I also have a more modern machine with the mechanical paddle and basically use the same profile day to day and use the la pavoni on weekends or when traveling. i really like the look of the pro 800. how is it on thermal management?

I wonder what kind of roast level is better revealed on such machines? And do the brew ratios change? As I understand, the group in such machines is prone to overheating and it is advisable to do a large spill before installing the holder.
The .6 bar pressure shown here suggests a much lower temperature than the 245-255F Profitec recommends in the manual. What do _you_ recommend the actual PID setting for medium roasts? You also didn't mention how much less maintenance is required than for their pump driven brethren; we've had our Pro 800 (from Clive, of course) for two years and the only thing I've done so far is a new portafilter gasket. I've have a modern lever-group rebuild kit at the ready but so far it's still not been needed.
Maintenance varies from person to person, use case, what kind of water you use, etc. Glad that you haven't needed to replace hardly any wear and tear parts! We recommend 245-250F, but what works for your coffee matters more! There are very few hard and fast rules when it comes to making espresso.

At best they might just have a flair. The "9 Bar to 12 Bar" then slowly reduces the shot... I guess it explains why my new "Sanremo You" goes up to 11-12 Bar when you press the Manual button, then it goes down to 9.0 and stays there until you stop rhe extraction. Otherwise there are presets and a paddle to adjust the pressure in real time. Just wondering, when you start pushing down to extract, does the extraction only stops when it fully reaches 0 Bar, like when it bottoms out? Cause like i said if i use the "M Preset" which is the default one, there is a ramp up to 12, then down to 9 but no further until the end. Would it be better if i use the paddle to manually finish at 6Bar or whatsoever?? Thanks Clive.

@@PanzerIV88 not following you here, it’s unclear whether you’re taking about the Pro 800 or the Sanremo YOU. You can essentially do whatever you want with the YOU because the pump can change the pressure on a dime, in real time. you cannot do this with a spring lever machine.
