That place with the birds reminds me of this place I have visited a few times in Wisconsin, between Milwaukee and Oshkosh, called Horicon Marsh. The sky is dark with all kinds of ducks, geese, etc during migration. It's an incredible thing to see....just don't drink the water. Haha More delicious food.

Kachori is like people's food. You will find it all over Delhi and since its so cheap, you will find factory workers and labourer's snacking on it. But if you get to Chandni Chowk, you should go to this hole in the wall shop at beginning of Nai Sadak that sells mind-blowing bedmi-aloo.
You always try to generalize what you see in Delhi as common to India.. let me tell you that India is so diverse, and Delhi is just a piece of that.. you need to get out of the capital region and explore a lot.. every state of India is so different and unique!

India is much more diverse.... Each state of India has a lot to offer.... Try northeast u will not disappointed, though there is some issue which u need to deal but it's a basic and u guys will manage fine...love from Arunachal Pradesh (northeast India)

Potatoes and onion dishes are so mainstream, because in earlier days transport was not good, vegetarian people used to buy large bags of onions and potatoes and eat them as their daily food along with rice and chappati/roti, this is what my parents told me

Also don't go to Kolkata in the summer as the humidity is really irritating. February and March are good time to visit Kolkata.
