An old saying goes that three slices of ginger in the morning benefits one more than the ginseng soup. Ginger can drive away the coldness and warm the stomach. It is a common daily spice, which can remove the fishy smell in meat and enhance the flavors of vegetables. It happens to be the ginger harvest season in Yunnan. These gingers are fresh and tender, with a mild level of spicy. They are the perfect ingredient in cold dishes, stir-fries or pickled vegetables.
This is a spice that we all know well. In meat dishes, it is a piece of "meat"; however, it is also a piece of "potato" among the vegetables! Xiaohao joked that it is truly an excellent disguiser, the best actor among foods!

Translation: Ginger, an old spice with a history of thousands of years.
Ginger is a very common spice in China as well as in other places around the world, especially in Asia. Chinese people use ginger to remove the unpleasant smell of meat, and add a special spicy flavor to the dishes.
In this video, what she harvested and cooked was tender ginger, which had a less strong flavor and less fibre. You can see in this video she even used raw ginger to make a Chinese salad. Usually Chinese people use more mature ginger in cooking. It has a deep color so we often mistake it for potato or meat in the dish.
She used tender ginger to cook rabbit meat with lots of fresh and fermented chili, which is a very classic cuisine in southwest China. Also she made fermented ginger to keep them longer.
She also boiled white radish. At the end of the video her father(or uncle) said “eat radish in winter then you don’t need the doctor. ” Yes there is a saying in China which is “eat radish in winter and ginger in summer then you don’t need the prescription from the doctor .” It’s very similar to “an apple a day keeps the doctor away” hhh. Chinese use ginger for cooking as well as for medicinal purposes. When they catch a cold they drink the hot tea with ginger. Girls believe it can release the pain when having a period.

the lids for these specific type of pickle jars are like that, theres deep wells like that cus it be better for water sealing. its not like ppl use the lids as a bowl on its own lol...

we have those jars.. my grandpa is chinese and he loves to use it.. he said that, it is sealed really well, air cant pass through it because of water at the same time it is so easy to open
Aran the fermentation jars would be wonderful to have! There is a wide rim that you add water to , to make a seal. They are beautiful jars. I love the baskets she uses too! So many different kinds. I especially love the basket she gathers her food in.

That pickling jar is really neat! I'm guessing something about its shape helps the process, but it looks much more interesting than using a mason jar and having to can it to preserve it. And Dawang is such a cute dog!
