It looks like you aren't letting your dough rise for long enough... in both the proofing sections it looked like they hadn't been proofing for long enough. They should at least double in size. You can tell if they are proofed by poking them gently and seeing how your fingerprint looks in the dough.
Followed along making this. Saw in the description your only supposed to use half cup of sugar instead of a full cup in the video. Hope they still work out.

Hi Fariyal, I'm wondering how the icing mixture would taste if I used less powdered or confectioner sugar. Any thoughts on how much to use if I wanted to add less?
Hi there. Yes you can use let's say 1 cup of confectioners sugar instead of 2. That icing is a lot more than I used for the cinnamon rolls. So you can cut all those ingredients in half for the icing and still it will taste good
