One important detail for me as a kid was the music. If I remember right, the N64 has looped sections of the songs whereas the PS1 has the whole song being played. And you could even insert the PS1 CD in your stereo to play the tracks!
By the looks of it, PlayStation has more detailed textures (more storage space) but the n64 has double framerate and better video quality; by this alone the n64 seems the better version but I cannot be 100% sure without playing them

I always remember the differences in Vigilante 8 between N64 and PS1 in that N64 had the 3d models, but the audio, soundtrack, and effects were much more quality and uncompressed. The music kinda sucked for N64 while PS1 was the way to listen to it.
PS1: Better sound quality, more content, awesome soundtrack, FMV intro N64: Better Resolution, Better Visuals and Animations For Cars and Tracks, Higher Framerate I played the N64 version WAY more than the PS1 version, but I choose the latter purely for the additional content like tracks that are exclusive to the PS1 version like Exhaust Pipes and Volcano Blowout. The sound quality is also much better in the PS1 version it includes voiceovers and completed version of the soundtrack which was significantly neutered in the N64 due to limitation and not to mention the inclusion of Metallica’s Fuel as well as other songs not found in the N64 version. Don’t get me wrong I still love the N64 version, it holds a special place in my heart and has its own advantages against its counterpart, but if I had to choose one of the two I’d pick the PS1 version hands down.

Another one that's fun to compare is vigilante 8 and vigilante 8 2nd offense when it comes to the psx version and the nintendo sixty 4 version. Also the difference between Dreamcast rush 2049 to the N64 rush 2049. And also the South Park versions. The N64 has better resolution than the psx.

Ps1 used its budget on the intro with snes textures in the game while the n64 ditched most intros and had better looking games

Ambas son geniales. La de PSX tienen un OST más bonito, más pistas. Pero la de N64 carga más rápido y tiene gráficos más estables.
