Yup, holding it while trying to deploy the wings is very hard, for sure, as there’s not a lot of places where you can safely hold it thanks to all the moving parts. (And even as an adult, it’s very hard to swoosh as well because of how heavy and bulky and cumbersome it is with the wings deployed! I can’t imagine how many times I would have dropped one if I owned one as a kid!) A bigger problem with it though, and I say this as a adult owner of the set, is the connections between the engine + wing assembly and the body on each side are not strong, and not truly sufficient. There’s only 4 blue 1x3 pins on each side securing the combined engine and wing assembly to the body, which aren’t nearly enough considering the stress out on them by the wings deploying (and how much the wings bounce around when you swoosh the model). Currently, my V-19 Torrent sits in several pieces, awaiting replacement pins as it broke the originals. I’m going to try the replacement, more modern version of the blue 1x3 technic pin (which should hopefully stand up to the stresses better), but right now I’m fresh out. I’ll have to Bricklink some soon.

I mean maybe a motorized version of the ship with the rotating wings, so the wings can be rotated with some sort of internal motor rather than by hand. But yeah, more motorized Lego sets would be nice
The V-19 Torrent is a recent set acquisition for me as well. It’s a really cool set to be sure, though I can see why it’s never been remade (the primary functionality is incredibly complicated and even more difficult to regulate the speed and force of, and it requires specialized shock absorber pieces to not damage itself every time the main function is used). I was a very lucky ducky and found a sealed copy at a convention for less than 400 USD.
I personally like the setting wheel at the back of the ARC-170 Starfighter from 2010 that unfolds its wings into combat mode and also dobbles as a missile launcher button.
You have some incredible shelves for a great collection! I have Home Depot storage shelves, but I have too much to consider anything like your shelves. Really cool stuff man!
Not sure if this was a play feature by lego, but one thing that's fun is when you use the big shoota but you tie a piece of string on the backof the missile and connect it with something else. Great as like a harpoon or big claw grabber thing.

The AT-AT literally made me gasp
I parted together the motorized AT-AT a few months ago, (with some modifications) and seeing it walk for the first time was immensely satisfying.

Ashoka's Shuttle is one of my favorite sets I own. Videos and pictures don't do it justice. It's a really gorgeous set.

A lot of people don’t know, but having dust on Lego sets dry out the stickers which causes them to crack I’ve had it happen

My V-19 does not work that well, I’ve rebuilt it multiple time it just never gets the iconic wing look it’s promised
some of the gears on mine aren’t in great condition and the feature isn’t super smooth
Since they messed up the underside of Ahsokas Shuttle, the play feature is really useless.
