  • This is hands down the best keto bread I've ever eaten. Ever since we started the keto diet in early 2017, I have been playing around with bread recipes. I've created a few great keto breads... but this one is the clear winner.

    The challenge with keto bread is that when they taste good and the texture is right...they don't want to hold together. So, I was brainstorming with Jeremy (we often throw ideas back and forth...there's magic in speaking out loud!)... I said "I need something stretchy, like gluten is in regular bread, to hold it together" and then said.... hmmmm.... what about mozzerella cheese! He looked at me skeptically... which is like issuing me a personal challenge...;-P I decided to start experimenting the next day.
    I took my most recent keto bun recipe and modified it a few different ways... a few batches later I ended up with the result you see here. A crusty loaf of bread that holds together and is perfect for sandwiches. I made it again and this time made keto hamburger buns.

    A: YES!
    Q: Can I make grilled cheese with this?
    A: Yep!! Cook on a lower heat than normal as the almond flour will brown quickly
    This is a cheese-based bread that took me 2 1/2 years to get just right. There's a few things you'll want to do to make sure YOUR version doesn't come out eggy.
    1 ▶ Use WHOLE Milk Mozzarella. NOT the part skim mozzarella. Sam's club carries a pre-shredded whole milk mozzarella in a red bag. This is the one we've used.
    2 ▶ Don't skip the step where you whip the gelatin into the egg. This is magic for this keto bread...IT WILL make a difference in your finished results. :-)
    3 ▶ Allow the keto bread to cool for at least an hour before removing it from the pan. It's made of cheese! So if you remove it to fast, it will collapse on you. Place your pan on a cooling rack or if you have a gas stovetop, on top of the grates for faster cooling. If you live in a hot environment you may need to cool it for an hour and then pop it in the fridge for awhile to help it set up.

      I would try 2 tsp xanthan gum. Please let me know how that works! But... I would recommend gelatin... An added bonus is you get some extra good for you collagen from the gelatin :-)

    4 cups whole milk mozzarella (452 grams) or half shredded cheddar and half mozzarella
    4 ounces cream cheese (113 grams)
    4 large eggs
    2 Tablespoons gelatin (14 grams)
    2 1/2 cups almond flour (280 grams)
    2 Tablespoons coconut flour (28 grams)
    4 teaspoons baking powder (18 grams)

    I used another recipe for the first time I made Keto bread and it was disgusting. I'm going to try this and hope for the best. Everyone has a different taste and sometimes their "delicious" is different than mine. Thanks for a clear presentation.

    I want to thank you. Wow, I made the rolls, this recipe is So Good! I don't have a clue when it comes to baking. You made this so easy, and it's amazing. I've been on Keto since January.     This is the best keto bread recipe I've tried. I didn't find it to be eggy like most. It was easy too. It toasts fine (although it takes a little longer than non-keto bread.) Thank you for sharing this.

      When you seperate the egg whites from the yolk and use cream of tartar, you mix it to create air bubbles/pockets to make it more fluffy. The egg whites+tartar creates a foam that cannot be achieved with the yolk but will retain its foaminess after you mix it

    Thanks for sharing your bread recipe. Before going keto, I use to make a lot of different kinds of bread using yeast. I still miss that kind of bite; therefore, I'm still working on trying to develop a bread that tastes like my old bread with fewer carbs. God, help me.

    I've made way too many of the keto breads out there. This one is a little different but it's just another fathead bread. You don't really need shredded mozzarella. Just use solid cheese and break it into chunks (measure the chunks) and then melt the cheese and mix into the dough. Buying shredded cheese adds to the cost and shredding it yourself is not necessary

    The gelatine isn't necessary. Adding 1 small of baking powder to the same ingredients will give you the same result.

    Can you please clarify about flax seeds and chia seeds about nutritional values,some says it's high in fibre low net carbs some say it's high carbs 🙄😱🤦🏻‍♀️I'm so much confused, Googling it gives many different values 🙄 Can you please clarify 🙏 do carb value changes depending on package?but all Flaxseeds are flaxseeds right?     Hello, can you please explain this "Bake for 20 minutes then reduce oven temperature to 325 degrees and bake for another 30 minutes. Top will be deeply golden and browned when done.

    FYI, the body of the recipe calls for only two eggs but the ingredient list and video say 4. Also, where does the sugar come from? Finally, what is your recommended number of slices to stay firm enough to make a filling spreadable on them?

    Has anyone tried toasting this? I just made my first loaf (and it's pretty awesome). I will give it a shot, but just wondered. I've SO been missing toast with my eggs and bacon!

      We made grilled cheese with it and it toasted great in the pan :-) We don't have a toaster any longer so we haven't done that. Did you end up trying?

    Wanted to try this , but that much almond flour can cause allergy ? I’m allergic to nuts and I had an allergic reaction to almond milk , can I substitute it with something else ?

    After cooking it, is it possible to freeze it ? Or maybe should i freeze the dough ? I'm by myself, and if i make a big loaf it would last me two weeks, so i would like to slice it and freeze it so i can take one slice or two per day, what do you think ?

      Yes you can! I would slice and then freeze it.

    I think if egg whites were used instead and some vinegar to activate baking powder it might be higher .I've got a thing about height.

    I made this, it looked great and tasted OK, but be warned due to the amount of cheese it is very very sickly, personally I couldn't handle more than 2 slices and I was almost put off the whole thing.

    Is that for one slice of bread? It seems to me that most ordinary white bread has at least 15 grams of carbohydrates.

      Correct-- that's for one slice. In this bread, there's no wheat and no grains. There's no hidden gluten or modified wheat ingredients. In one slice, you have 4 total carbs or 2 net carbs. Those carbs come mostly from the lactose in the cheese.
      It's a delicious treat to help make keto sustainable over the long-term.

    Hello Tara, I baked your bread recipe, but after I took it out of the oven, it partially collapsed. I’ve noticed at the beginning of your video the top of the bread has done a similar thing to mine. Is there something I am doing wrong? I measured all ingredients on a digital scale. Thanks.

      Hi Norma :-) No, this isn't eggy at all. There's also no weird taste from flax or psyllium husk or other weird ingredients. It's worth making :-)

    While I do like this reciep, it would be great, if ppl. would stop using titles, like "The only ... you'll ever need.". People do like variety in their diets, that are already limited in the choice of foods.
    I also make bread of hemp flour, which can also be grinded and used as bread crumbs.
    There's so much variety.

      There's no eggy taste with this bread. If anything I would omit an egg white and not the yolk.

      The coconut flour soaks up the grease that's released during baking. There's not much in it. You could try lupin flour as a substitute.

    Is it possible to melt the cheese in a saucepan on the stove? I’m anti microwave because it sucks the nutrients out of the food. I notice many keto bread recipes require a microwave for the first step

      Yes, you can absolutely do this :-) Just put a little oil in the bottom of your pan first to prevent too much sticking and melt on low heat. You don't want to get the cheese mixture TOO hot. Just warm enough to melt.
