Tatyana - I’ve made my old cinnamon roll recipe for years now and on a crazy whim I decided to try yours because your trick with the ‘secret ingredient’ intrigued me - holy cow, you changed my life!!!! I accidentally let them get a little too done on top but thanks to your amazing trick, they tasted incredible straight out of the oven and were even softer the next day and you couldn’t even tell one of the trays was practically BURNED, and the trays that were only a little overdone on top were absolutely PERFECT even the next day when normal rolls would’ve already gone stale, even if they had been perfectly baked.
I’ve added your recipe to my box (which only happens when a recipe is Holy-Grail, no-fail, 100% tried and true). Thank you SO MUCH for being kind enough to share your secrets with us!!! 😍🥰❤

Tatyana, I'm a decent baker at following directions and I love cinnamon rolls. Exploring the net I'm always looking for ease of baking/cooking with the most accessible ingredients. I've used another cinnamon roll recipe from another TH-cam chef and it was a FAIL, and did not come together at all. I was at a loss...so I started searching again and watched your video more times than I dare tell. Then I decided to dive in and go for it. Let me say this, it has turned into one of the best experiences. Your ingredients helped me nail this recipe down to a spectacular end. I cut them with the dental floss and they turned out perfect. I'm in love with this recipe. I was able to mix, roll and cut with no problem. I didn't bake them after I cut them. I froze them for baking at will when I want one. They freeze and thaw to perfection for baking. I feel like a star baker in my own little kitchen. Thank you, thank you, thank you and your sister for an outstanding recipe. So happy to have found your channel.

Well, I followed the directions/ingredients exact and they turned out AMAZING! It reminded me of Cinnabon, they were so fluffy and just melt in your mouth. I put them in the fridge and just warmed one up in the microwave for about 30 seconds and they are just as delicious. Omg. Made these yesterday and they came out sooo perfect. Usually when I’ve try making cinnamon rolls in the past, the bread portion came out too stiff/dry. Haven’t tried again for years as a result and had almost given up on any I made from scratch turning out right. These were flawlessly soft and fluffy. Perfect texture! I think the step of the cream on these really make the recipe unique and virtually foolproof for those who aren’t that great at baking, such as myself.
I did end up needing to add about 1/3rd a cup to 1/2 a cup of extra flour in order to knead it without it sticking. Don’t worry if you need to do this guys! Just add JUST as much flour as you need to in order to be able to knead it without it sticking to your fingers. No more than that! Also. No problem if you don’t have loose dental floss (we use the pic flossers ). I cut mine in firm quick motions with a dough scraper.
Thanks Tatyana for your amazing recipe and great instruction!

Made these again yesterday, but didn’t need to use even all the flour the recipe called for this time around....so again ( for any looking for tips), I will emphasize how important it is to just go by feel when you start using your hands with the dough and stop adding the the flour as soon as the dough is no longer sticking to your fingers .... that being said...this time I made a variation of the frosting that incorporated real maple syrup ....and sprinkled real bacon pieces/bits (like the kind you add to salad) on top...was sooo delicious! (For the maple frosting, for 3 rolls [youd need to make about 3x more if you’re making frosting for the entire recipe] I just eyeballed about 2oz of cream cheese, 1-2tb of softened butter, a dash of vanilla, 3-4TB or so of pure maple syrup, and about 3-4Tb of powdered sugar) I only baked as many rolls as I needed for one breakfast (3 rolls, that fit perfectly into a parchment lined standard loaf pan, so my family of of 3 wouldn’t end up eating the entire recipe within 2 days like last time 😂) , and the rest I placed flat on a baking tray and froze...after that placed in a ziplock bag....plan to simply thaw/rise them at room temp for a few hours as needed in the future, and a batch of 3 only took 5 (before the cream addition) and then 15 minutes to bake, instead of the full time.

I browned the butter in this recipe to enhance flavour. I did find the dough to be a bit too soft and light and airy. I actually prefer the dough to be a bit more dense or heavy but these are good. I also toasted pecan in salted butter, chopped them and added with the filling and some on top of frosting after baking.

I have a 15"x10"x2" casserole pan. There's not too much difference in the sizes. But, when they rise, they might get too large for the pan I have. Will I have to make adjustments to the size of the rolls or will I be able to scrunch them all in my slightly smaller pan?

Nice. But do you mind if I share some suggestions?
I don't care for cream cheese. I follow a recipe not too dissimilar from your own. I use butter, confectioners sugar and heavy cream. I first cream my butter then add the heavy cream and whisk that in. Finally I gradually add my sugar until I get a quasi gelatinous mass. The next step I just started doing in the past week. I take the contents of the icing, assuming it was mixed in a metal bowl, and place it over a hot bath and allow the heat from the steam to slowly "cook" the ingredients together. After a few minutes, the congealed mass begins to liquefy. I stir it fairly constantly over the next ten minutes. When I'm done, the sugars and milk products have become completely incorporated. The icing is nothing short of perfect.
For roll placement in the pan, try placing six per pan, assuming you're doing 12 rolls. This will allow the rolls to more fully proof and give the illusion of more roll than what there would be in a normal twelve rolls per pan arrangement. When I worked as a baker making donuts, I allowed the goods to reach maximum size through proofing before frying them. They look like there is more there. And I suppose there is. There's more carbon dioxide, which adds to the overall flavor.
When making your filling, I can't stress enough to cream your butter and then add your cinnamon and brown sugar (and whatever else you might add like nutmeg or cumin. Cumin, you say? I don't really know if it will work but you won't know unless you try, right?) and cream the ingredients together until smooth. It should be more smooth than dry/grainy. If need be, add additional butter or even heavy cream until you get the prescribed consistency. This way, putting the filling on will be easy and you ensure you get equal distribution of butter, sugar, and cinnamon with ever bite.
One final note, when you have rolled your dough almost completely up, consider applying a small portion of water with a brush to the outside body of the roll. Then pull the remaining flap of dough over the body so it will stick. This, coupled with your wet filling, will help the roll hold their shape when placing in the pans. One other thing, if you do place 6 rolls per pan, I cannot stress enough not to press down the rolls. Allow them to be larger than life.
Oh and don't forget the heavy cream over the rolls like you showed.
    Thanks!
