Cheese scones are absolutely without a doubt one of the very finest baked goods humankind has ever come up with, and don't require a huge amount of skill to make.
I cut mine in triangles as there's no messing about with dough scraps - pat it into a circle, cut, bake. They come out rough but still delicious so I don't care.
If anybody has any doubts about trying to make these - go for it. This is an excellent explanation of everything you need to know.
John, not sure what your usual establishment was before you retired. But I would put you as the all time Goat for amazing Pub grub. Which is totally meant as a compliment, it’s my all time favourite food. Or was when the standards were better. 😂 thanks for another classic.

I love watching especially at bedtime as johns voice is so soothing and sends me to sleep ( in a good way ) he definitely a Winnie the Poo and I bet he gives great big bear hugs too. I think you should have a podcast for story telling … back to your cooking I have all your books, dough scraper, rolling pin and other things from your shop, I have made many of your breads the soft rolls and Scottie cake is a big favourite in my household, I made your corned beef pasties two days ago and they were amazing. John, I made these to go with a batch of homemade chili on the first cold day of the season here in south Texas! Oh John. I left the NE as a child in 1968 but a love of my Nana's cheese scones came with me and I've made them all my life. These days I just add extra cheese, don't bother with the butter, use soured milk or thinned sour cream and cut them in squares. Sometimes i add chives or onion powder. Short cuts for a busy farmer 😉 incidentally I have a Falcon Toledo stove like yours, but with a gas oven. Small world

I remember my grandmother well over 50 years ago using that same cutter for cookies and biscuits I loved the edges❤❤❤ FYI I am from Nova Scotia Canada and my ancestors were Welch and Scottish and English
Brilliant recipe, John. The cheese on the bottom is a masterstroke. No point in making it today, as there's only me at home for the next few days, and I fear the temptation to eat all of the scones would be too great. A Saturday morning job, I think. I've got some lovely mature Red Leicester that I'm saving for that.
And I love rubbing fat into flour with my fingers - I find it tremendously therapeutic, and yet, a lot of people cooking on TH-cam can't stand it. Some folks are odd.

I love this recipe - cheese scones are my favourite. I also like to add some onion powder and a little garlic pepper, so it's a really savoury taste - for me, the ideal companion for tomato soup!

Some chopped chives also go well in the cheese scones. I always double up on the mustard powder and add bit of cayenne pepper too. Even then, the scones are tasty but not too spicy or hot

My wife, upon seeing the video title, punched me in the arm and demanded “make these for me!”. My mum used to make a batch of raisin/sultana scones when she saw the window cleaner out the kitchen window, on his ladder across the road, so they would be baked and ready with a cup of tea when he showed up at our door. Those look fantastic! Since I am in America, I get the confusion between our biscuits and your scones but these are the first scones I actually want to taste. I love biscuits and gravy. So I just have to adjust my expectation, and if you are making it, I know it is good. :)

Those scones look absolutely delicious. And yes, you are correct. Southern style biscuits and British scones are completely different. The one thing they do Sharon comment though is the mixing method in both cases as you displayed so very well. You mix a biscuit just enough until the dough comes together and no more. Otherwise you end up with a poorly rising very chewy Tough biscuit.

Made Navejo bread yesterday, and it was amazing, when I pressed them to 1/4 inch thick, before the oil. 1 butter knife poke in the middle

Hi John, enjoy watching your clips. Some good points, I must try. I myself use cayenne pepper with the mustard, must try with turmeric. I also put white vinegar in the milk, about 2-3 tablespoons to a cup of milk. Must try putting cheese on the bottom before placing scones not thought of that one 👍

Hello John, this video randomly appeared on my phone and made me want to make these scones. I'm not much good at baking or cooking but thought I'd have a go. My wife said to make more than your ingredients would make so I tripled up on everything. One thing I found is with 360ml of milk the dough was still too crumbly to need so I had to add a fair bit more milk. Anyway, they turned out lovely, they look and taste great..just waiting for my wife's verdict, she's working at present.. thanks for the guide

John, thank you so much for this recipe. I’ve always been somewhat disappointed with the results of my efforts when I’ve tried to make scones in the past.
Mine are usually heavy with little or no rise, etc… I must have tried at least half a dozen times over the years but because I’ve never been satisfied with my efforts it’s months (or years) before I try again.
However I came across your instructional video a couple of days ago and it prompted me to have another go…. I followed your recipe and method to the letter and I am really pleased with the scones.. finally I have made scones I can be proud of, thank you 😀👍
