Also the old way was using WATER!! Hundred of years ago the chocolate was made with cacao, chili and water. After spanish came that change and we started putting sugar and milk so i don’t know why people freak out about water version. There is still some places in mexico where you can drink it with water (and it is tick and delicious)
Joshua: this Mexican hot chocolate isn't that traditional lol Me, a Mexican, heating up some milk in the microwave and getting out the instant hot chocolate powder mix: oh uh haha yeah
I make hot chocolate about once every couple of months. But I make several cups and drink it throughout the evening. My first time going to Spain, was a chilly Autumn with my girlfriend. We sat outside a cafe, pulled out a map while figuring where to go first. Being chilly, we didn't want a cold drink. I suggested "Hot Chocolate". When the Hot Chocolate came, a spoon was in each cup. Not on the side of the saucer like you would think. It was incredibly rich and thick and tasted unbelievable. After 5 minutes of sipping and looking at the map. We realized why we had a spoon. We were drinking rich Chocolate Pudding! Still slightly warm, it had firmed up enough where we needed to use the spoon. Not sure if that is typical Spanish Hot Chocolate. But it sure was GREAT!
I make my own powder with powdered milk, cornstarch, nutmeg, cinnamon and such. The trick is 'cooking' it to activate the cornstarch. But it's very good for 'just add water' made from scratch.
I relate to the premixed powder vs. basic hot chocolate one. I make my homemade chocolate syrup with water + cocoa powder, heated tuntil emulsified, stir in sugar and some milk to prevent clumping. Then add extra milk until diluted to milk chocolate level. Compared to powdered chocolate mix, it is like night and day. So much more chocolatey and intense and creamy.

I really like how you recognized that the Italian and Mexican recipes may not be authentic but are still so delicious!! Also remember that Mexican food is so diverse between colonies and states, so everyone makes it a little different anyway!
Authentic is only meaningful if there's some recognized authority dictating what is and isn't authentic. Rarely the case with food. Especially as food is all about creative adaptations.
C'mon, we all know the REAL mexican hot chocolate is chocolate abuelita and if it tastes spicy is because we mixed it in the same blender we made salsa earlier for our chilaquiles But for real, interesting recipe, might try some day
🤣 A couple of things can impact that result... 1. The temperature of the chocolate. Colder is more brittle. Obviously, going too warm can be a problem too. 🤪 2. The sharpness of the knife makes a huge difference in how nicely chocolate will be chopped. 3. The secret I learned in my baking and pastry classes? Use a serrated confectioners knife or bread knife. The points help control the chocolate a bit better, and break it up better, but a warmed, smooth edged knife is what you want for pretty chocolate curls, or a warmed bench scraper.
I've only just started watching him but Joshua has such cheeky dad energy that is amplified with him being like "dOn't bUY that hot chocolate, I can make a better one at home"
My easy recipe with no extra pots: Put about an ounce of chocolate in your mug, and top it up with just a lil milk, usually just enough to cover the chocolate. Microwave carefully until the chocolate is melted and then stir it to make a ganache. Top the mug up with more milk and maybe some cream and microwave it carefully until it's hot and then mix it all up. Dress with whatever else you like; I like rum and marshmallows. Key points: -Milk can bubble over very easily in the microwave, so do it in short bursts. -The reason I add milk in two phases is just because it's easier to mix.

@@drpepperparty Vanilla Extract needs alcohol as far as I know. If you are against alcohol, you could store vanilla beans in sugar, you can also steep the beans in milk or cream when about to use in a recipe. Or you can use the seeds in the pod, and then keep the pod in sugar and reuse. Vanilla Beans are pretty versatile and the pod especially can often be used more than once. Chef Lior Liev (sp?) talks about ways to use vanilla other than a extract.
I make my own mix too. I use powdered sugar, which makes it much better in my opinion. It tastes like marshmallows a bit. I use one part cocoa and two parts powdered sugar. I don't make the vanilla tho, I just use a drop of extract. But I usually melt in a Hershey's kiss or a nugget or something, which is lit. If you want something decadent, try melting in a fun size 3 Musketeers. It's rich but once in a while it's pretty good

Nevertheless, now I'm curious and would love to try it out.

EDIT 2: it's been 2 whole years already. Still haven't heard, seen or tasted this version here in Mexico.

this comment is so funny!

A couple of things can impact that result...
1. The temperature of the chocolate. Colder is more brittle. Obviously, going too warm can be a problem too. 🤪
2. The sharpness of the knife makes a huge difference in how nicely chocolate will be chopped.
3. The secret I learned in my baking and pastry classes? Use a serrated confectioners knife or bread knife. The points help control the chocolate a bit better, and break it up better, but a warmed, smooth edged knife is what you want for pretty chocolate curls, or a warmed bench scraper.

when you're lactose intolerant:
could I use almond milk for these?
@@franfrankie7 Almond milk is SO good for hot chocolate, ABSOLUTELY.
My easy recipe with no extra pots:
Put about an ounce of chocolate in your mug, and top it up with just a lil milk, usually just enough to cover the chocolate.
Microwave carefully until the chocolate is melted and then stir it to make a ganache.
Top the mug up with more milk and maybe some cream and microwave it carefully until it's hot and then mix it all up. Dress with whatever else you like; I like rum and marshmallows.
Key points:
-Milk can bubble over very easily in the microwave, so do it in short bursts.
-The reason I add milk in two phases is just because it's easier to mix.
Wow, definitely trying this! As a university student that only has a microwave this is super helpful!
And if you don't stir the chocolate in all the way, you get melty goopy chocolate at the bottom and it's delicious
Def going for the Mexican one, love sweet/spicy stuff. Like fried peas and baked beans, I always add a shit ton of sugar and chili to both.

how do u make ur homemade vanilla? Cause in all the extracts contain a vile amount of alcohol!
