  • Ooh, heaven is a place on earth! Martha Stewart shares her recipe for a beautiful Coconut Cloud Cake: a delicate angel food cake topped with freshly grated coconut flakes. Combining superfine sugar with cream of tartar, this fluffy batter pairs perfectly with the low cholesterol egg whites in the voluminous, homemade 7-minute frosting. Martha Stewart says this dessert involves “very little muss, very little fuss” which is the ultimate win for how delicious the final product is!

    Does Martha ever actually read these comments I wonder or does she have an assistant running her TH-cam account? I really want to make this beautiful coconut cloud cake, except I’ll impart it with more coconut flavor and sub the vanilla extract for coconut or maybe use a 1:1 ratio lol. I really enjoy the simplicity of her videos and the soothing way she speaks. I hope to also make a mango sorbet to go along with this tropical cake! I actually have an angel food cake in the oven as I’m typing on my iPhone and I will enjoy this with some fresh strawberry purée and whipped cream. Love ya, Martha!❤

    OMG!! What a beautiful cake, how do i make that for only two people.
    What would be the measurement?
    1 cup flour, can i put less amt of egg white, less sugar.

    If you don't have extra fine (castor) sugar, can you put sugar in a food processor and make your own without it turning into powdered sugar?

      Hi Kal! Yes this is an option. Add the amount of granulated white sugar that the recipe calls for into your food processor (plus a couple of extra tablespoons more to compensate for the volume reducing in the processor). Put it through the processor for 1-2 minutes until the superfine consistency is reached!

    Australians 🇦🇺 and British 🇬🇧 always use Caster sugar for their baking . I don't know why Americans still use granulated sugar?

      I always used granulated sugar because that's what my mom and grandmother used, but after making this cake with caster sugar, I am not going to use granulated again. You Brits and Australians are smart cooks. 😊😊💜😊

      Sorry but this does not help. Martha says fresh coconut flakes. Fresh does not imply dried. I get that you have to crack open a coconut and peal off the brown skin, but all of the videos I have seen you end up with short bits of coconut (like storebought in the bag). I am guessing you have to use a mandolin and have large pieces of coconut flesh to get those long luxurious flakes.

    Hey Martha, I've gone "pescaterian" during a year of lockdown, lost neatly 60 lbs on easy purple weigh watchers and written my doctoral dissertation.
