I made these yesterday evening and just cut them now! They are delicious! I had to use half light and half dark corn syrup. I forgot to buy more..lol. I did the crumb mixture by hand..haven’t had a food processor in years. Thank you for the parchment paper tip..it’s going to make Christmas baking much easier! The top is a perfect balance of pecans and gooey filling. As another viewer commented (and I agree) you can't stop eating them. I took one bite and realized I'd need another batch because these bars will be a hit with everyone in my family.
I had a surplus of pecans and I signed on to search for a recipe for pecan bars and bam, this video pops up!! I doubled the recipe and they were absolutely amazing!!! I did not want the bars to have the texture of pecan pie filling and they did not! It was kind of “caramely”. These bars are absolutely delicious! Thank you!!

I'm making this! The base is a perfect idea, thank you. But going to be replacing the corn syrup with a traditional French melted sugar adding butter, a little flour for a thinner pecan layer. Maybe don't need the eggs actually. Pecan pie was always too sweet. Love the idea, and the base is genius.

I believe that I have read or watched every video recipe for Pecan Bars and found this one the best. I did not have a food processor and mixed the short bread with a pastry blender, it turned out perfectly. I didn't chop the pecans but slightly toasted and left them in halves, next time I will chop them. Also, I would cut the salt down a bit in both the filling and short bread. I would definitely recommend these, they were winners!

Made this recipe for Christmas and it was an instant hit. Easy to bake and in my opinion better than pie. This is one recipe I will keep in my collection and bake for years to come. The only thing was the family wanted more and we quickly ran out lol. When cutting the bars I made them a bit smaller and more like small square bites instead of bars. Ooo and Maple Syrup is SO much healthier too!! I also wonder - could the brown sugar be swapped out with a monk fruit version too? I know monk fruit comes in granulated, powdered and brown versions as well - as a cancer survivor, I avoid as much sugar (and corn syrup) as humanly possible! So monk fruit has really been my go to for sweetners! The map,e syrup would be even better mmm 😘

I used Erythritol rather than Monk Fruit as straight up sugar replacement as that is my personal preference. With real maple syrup being a little thinner than corn syrup, maybe try a little Xanthum Gum with the syrup as a bit of a thickener. And bet you could do a almond flour and coconut flour substitute for the base.

hey gurl!!! I made these last night and my family LOVED them!!! that cooling time was torture, they smelled so good!!! I don't have a food processor so I froze my butter and grated it into the dry mixture like making biscuit dough. Then I tossed it to coat it in the flour mix and cut it down the rest of the way by kinda stabbing it with my whisk. lol sounds violent but in the end it looked just like yours. I sifted the 'dust' from my toasted chopped pecans in, too, and my mama said she could eat the crust by itself. 😂😂 I used half light, half dark for both the brown sugar and corn syrup and they came out soooooo good, I'm definitely making these again for the holidays. Pecan pie is one of my family's favorites but I swear I love the scale of these... They feel so much lighter somehow but are just as satisfying. Thank you for sharing--we LOVE your recipes!!!! 💚💚💚

My oldest son started making the Thanksgiving and Christmas pecan pies the year I tried to avoid cholesterol by using only egg whites in mine. They rose up, hit the top of the oven and collapsed. His pecan pies are the best.

If you are super anti- corn syrup, like with a corn allergy, you can substitute Cane syrup. It has a slight molasses flavor, but not strong.

I sifted the 'dust' from my toasted chopped pecans in, too, and my mama said she could eat the crust by itself. 😂😂 I used half light, half dark for both the brown sugar and corn syrup and they came out soooooo good, I'm definitely making these again for the holidays. Pecan pie is one of my family's favorites but I swear I love the scale of these... They feel so much lighter somehow but are just as satisfying. Thank you for sharing--we LOVE your recipes!!!! 💚💚💚

My reason for looking at your recipe was the crust. Thanks for the long awaited answer to stiff bottom layer. Now when I make a Very Good Cake I will follow these instructions as the crust is the same base. Merry Christmas my house smells great 🍪🥟🫓🍰🍫

OK I just got a request for pecan pie for Christmas Eve. I have always made pumpkin, apple or other fruit pies, never made a pecan pie… Looked at the recipes and then saw yours for the pecan bars and I’m going to go with that. Yummy, one of my nephew asked me how come I didn't bake any pecan pie this year for thanksgiving. I told him I didn't think we need pecan pie with all these food. And he said, "but aunty that's my favorite of all food on thanksgiving". My oldest son started making the Thanksgiving and Christmas pecan pies the year I tried to avoid cholesterol by using only egg whites in mine. They rose up, hit the top of the oven and collapsed. His pecan pies are the best.

TY Sam! I'll try to make this considering I don't intend to buy light corn syrup just for 1 or 2 recipes calling for it.. So I can substitute I cup of granulated sugar and a 1/4 cup of warm water. Hope this is ok Sorry for being negative here Stay safe and Happy Thanksgiving to ya!
