Welcome to my FREEZER CHALLENGE! I'm hoping to make short work of the things in the freezer that NEED TO GO! I need pumpkin recipe ideas (as usual lol) as well as pepper ideas! It was a good start this week but I think that next week I'll make a bigger dent! It was a pretty full week of some fun recipes so I hope that you enjoy the video
lol...I know you are trying to make a dent in your freezer, but in many ways you are giving people inspiration. You are showing them they will never run out of food :) Great video as always.
Just an idea about the frozen carrots. Instead of freezing them in such a big hunk, freeze them using silicone muffin cups. Once they’re frozen you can empty them into a ziploc bag. Easier to pull out one or two for recipes instead of trying to break chunks off a big block
That sub sandwich looks so good. Knowing me, I would end up eating the butter/garlic bread side first, and then eat the actual sandwich half with the meat as an open face. I do love garlic bread, especially with the amount of butter you lavished on! This looks like the start of another fun series.

With your frozen fruit you could do a fruit salad crumble or cobbler. As your freezing your garden vegetables, you can freeze in combinations you know that you enjoy. I have an onion and mixed sweet peppers mix. Also a green vegetable mix. But my favourite is zucchini, onion, green pepper and broccoli mix.
For the strawberries and banana - strawberry banana quick bread. For the squash, you could easily substitute for pumpkin. My grandmother always used squash for her “pumpkin” pie according to what my grandfather told me.
Strawberry banana quick bread sounds interesting! I'll check it out! I have loads of both pumpkin and squash and yes...I do use them interchangeably! Hubbard squash makes the best "pumpkin" pies!
Love when you get to eat all your wonderful shopping deals. Super glad that the gnocchi turned out well. They looked like normal gnocchi to me when you opened the bag. Green sauce instead of your pink beet sauce 😂 All the colors. Winter squash rolls. I have a ton of pumpkin frozen so I might have to try those. Yum
I'm sure that those gnocchi would cook up just fine if I boiled them but they were great fried up too! It's definitely the season for green instead of pink or orange LOL I love the winter squash rolls...I wish that they used up more squash though!!
I bought one of those big air fryers with racks instead of a basket. It's essentially a small convection over with a more powerful fan. It also has settings for baking, broiling, roasting, and dehydrating. Aaaand... it comes with a spit for cooking roasts and a rotating basket for fries and what-not. The best part is, on stupid hot days I can still use an oven. I just haul that puppy out on the deck and plug it in. Works like a charm. It's dethroned the instant pot as my favorite thing. If my house were to catch fire, I would probably run back inside to save it.
Hmmm that's a pretty glowing recommendation! I am pretty resistant to new appliances...but loads of people are raving about air fryers and I don't even have a regular deep fryer. Might be worth an investigation. What brand do you have?
@@JessicaWanders I went with the Instant pot brand. The Vortex Plus model. It was the cheapest one that did everything I wanted it to do. I think it cost somewhere between $150 and $200. I'm not a fan of extra appliances either but I saw someone using one similar to mine in a video and knew I must have one. I figure it will eventually pay for itself in savings on electricity saved by not heating the entire oven or run the air conditioner as much. I have a kidney condition that makes it dangerous for me to get overheated so the AC has become an absolute nessesity, especially with the crazy heatwaves we keep getting these days. After that terrible "heat dome" incident, we even bought a second one. As you can imagine it gets expensive so I tend to cook outside on hot days. I use the BBQ, side burner, Instant pot, an electric roaster and an electric frying pan. The airfryer completed my makeshift outdoor kitchen.
Ok, my ever-so-organized husband found the receipt in about 2 minutes. It was $197 last March. I honestly wouldn't reccomend one of those little basket ones. Unless, maybe you find a super cheap one at a garge sale or something. My daughter has one and she's used it twice. If I had one I wouldn't bother using is very often either. Those are just replacements for deep fryers that do a crappy job of frying. This thing, I think of as a small oven, only it does a better job than my ancient normal one. Lol, Instant Pot should really be paying me for this.

@@JessicaWanders Yes, that is what I meant by racks. I wasn't able to find much information on the features of that model. Tbh, I'm not particularly tech savy these days. I used to be, but everything changed too many times and I got sick of it. Does that one come with the rotisserie and basket? Dehydration setting? There was a link on that page to the Vortex Plus model but the one it took me to is definatly not the one I have. However, there were a few pictured below the one it sent me to that looked pretty good, and less expensive. One was $139. I didn't check its ratings or anything though. As far as the rotisserie and basket go, I've only ever used the basket for fries, and you could probably make them on the trays just as well. The rotisserie... I haven't used that at all. I do use the Dehydration setting a lot even though it doesn't hold all that much. It gets the job done quite quickly. The fan is so powerful, it has sort of a built in alert to let you know you food is dry enough. That's when it sounds like you're popping loose popcorn kernels in there. It shocked the heck out of me the first time but now I find it quite convenient. Good luck in your search for the right model for you.
I sometimes make a sauce for my fruit salad consisting of equal parts lemon juice and dry vanilla pudding mix. Sugar if needed.The pudding makes the sauce thicker,and it clings to the fruit nicely!

The sub looks perfect for camper cooking. We eat sweet pumpkin scones here in Australia. You could certainly use your frozen pumpkin in another batch of those squash rolls You could also make a Vegetable Terrine - basically a vegetsble meatloaf served cold
@@JessicaWanders look for the simple to throw together terrine recipes. There are some terrine recipes that are very over the top 'show off' table centre-pieces, like overly fancy cakes 😀
I do a hotdog stir fry of sorts.. broccoli, red onion and red bell pepper with cut up hotdogs. all teriyaki and some sesame seeds. serve over rice. DELISH

I like to make sweet breads with carrots and squash. Just make sure you add enough wallnuts and spices. The peppers go amazing in asian style stir fries and in all kind of stews.
You can also pickle turnips just like you would cucumbers or beets..and squash can be a good substitute for pumpkin in pumpkin bread any gourd would do....for your hash fried onions and some Goya sofrito sauce might work lol
Since pumpkin and squash are from the same family the sweet ones are interchangeable. I have made a sweet potato pie and a pumpkin pie ( using same seasonings) and no one could tell the difference...everyone thought they were pumpkin pies! Lol. So, I bet you could take the sweet pumpkin mash it up and make it into a casserole like a sweet potato casserole, with pecan, brown sugar, flour and butter for the topping. My recipe calls for 3 cups of cooked, mashed sweet potatoes, 1/2 cup of whole milk, 11/2 stick of butter or 3/4 cup, 1 cup of sugar, tsp of vanilla and 2 eggs. Pour into oil sprayed 13x9” baking dish. Top with: 1/3 cup of flour, 1 cup of brown sugar, and 1/4 stick of butter or margarine (and cut in
The only thing I know that uses tarragon...Sweet Tomatoes restaurant's tuna, tarragon pasta salad. You can Google that. My friend makes this sometimes and she always says to make it one day, eat it the next day. If you don't let it sit in your fridge overnite, it tastes a little funky apparently ....😄
@@JessicaWanders Agreed, tarragon goes very well with fish. It is also tasty as a garnish on top of a fried fish filet with fried potato wedges and mixed Mediterranean vegetables (ratatouille).
to use some peppers and any of the other frozen veggies try some stir-fry? with different sauces you can make up with things you have froze and small amounts of meat you have also froze. that fruit salad looked really good never though of adding juice in. I have frozen garden strawberry, some blueberries and possibly some left over grapes that were froze. might have to try this with some fresh peaches and apples that need to be used up.
Hi Chelsie :D Stir-fry is a great idea! I like adding the juice as it seems to mix all the flavours together nicely. I usually add apple of orange juice but I had the grapefruit juice to use so I added the extra sugar...which I normally wouldn't. It's a great way to use up a variety of fruit! :D

Those squash buns looked delicious. I have a bit of frozen pumpkin I want to use up. Maybenivwillbgivebthembabyry. Also if you have a bunch of meat in your freezer you could can some of it. I do pork and make quick pulled pork or beef roast is my favourite. When you open Heat up the beef in the liquid then thicken with flour or corn starch for gravy. Really quick for when you don’t feel like cooking. A lot of people wear by ugly chicken.
Great suggestions Susan :D I do love one pulled pork canning recipe and I'm hoping to try it with the pork shoulder(?) I bought! It's been so hot it's hard to get into setting up the canning equipment...
I took out all my peppers of every variety that I had left from last years garden from my freezer. I thawed them. Then put them in my food processor and ground them all up. Then I made cowboy candy out of them all. I found the slices hard to use on things. So I thought the ground up version would be better. And using all different peppers made it less spicy. Which my hubby and I like better.
My freezer is full too. I had cleaned it out and it filled back up so quickly. I’m trying to clean out mine too. Those carrots would be great in breakfast muffins! And, the hot dog hash, while you were making it I thought how a scrambled egg mixed in would make a great breakfast for the leftovers. Fried egg works too! Other TH-camrs have used their crockpot to clean out the fridge. Just take whatever meat with whatever veggies and make a stew or soup. I must admit, I’ve done that too. Makes easy clean out. If you have loose sausage, the cabbage and carrots would make egg roll in a bowl. I have an overflow of shelf stable milk, evaporated milk, and broth in my freezer. Don’t know what to do with it. Got rid of some. Keep showing us what you are doing! I’m in serious need of inspiration.
I make a fruit salad. I guess it is Hawaiian fruit salad. I use tropical fruits and small marshmallows and sour cream as the cream part. Add some maraschino cherries and mandarin oranges. Yummy!
My other fruit salad I make is apples, bananans, strawberries, grapes,blueberries, ect and my “cream” is Greek yogurt (I like honey vanilla Greek yogurt) super yummy too
Here is rest of recipe combine all of topping then sprinkle on top of sweet potatoes...now sprinkle the topping with 1/2 cup of chopped nuts( pecans preferably). Bake at 350 degrees for 45 minutes. Let set up for around 15 to 20 minutes. These are very good with ham, pork roast or Turkey at Thanksgiving.
That sounds like a wonderful recipe Nancy! My Hubbard squash could easily replace sweet potatoes and makes excellent “pumpkin” pie! I’ve never had sweet potato pie before but I’ve heard about it a lot! I should give it a try! 😃
Ok, HOW do you peel your bananas after having them in the freezer? I saw them in your freezer with the skins on, so I threw some ripe ones in MY freezer, but I’m not sure how to get the peels off now. 😂
Aha..I'm making a recipe with those bananas for next week's video so you'll have to stay tuned! LOL I just chop the ends off and use scissors to cut the peel and then peel it off. They are very soft...like already pre-mashed! I've just always done them that way...
If you really feel motivated, you could even try making up some canned soup bases. Grains and pasta cannot be canned, but meat and veg can be added to the broth before canning.
@@rhondaakey9166 I have chicken and rice soup that I canned on my pantry shelf right now. It's really good. I cooked the rice before I put it in the soup to can.
@@loritanner4478 According to the manual which came with my All American pressure canner, it is not safe to can grains and pasta. However, you can prepare soup bases with just the meat and veg, then add the grain or pasta when reheating the home canned soup. Commercial canned soup are processed at a higher temperature, which is why they are able to include grains and pasta in their canned goods.
@@rhondaakey9166 I have been canning for 44 years now. And I have also canned noodles in my soups. And they turned out just fine. But I researched which noodles don't expand. And I also used cooked rice so it didn't expand. Plus I just used 1/4 c. In my chicken soup. I am a semi-rebel canner. And I do what is safe. Most of the things that "they" say isn't safe, they haven't tested. No money in it. So I just say, you do what makes you feel safe. And I do what I feel is safe. And I have canned at least 2500 jars of all different foods in just the past 2 years. And since I've been at it for 44 years on my own, plus I was around it growing up. I have been at it longer than most of those experts. I use common sense when I can. Which now days is in short supply. And yes, I have all the canning books and I have used most of the canning recipes through the years that are in them. I wish they would come out with a new one with some different recipes to can. They all seem to have the same ones year after year. Happy canning to you.
It was definitely fried and a bit crispy in spots on the outside and squishy inside :D Not really crunchy but just a bit crisp on the outside...maybe I can't explain it right? LOL

I canned turnips once. Yuck! They stink real bad. And I hated the taste and texture when canned. I ended up throwing them all away. Also I will never can broccoli or cauliflower ever again either! Been canning for 44 years and there is only a few things that I will never can again. Those 3 are at the top of my list.
Interesting Lori...Do you normally like turnips? That's what I had thought about canning them too but in the book it only cautions against rutabagas getting bitter so I wondered if it would be worth a try...I'm glad to hear your review...I might just freeze them...

Tarragon is a natural fit (in my opinion) with chicken, fish, seafood. Cream sauces are great with Tarragon and Tarragon and Carrot soup is delicious.

With the gnocchi, you are suppose to put them in simmering water until they float to the top. Then drain them and add your favorite sauce to them.
That's what I thought but this skillet gnocchi had different cooking instructions on it! They were quite good :D
to use some peppers and any of the other frozen veggies try some stir-fry? with different sauces you can make up with things you have froze and small amounts of meat you have also froze. that fruit salad looked really good never though of adding juice in. I have frozen garden strawberry, some blueberries and possibly some left over grapes that were froze. might have to try this with some fresh peaches and apples that need to be used up.
Hi Chelsie :D Stir-fry is a great idea! I like adding the juice as it seems to mix all the flavours together nicely. I usually add apple of orange juice but I had the grapefruit juice to use so I added the extra sugar...which I normally wouldn't. It's a great way to use up a variety of fruit! :D
I don't have any meat like that to use up in my freezer but now I really really want to make a baked sub!

Those squash buns looked delicious. I have a bit of frozen pumpkin I want to use up. Maybenivwillbgivebthembabyry. Also if you have a bunch of meat in your freezer you could can some of it. I do pork and make quick pulled pork or beef roast is my favourite. When you open Heat up the beef in the liquid then thicken with flour or corn starch for gravy. Really quick for when you don’t feel like cooking. A lot of people wear by ugly chicken.

I took out all my peppers of every variety that I had left from last years garden from my freezer. I thawed them. Then put them in my food processor and ground them all up. Then I made cowboy candy out of them all. I found the slices hard to use on things. So I thought the ground up version would be better. And using all different peppers made it less spicy. Which my hubby and I like better.

My freezer is full too. I had cleaned it out and it filled back up so quickly. I’m trying to clean out mine too. Those carrots would be great in breakfast muffins! And, the hot dog hash, while you were making it I thought how a scrambled egg mixed in would make a great breakfast for the leftovers. Fried egg works too! Other TH-camrs have used their crockpot to clean out the fridge. Just take whatever meat with whatever veggies and make a stew or soup. I must admit, I’ve done that too. Makes easy clean out. If you have loose sausage, the cabbage and carrots would make egg roll in a bowl. I have an overflow of shelf stable milk, evaporated milk, and broth in my freezer. Don’t know what to do with it. Got rid of some. Keep showing us what you are doing! I’m in serious need of inspiration.

I make a fruit salad. I guess it is Hawaiian fruit salad. I use tropical fruits and small marshmallows and sour cream as the cream part. Add some maraschino cherries and mandarin oranges. Yummy!
My other fruit salad I make is apples, bananans, strawberries, grapes,blueberries, ect and my “cream” is Greek yogurt (I like honey vanilla Greek yogurt) super yummy too

Here is rest of recipe combine all of topping then sprinkle on top of sweet potatoes...now sprinkle the topping with 1/2 cup of chopped nuts( pecans preferably). Bake at 350 degrees for 45 minutes. Let set up for around 15 to 20 minutes. These are very good with ham, pork roast or Turkey at Thanksgiving.
That sounds like a wonderful recipe Nancy! My Hubbard squash could easily replace sweet potatoes and makes excellent “pumpkin” pie! I’ve never had sweet potato pie before but I’ve heard about it a lot! I should give it a try! 😃

Ok, HOW do you peel your bananas after having them in the freezer? I saw them in your freezer with the skins on, so I threw some ripe ones in MY freezer, but I’m not sure how to get the peels off now. 😂
Aha..I'm making a recipe with those bananas for next week's video so you'll have to stay tuned! LOL I just chop the ends off and use scissors to cut the peel and then peel it off. They are very soft...like already pre-mashed! I've just always done them that way...
I let them thaw in the skins then cut the end off and they slide out. 😉 perfect for banana bread! Or whatever your heart desires!

You have previously said you have a pressure canner. Why not can up the broth for your pantry?
Yes...that's the plan now that I have a bunch made up :D
If you really feel motivated, you could even try making up some canned soup bases. Grains and pasta cannot be canned, but meat and veg can be added to the broth before canning.
@@rhondaakey9166 I have chicken and rice soup that I canned on my pantry shelf right now. It's really good. I cooked the rice before I put it in the soup to can.
@@loritanner4478 According to the manual which came with my All American pressure canner, it is not safe to can grains and pasta. However, you can prepare soup bases with just the meat and veg, then add the grain or pasta when reheating the home canned soup. Commercial canned soup are processed at a higher temperature, which is why they are able to include grains and pasta in their canned goods.
@@rhondaakey9166 I have been canning for 44 years now. And I have also canned noodles in my soups. And they turned out just fine. But I researched which noodles don't expand. And I also used cooked rice so it didn't expand. Plus I just used 1/4 c. In my chicken soup. I am a semi-rebel canner. And I do what is safe. Most of the things that "they" say isn't safe, they haven't tested. No money in it. So I just say, you do what makes you feel safe. And I do what I feel is safe. And I have canned at least 2500 jars of all different foods in just the past 2 years. And since I've been at it for 44 years on my own, plus I was around it growing up. I have been at it longer than most of those experts. I use common sense when I can. Which now days is in short supply. And yes, I have all the canning books and I have used most of the canning recipes through the years that are in them. I wish they would come out with a new one with some different recipes to can. They all seem to have the same ones year after year. Happy canning to you.

It was definitely fried and a bit crispy in spots on the outside and squishy inside :D Not really crunchy but just a bit crisp on the outside...maybe I can't explain it right? LOL

I canned turnips once. Yuck! They stink real bad. And I hated the taste and texture when canned. I ended up throwing them all away. Also I will never can broccoli or cauliflower ever again either! Been canning for 44 years and there is only a few things that I will never can again. Those 3 are at the top of my list.
Interesting Lori...Do you normally like turnips? That's what I had thought about canning them too but in the book it only cautions against rutabagas getting bitter so I wondered if it would be worth a try...I'm glad to hear your review...I might just freeze them...
