I'm not so fancy, but I've been drying zuke shreds in my normal food dryer for 15 years. The shreds can rehydrate for baking, or most often I continue to crush until its powdery and use it to thicken sauces. It adds an amazing body to tomato sauces and such
After freeze drying, you can put it in the blender and blend until powder then it will take up much less space. This is great for things like sauces and soups.
Melissa I shred for winter use also (for zucchini pancakes) my husband and daughter's favorite and in the winter they can't get enough. Not just ready to purchase the freeze dryer - I have space limitations and the price is a little too high for me to take the jump. Hopefully they come out with a smaller version. Thank you as always. These machines are not only beyond the reach of the average person but will not work in the long term shtf because of maintenance/parts issues and power consumption. Get creative with mason jars and manual vacuum sealers and you will get very similar results with other methods of dehydrated fruits, veggies, eggs, cooked meats, etc. Great video.
I grill my zucchini with my homemade Italian dressing. Now that I am freeze-drying I am finding what I really use in a year. I no longer have to plant garlic every year. I also did cilantro and found I no longer need to buy fresh cilantro in the winter.
I also like using mason jars to store, freeze-dried foods. But I’m never sure whether I should put an oxygen absorber in the jar and then vacuum seal it. Do you use an oxygen absorber in your jar? I plan on using the contents within two years or so. Cheers, sincerely.
I wish I could grow zucchini, but every year I plant three plants and only get one zucchini from each plant before the vine borrers destroy the plants...😂.
Try growing Cocozelle and golden zuchini...it is the only green zuchini I can grow here because of vine borer...the propagate themselves and continue to produce even when they have been attacked by the vine bore...good luck!!!
@@moreenk5467 The Cocozelle are great - much bigger and more flesh vs seed. I have heard that Tromboncino are resistant to those bugs and are like zucchini at first then mature into something more like a Butternut later in the season (and 3 to 5 feet long). Worth a try. I tried two plants from seed this year, they could take over a swing set.
I've added mine to spaghetti sauce once it's been freeze dried. It's so fast and easy to save zucchini now.

We love the taste of the seeds in FD zucchini chips - they are fine for short term snacking, not long term storage 😊

Take a spoon and get all of the seeds out of the center.And then grate it like you would normally

What’s the difference in freeze drying and dehydrated? Can you also dehydrate zucchini and use them the same way?
I cannot figure out how to figure out the equivalency of freeze dried to fresh zucchini for recipes. Do you have any tips?
