    When my mother made Parker House rolls, she always used evaporated milk instead of whole milk. She thought it gave a creamier taste. She also used her parker houser roll recipe when she made homemade sweet rolls with pecans, brown sugar, butter and raisins(with a powdered sugar, evaporated milk, butter and vanilla icing)

    Look at the TEXTURE when Mr. Joseph opens the baked rolls up! Feather Light! Buttering the middle of the cut dough portions facilitates opening each roll at the table. 'Breaking Bread' has never been easier. I have been making Parker House Rolls according to my family's multi-generation recipe...and I learned plenty from watching this presentation!

      Beat 2 eggs, weigh the beaten egg using kitchen scales, then chuck 1/4 of the beaten eggs away.
      So if your 2 beaten eggs weigh 120 grams, throw away 30 grams until you're left with 90 grams of beaten egg.
      Instead of throwing away the excess 30 grams of eggs, you can cook it and eat it.

      I freeze dinner rolls all the time. Just cool until barely warm, bag them (well sealed) and freeze. I reheat in a 350 oven when needed.

    If I wanted whole wheat rolls what's a good ratio of white to whole wheat flour? Tried making whole wheat challah a few weeks ago and it turned out rather dense. Is that because of the flour ratio or did I just not knead it enough?

    Can you address par-baking, if you make these rolls in advance of the holiday? I par-baked rolls before Thanksgiving, and one type came out perfectly, while the other I apparently removed from the oven a bit too soon and they collapsed. My goal was to have them ready to finish baking ("brown and serve") on the holiday.

      By hand in a wide bowl until it has the right texture. It's very difficult to overknead by hand.

      No it's actual kitchenaid recommendations to avoid damaging your device.
      Dough hits on your engine pretty hard

    when you say "increase the speed to medium high", what number of the machine are you reffering. Kitchenaid, recomend only the number 2 for dought.
