    NUTRITION INFO PER SERVING (WITHOUT GLAZE)
    Total carb = 4.9 g
    Dietary fiber = 3.7 g
    Net carb = 1.2 g
    Calories = 52
    Total fat = 3.7 g
    Protein = 1.2 g
    DRY INGREDIENTS
    Coconut flour = 180 g / 1 1/2 cups
    Golden Flaxseed (Finely Ground) = 80 g / 12 tbsp
    Whole Psyllium Husk = 33 g / 3.75 tbsp. (Note: The psyllium husks must be ground until half its original volume then weigh it. However, if you are using pre ground psyllium powder, only 2 to 3 tsp is required. Please see this video about psyllium husk and powder for better understanding and success - • PSYLLIUM HUSKS VS POWD... )
    Baking powder = 18 g / 4 tsp
    Erythritol = 66 g / 1/3 cup
    WET INGREDIENTS
    Apple cider vinegar = 43 g / 3 tbsp.
    Coconut / olive oil = 45 g / 3 tbsp.
    Whole eggs at room temperature = 7 large (360 g)
    YEAST MIXTURE
    Instant or Rapid Rise Yeast = 12 g / 4 tsp
    Salt = 1 tsp
    Warm water = 360 ml / 1 1/2 cups
    (Temperature = 122 to 132 F or 50 to 56 C. This temperature DOES NOT kill the yeast)
    FILLING
    Ground cinnamon = 28 g / 5 tbsp.
    Erythritol (or any keto sweetener to taste) = 100 g / 1/2 cup
    [Mix together in a bowl until well combined]
    GLAZE
    1. Icing Glaze
    Powdered sweetener = 5 tbsp.
    Whipping cream = 3 to 4 tbsp.
    Pinch of salt
    [Mix together in a bowl until thick and creamy]
    2. Cream Cheese Glaze
    Cream cheese (softened) = 110 g
    Butter (softened) = 198 g
    Whipping cream = 60 g
    Powdered sweetener = 5 tbsp
    Salt = 1/2 tsp
    [Whisk cream cheese and butter until soft and fluffy. Then add whipping cream, powdered sweetener, salt and whisk until smooth and creamy]
    Note: This ratio ensures that the cream cheese is not overpowering.
    DIRECTIONS
    1. Boil a pot of water.
    2. Turn on oven at 212 F or 100 C and leave it on during the entire proofing process. This temperature DOES NOT kill the yeast. Yeast thrives on very warm and moist environment.
    3. In a large bowl, use a handheld mixer to whisk the coconut flour, ground flaxseed, psyllium husk powder, baking powder and erythritol until well combined.
    4. In a bowl, mix the salt, yeast and warm water together and stir until the salt is dissolved.
    5. Add the apple cider vinegar, coconut oil, eggs and yeast mixture into the dry ingredients and whisk until the yeast is well combined and a dough is formed.
    6. Knead the dough for 1 to 2 mins as this will help to firm up the dough and easier to roll.
    7. Divide dough into 2 portions. Cling wrap 1 portion of the dough and refrigerate to slow down the yeast fermentation while you work on the other portion.
    8. Roll the dough between 2 parchment papers. Fold the sides into a square or rectangular shapes then gently roll the sides to flatten them.
    9. Brush dough with softened butter then sprinkle with cinnamon fillings. Ensure that the entire dough is covered with the fillings so that the rolls are more flavorful.
    10. Make 1-inch markings on the dough with a knife or pizza cutter then cut through into strips.
    11. Gently roll the strips into a round roll, pulling back intermittently to tighten it.
    12. Place the rolls slightly touching each other on a square or rectangular tray lined with parchment paper or greased with oil or butter. Cover the tray with cling wrap and refrigerate to slow down the fermentation. Repeat the process with the 2nd portion of dough.
    13. If you decide to make into cinnamon buns as an easier option, mix the dough with the fillings and mold into round shapes.
    14. Once completed, cover the dough with a dry towel loosely.
    15. Pour sufficient boiling water into a baking dish that fits the oven.
    16. Place the baking dish with boiling water at the bottom of the oven and the tray with dough directly above it. Close the oven door and let it proof for 1 hour with the oven heat on. Do not open the oven door during the proofing process.
    17. After 1 hour, remove the towel and the baking dish with water. Bake at 350F or 180C at the lowest rack for about 25 to 30 mins or until cooked. Pre-heating of oven is not necessary.

    I appreciate that the picture in the thumbnail is what the rolls actually look like. Other youtubers do the bait and switch with flour rolls. These look good and I'm going to try them. Subbed!

    i think that because you use a yeast style rise to this recipe you are keeping it close to the original recipe that uses gluten in flour, so this to me is the most authentic in texture but also softness. thanks for sharing your knowledge and success.

    I just used this dough to make pull apart pockets with poppy seed filling. When I ran out of the filling I made cinnamon rolls from the rest. Both are amazing.

    The taste was spot on but the texture wasn't how I expected....a little bit wet. They didn't rise the way yours did. I'm going to have to play around with the ingredients. Tastes and smells like yeast bread. I love it! Thank you so much!

      Thanks for your feedback! If the texture is wet then it's most likely too much psyllium husk. If you are using husks you need to grind it until half its original volume then weigh it. This is important as it will absorb the water more effectively. If using pre ground psyllium powder, only a small amount is needed around 1 to 2 tsp as it is very concentrated.       that would be awesome, but i guess the gluten from wheat flour is what makes it rise and become fluffy. almond or coconut flour doesn't have gluten, so no rising

    This recipe looks amazing and I love that it’s nut free. My question is how would this recipe work when using a grain free baking powder? I can’t use corn start which is in most baking powders but I did find a version that is corn free. Do you think that would work for this recipe?

    Tried this, texture is good but it has a very strong coconut taste. I think it might well with chocolate sauce due to its taste.

      I am surprised that with the cinnamon flavour you could still taste the coconut. Maybe you can increase the ground cinnamon. And yes, cocoa powder is a good alternative. Thanks for your feedback ❤

      @@lowcarbrecipeideas Okay the store near me sold out of baking paper haha, so I just took it out from refrigerator out about 30 min to room tempore but right now is really cold at Tawian so the dough still fill really cold, but I rekneed the dough to room tempore, and just turn to cinnamon buns it still poof really good. It is really fluffy and soft also moist I love it

      Yes you can. ACV helps with the rise and texture but its not fatal if you omit it

      The recipe has been tested with the oil but if you omit it, it may not be fatal. Yes you can use egg whites but you need to double the amount from the whole eggs.

      You can use brown flaxseed but the color will look darker. Chia seed may not work as it is way denser.

    Hi, Thanks for this recipe. Right now yeast is all most out of market in Toronto, can I skip adding yeast? Is it nutritional yeast or active yeast.
    Which brand of yeast do you use?

      It's instant or rapid rise yeast. Any brand wd be fine as long as the yeasts are active. If you cant get any yeast you can try making them into individual rolls.

      Remember, yeast is renewable. Once you have it, you can grow more yeast by reserving a small portion and keeping it fed until you need it again.

      It's because we want them to ferment more at the same time during the proofing process so that the rolls can stick together closely to create the pull apart effect

    Hi,since that deflated olive bread I showed you on Instagram, I’m nervous about trying your recipes. Do you always use single acting baking powder? Should I always use half of what your recipe says, since I can only get double acting in USA? Thank you

      Yes you can still use double acting baking powder but reduce amount by half. In most other countries, the baking powder are normally single acting. And if a recipe calls for baking powder it means single acting unless stated otherwise

    Why do we want to put the dough in fridge? Will that not put yeast to sleep?

      That is to slow down the fermentation while working on the second batch. Once all complete then they will go through a proofing process together

      @@lowcarbrecipeideas mine failed to rise at all. My yeast is fresh but the buns remained the same size. I poof it in warm oven over hot water for one hour. Where did I go wrong?

    I wonder if any one have substituted coconut flour with almond flour, I don’t have it and I am thinking to do so, any way if I do I will let you know how it turns

      Unfortunately almond flour do not have the same ratio with coconut flour so you can't substitute them without any experimentation. Perhaps you can try using my keto Almond Brioche Yeast Bread recipe to make this cinnamon roll. Here's the link;

      So sorry I have not tried that so unable to advise. It was quite complicated to even get this recipe right as it involves rolling the dough so the texture consistency has to be right. So replacing ingredients without experimenting can be quite disastrous.

      @@Binti1801 The psyllium husk is important as it acts as gluten by holding everything together and providing elasticity to shape the dough. Without it the bread will crumble with cake-like texture

      The best way to maintain freshness is to freeze them early. This will prevent them from drying out especially when refrigerated. It happens with regular bread too. So just freeze them in bags then defrost on kitchen counter or microwave

      Unfortunately not as the ratios are very different. Coconut is very absorbent so need more eggs and water. I will try and develop the almond version later on thanks

    7 eggs? Each gram of fat translates to 9 calories each. what calorie you don't consume in carbs you will in fat.. disappointed.

      Ron Regel recipes like this are for the lifestyle, not a diet. Also, there are some recipes you make for rare, special occasions.
