Good thank yo so much for letting me know and I'm glad its working. I had never heard of it until I worked at Bob Evans and they do that to all of there scrambled eggs. I would have never thought to do it had I not worked there.
You mentioned at Bob Evans the Egg griddle was always set at 325 degrees! That’s amazing to me, they have a a different griddle for different foods. How big was an egg griddle 17”, 22” did they have other griddles for other types of foods? one for hash browns, one for cheese steaks? This was a very interesting to me, when I go to Waffe House there appears to be only one large griddle, plus one chef cooking everything 😮
Ya at bobs we had four griddles. The egg and pancake ones were actually the largers I don't know the size but probably about 50 inches. And no they didn't have other griddles for other foods. Just the four and when it wasn't busy you shut half of them down and went down to just two. Ya the waffle house set up looks a little different but it is also usually a smaller restuarant than bobs. Over-hard fan checking in. Didn't know it was that weird to order over-hard eggs lol. I hate runny yolks. I grew up with my dad making bulleye sandwiches (that's what we called them, there may be a more popular name for them). Take a piece of bread and bite a hole in the middle, butter both sides and throw it on a skillet or frying pan. Crack an egg in the middle. Fry it to desired done-ness. Best camp food there is! Salt and pepper or hot sauce and good to go!

I enjoy watching your content. Your comments about working at Bob's reminds me of the years in college I spent as a cook at Cracker Barrel. I just picked up a 36 inch Char-Griller and I'm loving it. Also love your content.
Hell ya Nola, I'm a big fan of the CB. My favorite part is the ability to get pork chops with your breakfast, it's hard to beat that. Congrats on the new griddle man I'm sure it will be like riding a bike for you just like it was for me. It's a little different they definetly aren't as consistent with temps like the ones we used in restuarants but they also aren't thousands of dollar so that makes sense haha. I'm glad you like the videos and really appreciate you watching man. I feel like there's a lot more people like us out there who cooked on flat tops in restuarants and these things are going to continue to grow in popularity. Oh ya I've heard that term before. Do you break the yolk on the flip? It's hard to explain but whatever side the yolk is closer to I flip towards that side. That way the yolk doesn't go too high. So if the yolk is kind of on the left I will flip them from right to left. Hope that makes sense and helps. Thanks for watching.
I just got one of the 36” blackstone griddles for an early father’s day present. I just put it together and seasoned it today, cannot wait to cook breakfasts on it with the fam! Fresh boil potatoes and fried in butter to make them golden crispy is how I got my wife to marry me ;-)

It's one of those things I messed up on years ago and never tried again.... I don't know why. Watched till the end of over easy cause I'm on my own for breakfast, they came out great! So simple, yet I hadn't tried in years. The low temp was maybe what I was missing, and lots of oil.
Hello! I'm a new sub... Watched a few of ur videos, I like ur style... I recently got a mid size griddle and have been enjoying the way it cooks, it's a lot faster than using the stove. I'll have to get my thermometer out, cooking by temp seems better!

Hi Johnny do you use any particular oil when you make your eggs. Had a few bad experiences doing eggs myself and I think it was the heat. Just want to eliminate everything before I try again. have a great weekend. Love your videos.
Hi Edward. I use whatever I'm using that day. I like avocado and sometimes when I really want a diner taste I use Whirl. And my guess would be it was probably the heat. These griddles get very hot. If you don't already have an infrared thermometer Id recommend getting one. Also if your griddle is too hot try squirting down some water and scraping it off before you do your eggs.
Hi Lee. I don't think it's the griddle surface. I haven't used a char griller griddle but according to the website they're made of rolled steel just like the Blackstone and camp chef. The seasoning could be flaking off a little bit or it could still be a little food if your doing them right after bacon or potatoes. My recommendation is to give it a good cleaning with a scraper or grill brick. Then be sure to wipe it down well in between cooks. Let me know how that goes.

I got it off of Amazon. It's worked out great so far, no water underneath and it fits perfect. I do still use a soft cover on top of the hard cover just to be extra careful. amzn.to/39R3rnL
It's hard to tell without watching you but my first guess would be maybe flipping them too early. If the whites don't get a chance to set up sometimes they break. Also I pull mine out while the griddle warms up so they can come to room temperature. And make sure you have plenty of oil. Try those three things and see how it goes Griddle at 300-325° Get eggs out to come to room temperature Let the whites set Use plenty of oil Hope that helps, thanks for watching.
I would guess it's probably a little too hot. If you don't have an infrared thermometer yet I would highly recommend one Kenny. The closer you get to 300 degrees the better. Sometimes I just shut the griddle off and cook the eggs last. Hope that helps brother.

We call em Dippy Eggs here in Central Pa! Over easy is probably what they are. Gotta do the flip, but I really suck at it and break yolks.

I cook over hard for a sandwich only, otherwise over easy or scrambled. Agree on the butter, it makes everything better.
