PASTALAYA 1 lb Pork Chopped Kosher Salt & Black Pepper (to season pork) 1 Tablespoon Vegetable Oil 1 lb Boneless Chicken Thighs Chopped 1 lb Smoked Sausage 2 Onions 1 Bell Pepper 1 Bunch Green Onion 2 Sticks of Celery 4 Cloves of Garlic 1/2 Tablespoon of Cajun or Creole Seasoning 3 Beef Bouillon Cubes 3 & 1/2 Cups Water 1 (10.5 oz) Can of Cream of Chicken Soup 1 Tablespoon of Hot Sauce 1 Tablespoon Browning Sauce 1 lb (16 oz) of Bow Tie or Favorite Pasta First, start out by heating an oven safe pot over medium heat. Prepare the meat by cutting the pork and chicken into cube like pieces, and slice the sausage. Chop your vegetables and move them to the fridge. Season the pork well with kosher salt and black pepper. Add the vegetable oil to the pot, move the pot around to spread evenly, and sear the pork in the oil. When you no longer see pink, turn the heat to low and cook for 20 minutes stirring every so often. At the 20 minute mark, add the chicken and let cook for 10 minutes stirring occasionally. After 10 minutes, remove the pork and chicken with a slotted spoon into a bowl. Add the sausage to the pot and cook for 10-15 minutes or until you see some browning. At this point preheat your oven to 300° After 10-15 minutes, Remove the sausage so that there's nothing left but the drippings. Add the onion, bell pepper, green onion, celery, garlic, cajun seasoning, and beef bouillon cubes. Sauté until completely soft, roughly 1 hour. Add the water, cream of chicken, hot sauce, kitchen boquet and raise the heat. When the soup has blended, add the pasta and meat back in. Mix well. Once everything mixed nicely, gently press down on the top so that all pasta is touching liquid. Bring the mix to a boil. Once boiling, cover, turn the fire off, and put the pot in the oven. Cook for exactly 1 hour. Do NOT touch that oven! Leave it alone! Trust me. When done, remove the pot, and set aside for 5 minutes before uncovering. When the time is up, remove the cover, mix the top to the bottom, and serve. If concerned about some of the pasta not being cooked all the way, after you stir the top to the bottom, just cover it back up and let it sit for another five minutes, then serve. Hope you enjoy!

I put my pasta in the gravy then added my meat on top without stirring then baked. I think it allowed the pasta to absorb more seasoning and cook evenly.

I actually cooked pastalaya this evening. My recipe I had for years but it’s similar to yours. You influenced a few small changes for sure mostly in the process. I use blackening seasoning on my chicken and use golden mushroom soup instead of cream of chicken and that’s really bout it. I’m born and raised New Orleans and in Metairie now. so great Louisiana minds think alike lol

I followed everything to the T except I didn't have green onions and I skipped the teaspoon of hot sauce. It is BOMB! I never had jambalaya w/ pasta. A few of my noodles were crunchy from baking, but that was expected. This recipe makes ALOT for just my fiancé and I. We really enjoyed it!

Made this tonight and I'm telling you, it's spot on! My son loved the Zatarain's Pastalaya and was so sad when they discontinued it. He asked me to make it from scratch so I went straight to your videos for a recipe. He says this was better than Zatarain's! This recipe went straight into my handwritten cookbook that I'm working on for my boys. It's a keeper for sure! I added 1/4 teaspoon of Zatarain's liquid crab boil instead of hot sauce. That's my secret ingredient for my gumbo and red beans and rice too. Thanks Cajun Ninja!

Great video. One question. I need to make a larger amount so would you double all of the ingredients? I can judge the amount of seasonings, meat and vegetables I need to use. I don't have a problem with them, only the amount of water for lets say 2 lbs of pasta. Not sure if you have a water to pasta ratio that you use like you do for rice. PASTALAYA

Luxury bow tie pasta come in 12 oz package. I’d like to put 2 bag or 24 oz in the pastalaya. How much water should add?
