I'll stick with mine. In 1986 while Emeril was head chef at Commanders Palace in New Orleans I made gumbo at my moms house for a Christmas event where one of the guests just happened to be Lallie Brennan one of his boss's. When she tasted my Gumbo she said that was the absolute best thing she ever had in her mouth. She came back the next day and got some to take to Emeril to try. So I'll just keep those bragging rights thanks.
@@lucindajenkins8693 I'll tell you my top 2 best secrets. One instead of water I use clam Juice. You can buy it by the bottle at most grocery stores. Two I never use File'. I don't like the taste of it all. My mains spices are salt, pepper black and cayenne, garlic powder and fresh, onion powder and fresh and last Thyme, leaf not powder. I think what put that particular batch over the top though was the fact that I cut up cubes of speckled trout that I had handy and threw them in there about the last 5 minutes. I don't always do that. Just so happened I had some that day I decided why not? lol
@@SmokyRibsBBQ I prefer it. I know people who boil shrimp heads and shells for stock. I'm not a fan. That stock has a sweet taste I'm not crazy about in my savory cajun dishes.

Aw I thought he was making a homemade gumbo in 30 minutes that won a cook off… you got me with that…good one! That jar from Uncle Larry’s he used is a gumbo base, not a roux. Blue Runner makes one too that is more common. It’s a super cheat. It’s basically a cooked, seasoned gumbo gravy (the stuff you take a lot of time cooking to create when homemade) that you just add trinity and meat to and it’s ready-made in minutes. I’m from south Louisiana.
Yes, the roux and the seasoning is made into a condensed base, similar to canned soups that you add in a full can of water to, but a full jar of water with this. The delicious flavor with blow your mind. Can't tell the difference from a scratch made gumbo. I just wonder if the people they beat out at a gumbo comp, knew they got beat by a jarred gumbo LOL.

But I got to try this and decide the ultimate winner (or a quick and delicious version for weekday after work gumbo)! Either way it turns out, too much gumbo doesn't strike me as a bad problem to have.
I'll have to try that roux. If I don't have time to make my own from scratch, I'll use something like Karry's roux or similar. Only problem with that stuff, is that it's like concrete in a jar. Takes damn near 10 minutes just to soften it up. That Uncle Larry's looks more liquefied. Unless they messed with it before pouring it in the pot.
No, the way you seen it is exactly how it comes. You don't have to add any seasoning at all unlike the Kary's roux. It has a fantastic flavor and perfect spice level. The flavor will really amaze you. I would have never thought a jarred gumbo mix could be this good.

I enjoy making a roux from scratch. I knock it out in 15 minutes over medium high flame. Absolutely do not walk away and stir your butt off. Turns out perfect everytime
That's the way we have always done it, but I teach people that have never made a roux to do it slowly to almost guarantee no burnt roux, but Uncle Larry's is a game changer, especially when people just don't have time or the patience to babysit a roux. Thanks for watching

Not sure what the container that he had weighed but for that same amount of gumbo, go with 2 medium chopped white onions, 1 large green bell pepper chopped, and 2 stalks of celery chopped.

I've been making gumbo for as long as I can remember, and it truly is a labor of love, but hey, I'm older and the kids have been gone from the house, so if I get hungry for gumbo, and don't feel like spending all that time to do it, then I know what I'm gonna do. It's good stuff Joe! It was some rice called Carolina Gold, but you can use any white rice, like Uncle Ben's or Zatarains
We usually use long grain white rice here in Louisiana.
Same here, but I usually use the par boiled long grain. I love the way it turns out. This Carolina Gold is pretty good rice and worked well in gumbo

That looks good Rus. I'm more of an etouffe person, how would this work with crawfish etouffe or do they have a different roux for etouffe?
You could use it, but you would have to reduce the amount of water to give it a bit more body since etouffee is typically thicker.

No, the way you seen it is exactly how it comes. You don't have to add any seasoning at all unlike the Kary's roux. It has a fantastic flavor and perfect spice level. The flavor will really amaze you. I would have never thought a jarred gumbo mix could be this good.

I enjoy making a roux from scratch. I knock it out in 15 minutes over medium high flame. Absolutely do not walk away and stir your butt off. Turns out perfect everytime
That's the way we have always done it, but I teach people that have never made a roux to do it slowly to almost guarantee no burnt roux, but Uncle Larry's is a game changer, especially when people just don't have time or the patience to babysit a roux. Thanks for watching

Not sure what the container that he had weighed but for that same amount of gumbo, go with 2 medium chopped white onions, 1 large green bell pepper chopped, and 2 stalks of celery chopped.

I never use chicken with seafood gumbo but I do normally use sausage

I've been making gumbo for as long as I can remember, and it truly is a labor of love, but hey, I'm older and the kids have been gone from the house, so if I get hungry for gumbo, and don't feel like spending all that time to do it, then I know what I'm gonna do. I completely agree and all so true on many many levels! They're so many places selling "gumbo" and while it all for the most part is edible and tastes alright- there's always one thing that rings true when it hits them tastes buds and if you know, them you know.
