      Antelope is not one of my favorites. It is quite rich, just like elk. Elk is my absolutley favorite game meat. Now I want some elk chili.

    I have had every big game meat from North America. I like them all but I have to say Dall sheep is the best I ever tasted. Followed close by caribou and bison. Of course those are just my opinions. I get a lot of flak for saying that about caribou in particular, as you know there is always some joker that has to say something. But I swear... fried in a greasy cast iron skillet with nothing but salt and pepper and....watch your fingers :)

    RUSS I did it again , sent comment to quick ! Up here in .montana we get anywhere from 1 to 3 antelope tags a year there are a lot of people who don't eat antelope , say it's like eating sage brush . after 31 years of hunting them and eating them I like it. There is a standard joke up here the best recipe for antelope is to boil a hunk of meat in a big stock pot with garlic and four pieces of 2× 4 six inches long for about two hours. Then add salt & pepper let it cool down for twenty minutes then throw away the meat and eat the. 2× 4 ( that's a joke ).THANK you Frank from montana....

      First time I've ever had it. Tasted fine to me, but then again, there was a lot of great flavor in that chili, so I probably wouldn't had noticed if it tasted like sage brush LOL.

    Man that's a good looking chili your cooking. I've been cooking chili for decades. I learned to make it in Texas and it always has beans. People confuse competition chili with the real deal. Not trying to start a fight. Just telling how everyone I new made chilli. 40+ years ago when I was a young pup in Texas, learning how to cook. ✌🤟🖖 🙉🙈🙊

      Thank you and thanks for confirming that competition chili is much different than how most people make and enjoy chili regardless where they are from meaning most people put beans in their chili. It is the "classic" chili. These "experts" that comment that beans don't go in chili, never say anything about Texas chili (comp style) also doesn't have tomatoes or tomato sauce. It's purely made of chile paste made from dried chili peppers and meat, but you never hear them complain about that LOL. I don't think some of them even know that.     I was born and raised in Texas. Lived here all my life. We always had beans in our chili. Don't know where that "no beans" garbage came from.

    I’m from New Mexico. Hatch is located down south in New Mexico, & the prime location for Green Chilé, farming, & cultivation. It is the prime crop for New Mexico. August-October, is the growing Chilé season.

    That's some damn good lookin' Chili Russ!! Fun Fact - Hatch Chiles were developed at New Mexico State University specifically for the climate and soil in the Hatch Valley just north of Las Cruces (where NMSU is) and they turned out to be the best in the world. If you ever go through that area on the way to Phoenix, Vegas or LA be sure to spend some time in Las Cruces because the food there is some of the best on the planet! Cheers...

    I have a tip for the viewers. We make chili at the cabin when we are ice fishing and leave it sit on the wood stove for over a day keeping hot and ready anytime. We top it up with beer when the suns up (and usually a snort of Jack and Coke at night) to keep the moisture in it. Doing this technique can cause a metallic taste when using metal pots due to the long simmer time. For long simmers like this an enameled cast iron pot is what we’ve found to be the best.

    I've used Project Smoke's Santa Fe Coffee Rub in my last couple of chili cooks...adds a nice depth to the beef flavor. But I might try the cocoa next time...

      I hear coffee pairs well with the seasonings that go in chili. I may give that a try as well. I've been using cocoa in my chili for at least the past 25 years.

    Rus, Brother, I only saw one mistake, on that chili, at the very end, and I'm blaming it on August. When the ladle was bigger than the bowl, you went and got a smaller ladle, well, what they would have said to me, would be, Bad, Tony, Bad!! I think you're gonna need a bigger bowl....Looks great Sir. I got different chilis too, but dead of winter, ground, or mixed beef chili WITH beans, reminds me of Mom...can't beat it!

    I kept thinking you were gonna pull out the Frog Bone Salsa and CaJohn's CaBoom Chili Fixins. It looks really good, I'd like to try it. I just checked, Meijer's has the Hatch Chili Peppers here in Ohio. I'll have to substitute Ground Beef for the meat and pick up some Bush's Chile Beans, think I have everything else. Thanks Russ

    Put your antelope meat on ice 15 min. from killing it. Grind with pork fat! Best meat EVER! If Not it's rank and gamey! The whole thing is to despatch it asap! So the adrenaline don't go through it! Don't let it run. Otherwise it's the best ever! My brother's chili recipe is killer for all game! Best in the world!

    I wondered what you were going to do with all of that chili, that is enough for a party. I like the idea of vacuum sealing it for another time. I eat chili about twice a month if it is cold or hot out, it don't matter. I do not use any water, it is all beer when I make it. A guy showed me that 20 years ago and I never went back to water. Going to have to halve this and try your method. If I am mostly eating it myself, I sneak in a habanaro for good measures. This looks awesome. I hope you had a beer cracked to go with it. :-)

    Looks like a great pot of chili. Four lbs of meat, plus your canned goods must have been about a 6 qt or so of chili. That would last me a long while. Good thing for modern appliances like freezers to make it last for a while.

      We found them at Rouse’s. It’s a store here and in Louisiana.

    another idea regarding the channel. maybe the name should change. i know its a brand, youre selling stuff under it, so maybe changing that will give you only a looot of unnecessary hassle. but why not make it "JONES FATHER AND SON BBQ ENTERPRISES" or something to that extent, reflecting that this is now a family or father and son thing?
    other than that, man look at that dark, thick and sticky chili, my god, the flavors must have been insane, just how i love it. the choice of beer was ....very zeitgeist-appropriate, hehe.

    Rus I would keep a VCI paper or the knives in a separate VCI bag inside the holster to prevent corrosion. That leather will hold the moisture against those blades.

      I'm not worried about corrosion on this metal, besides, I keep them indoors in the A/C with much lower humidity. They will be fine, but thanks.

    Edit: Texas chili can have beans, too. I'm from Mississippi, but a Texan for 45 years now. Mine has beans.

      That's true, and I do different things just about every time I make it. I love playing with flavors. Yeah there are some die hard Texans that bash beans going into chile. I have a lot of relatives that live in the Houston area, and they all use beans in their chili. I have friends in the Austin area that also use beans.

    Beer and cocoa? Two ingredients I never woulda thought to put in chilli. I’m gonna have to give this a whirl come October\November. I was stationed in Texas (Fort Hood) for a good part of my life and grew up in God’s country aka South Georgia so I have dual citizenship, but you are right about beans. For whatever reason they despise beans in chili. To me, it ain’t chili without beans 😂.
