I think the most popular is just cream with some grated parmesan. We don't have single or double cream in Italy, just cooking cream and it's thick. It's a simple clean taste and I think it complements the meat filling of tortellini.

Saw some of masterchef videos and I conclude that the older chef is a gentleman. He tried to minimize the impact of word towards the contestants. Hands down
Tbh I think it was good, because of the following: 1_ he didn't seem to be mean to him (in a way of looking angry and trying to spit out or put the whole dish to the trash can, etc. What he told him might've been just constructive criticism). It almost looked like he was saying it was a shame since he saw more potential on David in this challenge. 2_ Alvin kinda is right tho. Masterchef is all about gourmet stuff, and although David DID put panchetta and other good quality cured meats, he didn't season or put something else to it that was that "gourmet WOW" factor. Be it rare-ish mushrooms, several spices, mixed herbs; etc, you name it (not a chef, just giving my opinion). Alvin did also said it tasted like a ham and cheese sandwich, and whilst that's still delicious, it wasn't out of normality, it wasn't complex. Just a regular ham and cheese stuffed pasta, with, as he said, no "excitement". Even chef Michael said that that stage in the competition needed elevated flavors. I feel bad for David tho, I'm sure he did his best and that that was a goddamn good tortellini. Maybe this helped him? Idk.

It’s a gourmet competition and David’s dish was ham and cheese. It might be good enough at home, but the time and place needed spices and seasonings and additional fillings.

"It's one of Italy's most popular pastas" and they are presented with cream...if you cook tortellini with cream in emilia (that is the italian native region of tortellini) they will sentence you to death. This idea, coming from US, that we italians eat pasta with cream is quite annoying. Cream is the best way to ruin a pasta dish, it will cover other flavours

Italian cuisine is loved and appreciated in entire world, due to its tasty flavours and ingredients. I don't understand why foreigners, especially in the us, trying to replicate a perfect dish end to ruining it. I understand experimenting, trying new things, but they are chefs, they're expected to know the ingredients, the flavours, and make the best combinations. If you cook tortellini with cheese cream or pizza with ananas, carbonara with bacon you're not doing an Italian specialty/dish and you cannot expect to taste something as good as the original.
It's because Americans do everything wrong lol. Real, actual, authentic Italian cuisine is not just pasta, there's alot of veggies and seafood. There is no drenching food in sauce and cheese. That's just an American thing. We tend to take everything and smother cheese and crap all over it because we want more fat, more portions, more everything. It's gross I know but I do agree, the authentic way is best and I wish some people that claim to be chefs would do more research on authenticity of dishes that they try and make instead of going off of what they've seen or think they know. Chances are they don't.
Contrary to popular opinion, I think the critique on David was very apt. You could tell Alvin thought it tasted good but he's also right to say that it's too far into the competition to be making just ham and cheese. He played it too safe and went way too simple with his filling. Given the chance, I bet everyone else in the kitchen could have made the same thing just as good as he did because he didn't step outside of his comfort zone. In MasterChef, you need to take chances and think outside the box. Just don't go too far or you'll end up doing things like Kwasi did for this challenge. He went too complicated by trying to mix together too many flavors for his filling and the judges were quick to note that.

I agree, but its a reality show in retrospect. They require drama in order to make it interesting.
+Sappy i totally understand. unfortunately such kinda stuff brings views. but maybe if they try to make the show interesting by making each rounds more diverse and innovative , they will get even more views and maybe we viewers as well as the contestants would also have a much more pleasant experience.

"It's one of Italy's most popular pastas" and they are presented with cream...if you cook tortellini with cream in emilia (that is the italian native region of tortellini) they will sentence you to death. This idea, coming from US, that we italians eat pasta with cream is quite annoying. Cream is the best way to ruin a pasta dish, it will cover other flavours

Anyway it's bizarre that our dishes are loved all over the world but many people feel hurted when we say they are doing wrong. Go in Emilia, eat traditonal tortellini then come back and tell me if you are going top use cream any more.

Italian cuisine is loved and appreciated in entire world, due to its tasty flavours and ingredients. I don't understand why foreigners, especially in the us, trying to replicate a perfect dish end to ruining it. I understand experimenting, trying new things, but they are chefs, they're expected to know the ingredients, the flavours, and make the best combinations. If you cook tortellini with cheese cream or pizza with ananas, carbonara with bacon you're not doing an Italian specialty/dish and you cannot expect to taste something as good as the original.
It's because Americans do everything wrong lol. Real, actual, authentic Italian cuisine is not just pasta, there's alot of veggies and seafood. There is no drenching food in sauce and cheese. That's just an American thing. We tend to take everything and smother cheese and crap all over it because we want more fat, more portions, more everything. It's gross I know but I do agree, the authentic way is best and I wish some people that claim to be chefs would do more research on authenticity of dishes that they try and make instead of going off of what they've seen or think they know. Chances are they don't.

Contrary to popular opinion, I think the critique on David was very apt. You could tell Alvin thought it tasted good but he's also right to say that it's too far into the competition to be making just ham and cheese. He played it too safe and went way too simple with his filling. Given the chance, I bet everyone else in the kitchen could have made the same thing just as good as he did because he didn't step outside of his comfort zone. In MasterChef, you need to take chances and think outside the box. Just don't go too far or you'll end up doing things like Kwasi did for this challenge. He went too complicated by trying to mix together too many flavors for his filling and the judges were quick to note that.
