I made this recipe today, and it was so good! I even slipped up and accidentally put caraway seeds instead of fennel seeds in the gravy. I counter balanced by adding some cumin seeds to the hot oil before continuing to cook the gravy. Thank you for this new way of makin da sauce!😊🫶

Ah yes the 5 Indian ingredients with no substitute Ajwain/carom, kala namak/black salt, hing/asafoetida, kasuri methi and fresh curry leaves! I love veg. kofta curry thanks for the great video. Making this soon.
I will definitely be making this but I’ll be using zucchini since I literally have to drive and take a 2 hour ferry to get to a store that would sell bottle gourd. I made the Mughlai Curry the other night and it was fantastic.

I'm going to answer my question. Looking at "Chetna's Healthy Indian:Vegetarian" and other Indian cookbooks, my answer is this: Use Common Sense! If the kofta are cold, heat them up with curry. If the curry is cold, heat it up with the kofta!
The closest thing to Carom is Thyme but the way it cooks in is different so you don't get the subtlety of Carom. I started adding it to Pawa when I make it to give a bit of variety to the dish.
Hi Chetna, This dish sounds utterly delicious....I want to try it this weekend but as I live in Brittany I can't get hold of Ajwain.... What would you substitute it with? I managed to get some Kasura Methi (my cousin brought me some back from Australia...🙄 as it's impossible to find here!) I was also wondering if I could cook could the koftas in the air fryer (to avoid all that oil!)? What do you think? Do you have any recipes with an air fryer as it is so much healthier than frying everything? Even if it's much tastier my doctor disagrees....Bloody bore! 😂 I've been following your channel for a few years now & I love how you make it so easy and it works when I do it at home. Hey Chetna , looks lovely, but why call it kofta " curry" ?? Growing up, this dish was and i am pretty sure in india it is called "koftas" ( without the term curry) !! I am pretty tired of the word " curry" for every indian dish !!
Listen - this was the very few dishes that actually had a curry attached to it. Kofta is the fried balls and it is served in a curry. I KNOW because I was born and brought up in India and every aunty I knew who cooked this called it kofta curry! But I am not stopping you from calling it Kofta because why not!

Thyme is a good substitute for ajwain. Same essential oil - thymol.

they are supposed to jump everywhere so dont worry
Are the kofta room temperature when added? And if so, does one heat them up in the curry or just add them (room temperature) and eat?

You could substitute thyme. Both have a similar flavour profile.
You can just skip the ajwain or use some roasted cumin. Also I dont own an airfryer and have never used one but you can surely try.
