My lovely wife Claudia just took a quick look over my shoulder and when she saw Kent and the Beagle she was instantly planning out tomorrow's meal, so that's settled. In good tradition to what Cowboy Kent teaches as good manners, I'm also tipping my hat to German soldiers and their beloved families who don't get the recognition, love, empathy and respect they deserve in my country. I was deployed when I watched this. It was the first video I ever saw from Mr. Rollins. I remember I was just watching videos to feel closer to home, at the time. I discover the reverse sear a couple of years ago. Perfect every time. Increased my confidence level tremendously when doing steaks. I temp to about 105 degrees internal before searing.

I discover the reverse sear a couple of years ago. Perfect every time. Increased my confidence level tremendously when doing steaks. I temp to about 105 degrees internal before searing.

Never thought about wrapping the filet with a green chile followed by the bacon. Always used bacon before, even bacon wrapped bacon, but next time I'll use chile peppers. Thanks for this great video, thanks for remember us vets, and glad you guys are okay after the severe weather. Y'all take care.
