    I recently came across Clara's videos and I'm so glad I did I'm a broke college student and need to learn how to make cheap meals that have some nutritional value I'm so sad that's shes no longer with us but she will always be remembered thank you so much for sharing your videos with us Rest In Peace Clara

      I never ate like that, the one time I tried - living on pita bread and pastrami for a few weeks - I got so sick that I couldn’t get out of bed..

      Just saw her apple baking video. One can tell she was a very sweet person. Who took a lot of pride in her cooking. Not many like these people left, both spiritually and substance wise. People such as this woman made our country strong by filling their role no matter how minute or large. God Bless and find joy in heaven Ma’am.

      Hello Miss i too cook this but i make a yogurt dip. I put natural yogurt in a bowl some salt a little bit of olive oil some chopped garlic and cilantro or coreander.
      I usually do this with courgettes and not eggplants but both work its a nice summer snack!
      This lady was awesome!

    I'm 36, and recently lost my last living grandparent. My mother, too, has left this world, but I can proudly say that I recognized the importance of their presence, and asked questions, listened, and learned so much from them. Still, watching Clara makes me think of missed opportunities I had to learn even more. If you have your elders still, I truly hope you take advantage of their knowledge, wisdom, and love, because you can't imagine what an empty feeling it is when they aren't there anymore.

      I lost my grandmother when I was 23. My other grandmother was in another state and I rarely saw her. But Granny did some cooking daily and she cooked like her mother, they traveled around the southern states and Granny ended up mostly in Arkansas and Mississippi. I'm 56 and if she were still alive my Granny would have been 119 this year. My father was the baby and late in life surprised many years after what was thought to be the last child. Dad's oldest brother was old enough to be his father rather than his brother.

      My grandmother passed away in 2011 at the age of 87. As a child and as an adult I cooked many meals with my grandmother. I learned all of her recipes and I typed them up on the computer and made a family cookbook. I have her measuring cups, linens teapots, furniture etc.

    It's good to hear Miss Clara say that she ate well during the depression. There were plenty who probably didn't have as much as she and her family. Eating well and healthy contributes to the length and quality of life. My husbands grandma just passed at 103. And her sister is still alive, living in Upstate NY, going to turn 110 later this year. They both ate potatoes and dandelion greens as a staple during those years.

      Because they had the garden & chickens (for eggs & hatching to trade almost entirely I'm sure... Notice she has no chicken recipes), and because Clara & her family would go out and forage things like dandelion greens, burdock greens, mushrooms, & so on, they had enough and could even share.
      Quote from another Clara video (tomato sauce I think):
      'The neighbors called my mamma the Boss and she would feed them if they were hungry. She fed the old people. The old ladies would come over and Mamma would say, "Have you eaten?" and the old ladies would answer, "No, we're having company, they don't want me." And Mamma would say, "Come on."'
      Completely took my breath away.
      Now Clara is sharing with a world which has enough, but not of things of the spirit 💛

    Something so soothing and calming watching her. She always makes me smile, and I enjoy her videos before bed with a cup of tea. Like nana telling me stories to make me sleepy and have nice dreams. RIP Clara.

    Universal Credit isn't enough to pay for food after my house bills, so nonna Clara has been a saving grace for me since the first lockdown. Thank you for keeping her memory alive. What a woman!

      Olive oil is healthy - and this is a very low carb recipe, so she can afford to use lots of oil for the calories.

    Gratitude and appreciation for simple foods back then. They didn’t have as many ingredients and meat but I bet they were healthier and leaner. All home cooked and no GMO too

    Watching her videos is like visiting an old friend with a soothing cup of tea. I only just discovered this wonderful woman's cooking. I hope to meet her someday in Heaven. When she said her father was out of work for 6 years, that really hit home. Cannot imagine how scary things were for people back in the 30s, and the 30s are fast approaching again. Live one day at a time and give the Lord your fears ♥

      My bf's Gran, Cynthia, died a few years ago. She was 90 and she could still out-walk me! Wonderful back-to-basics cook, too. She liked my cooking and always said in her wonderfully inflected way, "This is beautiful." I am so happy that I cooked homemade soups for her while she was in the hospital before she moved out of state to be in hospice near her daughters.

    When I miss my Italian mother, I watch Clara and forward them to my sister and children. Wish I had the foresight to have filmed her cooking before she passed. She was definitely blessed with this sweet grandson.

    I rewatch these from time to time because they remind me of my own grandmother and Great grandmother that lived thru the depression. I grew up eating many of these foods and still do today.

    She's such a lovely woman. Like the grandmother I never had but wanted because I didn't have good relationships with either of my grandmothers (flawed women, but products of their time. They did their best.) I cried when I found out she passed away. Thank you so much for preserving her memory and sharing her with us.

    I re watch these over & over again, she reminds me of my grandmother. My grandfather would tell stories about his mother would buy 2 soup bones & flour for a weeks groceries. No milk no meat. We r so blessed not to have gone thru what they have!

    To check if your oils is ready, use a wooden spoon handle, dip it in the oil and if you see bubbles, it's ready 💋

    Hi Clara, we are from Taylor Street. I worked in Melrose Park for 10 years. I remember picking dandelions with my grandma on the hills of the Eisenhower. She said it had to be from a field that wasn't sprayed with weed killer and we all know the highway dept never did that. I had my mom make a video cookbook before she passed away. I'm enjoying watching yours.

    It seems like Clara has passed on...
    While it's sad (I'm quite saddened myself), her warmth will live on on the internet; her legacy.
    If you feel warmth from her videos--that's Clara. So, while she has physically passed on, she's quite with us still :)

    I love the way she says, welcome to my kitchen. I am Clara. I am 94 years old. Today we're going to cook some meals from Great Depression.
    She cooks so happily. If anyone is a good cook, they are really going to enjoy life. The best skill ever. I love the way she cooks a complete supper. The best part of these videos is the memories she recollects of their past. She is surely an inspiration to many. Really, really amazing to watch these videos. Because I love spending most of the time in the kitchen cooking 👨‍🍳and 🍲serving .

    I enjoy your videos so very much. I just love that you use the most simple and basic kitchen tools and create such great dishes. This just goes to show that a person doesn't have to have all the fancy kitchen tools to cook good homemade meals for their family. Your family is so fortunate to have you in their life! I lost my mother 4 years ago on Thanksgiving Day to cancer. She was 81 and I still miss her every single day of my life. She too was a wonderful cook - like you!

    Eggplants are my favorite veggie. I will use tomato sauce instead of salsa for this recipe. Yum!!!

    I've never met any of my grandparents from my dad not my mother. I have my dad's mother left alive and she is around 90 and hopefully next year I will meet her

    Ok this was too simple...Every vid or recipe I read on eggplant parmasean they take forever to make, and you have to have a pot for this and a pot for that...This way you can do this with minimal energy and yet everything is easy to make...Thank you for posting these on youtube and sharing your stories...These just remind us that we can do much with very little and still live a full life..

      She prepared the sauce in a separate pot, I'm very sure. This is just one way of making it. Even so, it's never really complicated. I think American recipes have distorted it. I, like many Italians, salt the slices to draw out the water, then fry and arrange in a baking dish with sauce and grated parmigiano or provolone or pecorino, as baking it makes it more flavorful, and that's really it. I love plain fried slices of eggplant. They may have prepared it this way as well to save energy, as Clara mentions in other videos they tried to do in the kitchen.
