  • This recipe is how I like to make fluffy soft pillow like rolls. This recipe can also be used to make the popular milk bread rolls.

    INGREDIENTS
    4 1/2 to 5 cups (595 g) bread flour or all-purpose flour
    1 cup sugar (200 g) **adjust sugar amount if you prefer to use less. 😊
    1 1/2 tsp salt
    1/3 cup (40 g) dry non-fat milk powder
    12 oz can (354 ml) evaporated milk
    2 1/2 tsp dry active yeast
    1 Tbsp cooking oil
    1 large egg (room temperature)
    4 tbls (57 g) unsalted butter
    I used a 9x13 baking pan
    Preheat oven to 350 degrees F & bake for 20 minutes
    **When kneading by hands, allow dough to rest 15 minutes before kneading
    **Knead until dough can stretch without tearing easily
    **use room temperature ingredients to help yeast thrive and develop
    **When proofing the dough, the proofing time may vary depending on your kitchen environment
    **use egg wash to give your rolls a glossy golden brown finish

    Gochujang Mamá (and anyone else who wants to know), the reason that the dough is sticky when you’re working in the butter, and it is more workable after resting is that you’re giving the flour time to absorb all the water from the milk and butter. In professional baking, this step is called “hydration”.
    When you work the wet ingredients into the flour, the moisture is sort of coating the flour granules, but it fully soaks it in during this time, making the surface look and feel drier.

    This is a wonderful recipe and my whole family loves these rolls. They're great in the morning with butter and jam. When I make them for a savory meal I prefer them to be a little less sweet and a bit lighter. I use 1/2 cup sugar, regular milk, no oil, and no powdered milk. They turn out perfect every time. This recipe is a keeper.

      My milk is warm not boil to put the yeast in to mix, do I do wrong it comes out too tough meat not soft

    Made these last night. Half the dough I made regular dinner rolls and half I rolled out, spread some homemade garlic herb butter, pepperoni, and mozzarella on, and rolled into pinwheels. DELICIOUS!!! Oh, I did cut back the sugar by maybe a fourth of a cup.

    I LOVE THIS RECIPE. The only change I make is that I use 60g of sugar instead of 100g. It was a bit sweet for my taste, but I love every other thing about it. Thank you!!!

      I like tried this recipe first and didn't find the need to like try any others. I wanted to use word "like" like five times so one more will like lee do the trick. (all in fun, love you Zahra)

    I’ve never made bread before, and never had any interest in making bread. But after watching your video I was determined to make my own bread. I made bread about a week ago, I did get a little frustrated during the kneading process. I had to remind myself “ labor of love”. So worth it the rolls turned out great and my family loved them. And they have even requested that I make these rolls for Thanksgiving. Love all your videos!

    Hello Everyone, Thank you for checking out this video. Sorry for the confusion of the measurements in grams. I weighed the ingredients in ounces (my food scale is only in ounces) and tried to convert to grams using a conversion chart. As most of you noticed I mention 100 grams in my video, which was a mistake on my part. I hope to make these again at some point and will update the description below this video with weighted measurements in grams...as soon as I buy a different scale. Thanks again and have a good one! 😁

    My dough did not come out sticky using the stand mixer but the rolls came out amazing! I have been looking for a recipe like this for years and finally found "the one". I was hoping this was written out somewhere but I haven't been able to find that. I'll have to write it down step-by-step myself I guess but sooooo worth it!

    You have achieved baking perfection. The recipe is simple to follow, and kneading it by hand ONLY if you have the time or the energy. I don't have a machine at the moment to do it, but i do appreciate you teaching me the elbow grease method. Oh i wish i could sink my teeth into one of those rolls now! Thank you, Angelica. 😍

      It is work, but the rolls come out so soft. I had to correct a mistake I made. The sugar amount is one cup, but not 100 grams. It's 200 grams. So if you ever try the recipe, just check the description below the video. :)

    Oh that brings back some memories, my Mama made homemade dinner rolls, doughnuts, etc. I would come home from school an the entire kitchen would be covered with rising rolls or whatever she was making filling the house with that wonderful smell.     That malt, milky flavor you mentioned is the very reason my son loves powdered milk. I was thankful he loved it cause three weeks out of a month that's what we used.

    I made these and I was fortunate to have eaten a half a roll before coming back into the kitchen to not only find the entire rack had been stolen but my stinkin half a roll was also consumed. Mind you....there were only three of us home ..my precious family members inhaled these rolls. I'm so back here to get the recipe and make them again.

    Hey Simply Mama. This is now my go to recipe. Yours is one of my fav TH-cam cooking channelsI have made this several times and people go crazy for the rolls. I made them for a Christmas party my husband and I hosted 2 weeks ago few girls asked if we could have a Bake party where I teach them how to make these rolls.     Wow, I know I have been told, the wetter the dough, the more moist the bread will be. I can't wait to make this, as I love evaporated milk in everything. This is an interesting addition. I can't wait to try this .

    It was stressful, frustrating and it definitely felt like I got a good workout! But I did it! And they turned out amazing!!! I did have to use about a 3/4 cup more flour while kneading in order to make it workable. It was still way too sticky after letting it sit for 15 mins. So I slowly worked about that much in until it stopped sticking to my hands and the counter. I thought for sure I ruined it but they came out amazing. I’ve tried other bread rolls and they always come out bad. I’m so beyond happy I found something that actually works. Thank you so much!!

    My grandma would love u. Scrambling ur egg in a different lil bowl. She'd say never know when u might get a bad egg. Mind u she talking about fresh farm eggs by her chickens. Lol. I will be trying this.

      My mother taught me that too . She grew up a sharecropper's daughter . They collected eggs daily but would occassionlly find o ne in the oddest place or had forgotten to check a nest and so theres no way to know for sure how old the egg is .

    It’s worth having a kitchen scale. I’ve used mine so many times, it’s been More than worth it. And, weighing the ingredients is really more accurate!

    This is the 3rd time I've used your recipe. Thanks, the rolls are just delicious. Packed some for my son-in-law. Gave some to my daughter and my other son-in-law. All loved them for breakfast with butter and jam. They asked me to bring some for Thanksgiving so I'm making them now.

    Thank you so much for this recipe! I made these rolls today, and my family went nuts over them! It was my first time working with yeast, it was a little intimidating at first but I followed your instructions and the dough turned out great. I am a weakling so I kneaded my dough for closer to 30 minutes lol. I did make a couple of changes - I did not have dry milk on hand so I left it out, and I used all purpose flour because it's what I had in my pantry.       That's because that's basically what they are. This was one of the recipes my mom had from when grandpa owned a roadside diner and gas station here in Texas. It's a variation of an old Czech and German recipe.

    My mom, had made what I called the best ones; my fam called hers "sweet rolls" that she made every holiday and we lived for these to come out the oven, savoring the taste right now. I watch her make them but I and no one in our family was ever able to master her recipe for "sweet rolls" plus their smell after the come out the oven still lingers in my nose.     These are def THE BEST rolls I’ve ever made fully soft and such a good flavor wow
    I subbed powder auger for dry milk and whole milk for evaporated milk they’re still came out fine. I don’t plan on using any other bread recipie ever.

    I made these rolls exactly like your instructions, except I had to use my bread machine for the dough. My hands cannot tolerate 20 min of kneading and I wanted to make sure it was kneaded for that time, the bread machine was pretty close. The absolute best rolls I have ever made or eaten. Pillowy soft and pulled apart like yours. I did let it rise in the oven for a bit too long because it rose ALOT. The 2nd rise I thought I might have one big piece of dough baking together, but no, they pulled apart individually perfect. Anyone else using a bread machine, make sure you only use it for the dough cycle, do not let it rise in the machine. The steps she does after the dough is kneaded folding and partially rolling 3 to 4 times then placing in a lightly oiled bowl to rise is very important. This was really a very easy recipe because I didn't have a sticky flourly mess. I could never bring myself to buy store bought rolls again. These are soo soft you can press on them and they spring right back in shape, these are not dense rolls. Went perfect with my homemade stew and this morning I warmed one up and put honey on it and it was soo good. Thank you for your excellent instructions and wonderful videos.

    I have been making bread for nearly 40 years, but only 1-2 times a year. My dough always proofs great, and it tastes really good after baking. The problem for me has always been the texture. I love rolls from some restaurants such as Golden Corral, Texas Roadhouse, and Golden Chick. This year I decided I would keep trying different methods of making the dough until I achieve what I want.     These are fabulous. I make them all the time and everyone loves them. But they're too sweet to be considered dinner rolls. Even 1/3 cup of sugar is a little too sweet. I use 1/4 cup sugar and that makes slightly sweet, delicious dinner rolls. This recipe also works quite well with 12 oz of milk instead of evaporated milk, and I've never used the milk powder since I almost never have it on hand. But I prefer the somewhat lighter rolls made with these tweaks and they come out perfect every time. Thanks for the recipe!

    For those who don't have bread flour, measure four then remove 2 tablespoons flour for each cup of flour. next add 2 tablespoons corn starch per cup of flour. Stir together, it's now ready to use in your reciepe.. Enjoy.

      Ah yes, wish I read this before. The stickiness never went away and had to put in some more flour to make it managable, probably about 50 or 60 grams more

      Do you know if we leave out the dry milk if that will cause a problem in the dough rising? Or is it added mainly for the “malt” flavor that she mentioned?

      I hate to be that person, but Don't Do This. Of the three main types of flour (Bread, All Purpose, and Cake) Bread flour has the most gluten to make your breads hold together (chewy). Cake flour has the least which is why it crumbles.
      This trick is used to make a cake flour substitute from All purpose flour. The corn starch lowers the gluten content. If you lack bread flour, you would have to add gluten to the flour you have. Since most people won't have 100% wheat gluten in their pantry, the best substitute for bread flour is just plain All purpose.

    Thank you for this, “my” tried and true rolls recipe that I always come back to! Getting ready to make them for Thanksgiving again this year (our holiday table is never complete without them). I also always make them for Christmas, throughout the year when we want them, and this also makes a great kolache dough!
    I use my stand mixer for this recipe every time. I’ve gotten the best results by mixing all ingredients together first and the butter last just like she says (I do all this is by hand in a bowl) and also by leaving it to sit for 15 minutes before using the dough hook. She does recommend letting it sit for this long when kneading by hand… turns out that I achieve the window pane quickest when I let it rest for 15 minutes too, even when I will eventually be using a stand mixer.

    Yes, working the butter in by hand does prevent using too much flour in the final stages of kneading. It allows the gluten to start building.

    Definitely going to try this roll dough.. 71 years old , and this is the best I've ever seen. I just have to tell you , when you spend up the video , it was hysterical.. I often feel like that when I knead for a while... thank you sweetie, for a great dough and a good laugh. I make bread and rolls all winter, and this is going to be a great addition

    When I made dinner rolls, I used to let it rise my dough for the first fermentation then punch it down and I pop into the fridge to rest overnight to give more flavor than yeasty test; then shape, proof, and bake in the next morning.

    I just made these! Mistakes made
    1- added too much flour. I did 5 cups should've used a bit less and built up in moderation.
    2- positioned them a rack too low in the oven.
    Yet still...they survived and are delicious!!!!!
    Now knowing my mistakes I know next time they will be even more beautiful!!

    love this, i just made sweet rolls with a recipe on a different site, it was very vague compared to this. It turned out thick it didnt rise enough.

    I rubbed in the butter into the dry ingredients then poured in the liquids so I only messed up 1 surface once... other than the bowl... :-)

    Looks wonderful. If you bake bread often you might want to consider investing in a proofing box (both for bulk fermentation and proofing). I purchased a Brod and Taylor for ~ $150 many years ago and it's still going strong. I like that I can get a consistent temperature no matter the time of year.

    Love your videos - I feel like I’m in the kitchen with you. I learned a trick a couple of years ago that I use when letting dough rise. I put dough in a greased bowl, cover with a kitchen towel, put in the oven with the oven light on, until doubled. Works perfect every time and you don’t need a pan of water or anything else. I like shortcuts like this….that’s why I use my stand mixer when making bread! 😉
