CAJUN CHICKEN & SAUSAGE PASTA 1 lb Boneless Chicken Breast 1 lb Smoked Sausage Salt & Pepper to Season Chicken 1 Tablespoon Vegetable Oil 1 Onion 1 Green Bell Pepper 1 Red Bell Pepper 4 Cloves of Garlic 1 (14.5oz) Can of Chicken Broth 1 Quart of Half & Half 1 Tablespoon of Cajun Seasoning 1 Tablespoon of Parsley Flakes 1 Tablespoon of Hot Sauce 1 lb Raw Penne Pasta 1 Cup Shredded Parmesan Cheese Heat up a large pot over a medium/low heat. Prep the Chicken & Sausage by cutting the chicken into cubes and slicing the sausage. Season the Chicken with the Salt and Pepper. Add the tablespoon of vegetable oil to the pot. Drop in the sausage, and brown for 5-10 minutes. Chop the onion & garlic, and slice the bell peppers. Remove the sausage to a bowl off on the side. Add the chicken to the pan, and cook for roughly 10 minutes. After 10 minuets of sautéing, remove the chicken and add the vegetables to the pan. Sauté for 25 minutes. After 25 minuets, add the chicken broth to the pot little by little, breaking up anything stuck to the bottom. Add back in the chicken and sausage. Add the Half & Half, Cajun Seasoning, Parsley Flakes, and Hot Sauce. Raise the heat so that it can come to slight a boil. When you begin to see a slight boil, add in the pasta. Mix into the pot so that the pasta is covered by all the sauce. When it comes back to a boil, cover, lower to simmer, and cook for 20 minutes. Uncover after 20 minutes, and mix well. Add the cup of shredded parmesan cheese. Once you see that the cheese is completely melted, turn the heat off, and serve!

Well, I forgot that is her wedding anniversary date. I used to live with her for about a year, which was 15 YRs ago. . . I was recuperating from blood clots. I wanted to roast her a whole chicken over a bed of mixed vegetables and include a side of basmati rice; instead, she preferred chicken Alfredo--huh? I made this tonight. It turned out really well... Make sure to keep the heat down low after adding half & half. My milk started to curdle bc I didn't realize how hot my stove was (after reducing heat). Still tasted great, just not as smooth looking.

CAJUN CHICKEN & SAUSAGE PASTA

Patrol Patrol stove calibrations can vary. You may have just had a lot of water evaporate. Easy fix is to add a little more milk.

You may have the heat to high when you add the half and half. Lower the flame 🔥 on the stove. When you boil milk it will curdle.
