  • HOW TO MAKE THE BEST ETHIOPIAN TIBS EVER:
    Here's a simple but delicious recipe on how to make the best Beef Tibs ever.
    What you'll need,
    1/2lb Beef Tenderloin
    1/2 Red Onion
    1 Jalapeno
    4 Cloves of Garlic
    1/2 Tomato
    High Smoke Point Oil i.e. Avocado or Grapeseed Oil
    Salt & Pepper
    Rosemary
    Cast Iron Skillet or a good Non-Stick Pan
    Injera
    Start by cutting up all of your ingredients first. Season your Beef with Salt & Pepper, and then drizzle some oil on it. Then heat up your pan on high heat until it starts smoking. Be very cautious as it's going to be very hot and you'll need to have a very good ventilation. Once the pan starts smoking, drizzle about 2 tablespoons of oil and let it heat up until it starts smoking as well. Once it's hot enough, throw in your Tenderloin along with the Rosemary and keep stirring continuously without stopping. It's no more than a 3 minute process so you'll need to move fast to avoid overcooking the meat. 1 minute in, throw in the onions and keep stirring for 30 seconds. Then add the Jalapenos and the Garlic together and saute for 1 minute. At last, add the chopped tomatoes and turn off the heat. The beef will continue to cook which will end up softening the tomatoes.
    Make sure you have Injera ready because you'll have to plate immediately to avoid overcooking the meat so that it stays tender. Make an Awaze dipping sauce or Mitmita and you're all done!

    Hi!!! Food looks delicious!! My big problem is getting the good quality meat. I go to habesha stores and always tell them siga for tibs, leslasa or whatever but when i cook it it doesnt have the same taste profile like i have at restaurants. Your meat looks like filet mignon..?? How can i tell them in amharic the specific cut of meat you r using? Thanks!!

    Which other types of oils besides grape seed are considered "high smoke" oils? Would olive oil do?

      Hi! Olive Oil actually is best for marinades and such. Avocado Oil is best!

      You clearly don’t know that not all Tibs is made the same. A quick Tibs like this is cooked in under 3 minutes. So how is the Berbere going to be fully cooked that fast? We showed how WE make a simple Tibs, it’s up to you to follow it or not.

      Travel God - from your comment, I’m guessing you’re not Ethiopian. There are multiple variations of Tibs. The most common and popular ones among many Ethiopians do not involve Berbere. All the best.
