers of groups.)

One major problem I had seen was definetly how the messes built up and with the lack of a mop it started as a snowball and built up to an avalanche

Personally, I would have researched a stove instead of a sink. A danger stove seems ideal for steaks.

@@mica4977 Like how Price gets so angry at Aenne for joking around call the restaurant “rainbow stakes” and Price just has to correct her with an attitude. Or when Aenne buys another counter and Price says “why there?? What goes there??? and proceeds to says “whyyyyyyy” under his breath. Aenne is just trying to play the game and have fun, but Price takes everything to seriously and has to tell everyone what to do.
