Eight months ago I was struggling to find something to do, to keep myself occupied. I'm a retired engineer and worked all my life from starting in 1974 to finish in 2016. I even thought of going back to work. I bought a N gauge model train set but that was a complete failure. Engineers' fingers are exactly the same size as N gauge trains; you can imagine the problems lol. Now entirely thanks to you 'John Kirkwood' I am a cooking fool; the success of the farmhouse loaf was my launch pad. My pride and joy are my cast iron pans and Dutch oven. I am extremely proud and protective of my sourdough mix. I have branched out into sausages and soon will try meat pies. Here where I live in rural North East Thailand they had never seen pancakes or crumpets, now the family love them. Thank you sincerely for your help, it is much more than you might imagine and more than just the bread.
Being also retired 10 years the covid lock down drove me crazy. I have no wife and no children. I found John and started do his recipes. Life saver to me.
I made this today. My loaf got six inches high! The inside is fluffy, the crust is crisp and chewy, the flavor is out of this world. Thank you, Mr. Kirkwood! We're never buying bread again!
Wow! I've been looking for a recipe this good for several years now. This is the one! I made it exactly according to the instructions the first time. Fabulous. Because I like to use whole grains, I made it today with 200g whole wheat and 300g bread flour and 15g extra water. Once again, it rose like a champ. :)))))))) Thank you!

Just started doing a bit of baking again after a little hiatus and just made this. I halved the quantities forgot to halve the salt but it turned very well and ate the whole thing in a couple of buts of bread and butter, two big sarnies (cut the loaf length-ways) and two bits of toast. What an absolute joy!

I'm very new to making bread, and this video was the first one I watched and followed exactly to the recipe, and the bread turned out amazingly. I then got hooked and tried other recipes, an overnight no kneading technique, and each week, my bread skills have slowly improved. I've loved experimenting with different variations, too. Using sesame seeds, using some beer in the mix, using a mix of flours, etc. Well, I'm on week 9 now, and I came back to this video because I wanted to mix by hand again, and your instructions are very easy to follow. I also added chia seeds to my flour mix. The results were amazing. Thank you for igniting a new therapeutic hobby. Have a wonderful autumn this year, John! Best wishes from an expat in Thailand. 🙏
Beautiful loaf, John! I enjoy your videos, because they reflect so many comfort foods that truly are the mainstays of most family's meals. I’ve been an amateur bread baker for about 15 years, and seem to get the best compliments on my simple, basic loaves like this one. I make an Italian loaf with just flour, water, salt, yeast and one ounce of olive oil, which our grandchildren call "Grandpa's bread!" They eat it without any topping, and is the first thing they look for when they visit. I’m a retired handyman and have lots of time to dedicate to making loaf breads, English muffins (American style), sandwich thins for our lunches, as well as dozens of sourdough, no-knead, wheat and rye bread formulas for various seasons and holidays. We have not had commercial bread in our home since I started this hobby. I guess that makes me what is called "old school!" I’m 71, so I guess that's appropriate. Thanks for the time you put in to make these videos. I have a small channel myself with videos of the most popular breads I make, so our children can follow my methods when they make bread in their homes, so I'm very aware of the time it takes to produce and edit them. 👍👍 BTW, I have a two loaf batch on first proof, using your formula. Looking forward to tasting it in a few hours.

Morning John, I am using this recipe of yours with a 30% wholemeal flour mix and must say it is a great bake. The fine line to keep is with your water percentage. It is a fine loaf that comes out of the oven. Thank you once again for your guidance. No more baked bricks in my house!
While I was watching this video I had a loaf proofing which coincidentally was the same recipe you are using. I baked mine in a bread cloche and it turned out excellent. I like using the cloche as it eliminates the need for the pan of water in the oven. Another great video John, every recipe of yours I have tried out has turned into another favourite with the family.

For the last umpteen years, I’ve used a bread machine. It works well and delivers nice bread. This loaf was delicious!! Chewy, crispy, light and loads of flavour. My family ate the whole loaf before it could get cold! I use very strong Canadian flour (you can get this in Tesco in the UK) it has 14% protein and tends to make better bread than the usual 12.6% protein strong flour Please keep uploading John, love your recipes

Well John, I've been baking my own bread at home for years now. Mostly sourdough. When your loaf came out of the oven I could almost smell it. It made me think of my childhood back in the UK. A doorstep of farmhouse bread with a lump of farmhouse cheddar and a dollop of Branston pickle. I'm off to bake a loaf right now. We can't get Branston here now after Brexit. If you have a recipe for a similar farmhouse pickle, please make a video for all of us Expats.

@@JA-iu8bo You need strong flour for bread like this - I am not sure how it would be labelled in the US, but check the protein content on the side of the bag, which should be between 12 and 14 per cent (or grams per 100 grams). All-purpose flour, akin to what is sold here in the UK as ‘plain flour’, usually contains between 10 and 12 per cent protein. If you can find white flour which is unbleached, so much the better.

John, what's your opinion of hand kneading versus machine kneading when it comes to the crumb and taste test? The crumb on that loaf seemed so consistant and fine. It would be interesting to see a side-by-side, like-for-like comparrison on a future video.
I much prefer hand kneading over machine, I think you get a better feel for the dough. But if you have problems with your hands machine is the next best thing. Thanks for watching my friend. @@JohnKirkwoodProFoodHomemade I also prefer hand kneading. I just turned 66. Had to give up hand kneading about 20 years ago for a machine because kneading dough hurt my finger joints. I've worked with my hands ever since I was 12 years old, with the last 30 years working a keyboard for my IT job. Odd thing is typing doesn't bother me but kneading bread dough does. Tried a Bosch mixer, ended up prefering a 6 at. Kitchen-Aid Stand Mixer.

Made this first one not good, proving problems so was not surprised, tried again after finding a defrost setting in main oven, perfect proving temp (my oven light is LED so no heat from it) Loaf turned out great, sliced it up in my meat slicer and froze half.Freezes very well and crust stays crusty. I used my mixer for kneading. Thank you John, despite being a retired cook, I am still learning from your tutorials👍👍👍 Oh and making my own Bread Flour as per your video.

They say you can't teach an old dog new tricks, but I learned one today: after the first rise I was being too gentle knocking back (punching down is what we call it here on East Coast of Canada) the dough. Hay! I use a shower cap to cover my dough. One day I just decided that sence I dont use it for anything why not use it to cover rising bread dough. I was amazed at how well it worked. I bought more to cover dishes I refrigerated too. 👍😊👍

For folks struggling with bread making, I've found the freshness of your ingredients REALLY makes a huge difference. Years ago I baked 2 loaves a week for myself and my husband, and I had access to a health food store that would grind my just purchased grain to flour for me, as well as selling "fresh daily" yeast pellets. On bread-baking day, I'd buy my grain, have it ground to flour, buy my yeast, then go straight home and bake. My loaves would rise so high I had to remove the upper oven rack, and the interior of the loaves were so wonderfully soft, the crusts so crusty, we'd eat a half loaf within 20 minutes of them coming out of the oven, hahaha. So tip: buy flour in small amounts, same with yeast. Anything that's been in the fridge or cupboard for more than a few weeks is going to reduce the quality of your final product (eggs and butter included, if used). You can feel the difference when kneading, also super fresh ingredients will allow you to use less flour, giving you airier loafs.

Goodness me, this is a great recipe. I'm not bad at baking bread, but following this recipe has given me a wonderful sandwich loaf, and I used part of it to make my first ever rolls. I am testing the dried yeast and so far almost half that I bought from a major UK store seems lifeless. However the locally bought yeast goes berserk. One batch of dough I made was with a dubious yeast activity and after an hour there was no sign of movement. My wife won't let me throw anything away so we kept it and it did start to rise hours later.
I am a terrible cook but trying to improve. I followed your recipe for my first ever attempt at making my own bread and it came out amazingly (tastes great too which is an added bonus!) Thank you so much for sharing this with us.

Eight months ago I was struggling to find something to do, to keep myself occupied. I'm a retired engineer and worked all my life from starting in 1974 to finish in 2016. I even thought of going back to work. I bought a N gauge model train set but that was a complete failure. Engineers' fingers are exactly the same size as N gauge trains; you can imagine the problems lol. Now entirely thanks to you 'John Kirkwood' I am a cooking fool; the success of the farmhouse loaf was my launch pad. My pride and joy are my cast iron pans and Dutch oven. I am extremely proud and protective of my sourdough mix. I have branched out into sausages and soon will try meat pies. Here where I live in rural North East Thailand they had never seen pancakes or crumpets, now the family love them. Thank you sincerely for your help, it is much more than you might imagine and more than just the bread.

Wow! I've been looking for a recipe this good for several years now. This is the one! I made it exactly according to the instructions the first time. Fabulous. Because I like to use whole grains, I made it today with 200g whole wheat and 300g bread flour and 15g extra water. Once again, it rose like a champ. :)))))))) Thank you!

Just started doing a bit of baking again after a little hiatus and just made this. I halved the quantities forgot to halve the salt but it turned very well and ate the whole thing in a couple of buts of bread and butter, two big sarnies (cut the loaf length-ways) and two bits of toast.

I'm very new to making bread, and this video was the first one I watched and followed exactly to the recipe, and the bread turned out amazingly. I then got hooked and tried other recipes, an overnight no kneading technique, and each week, my bread skills have slowly improved. I've loved experimenting with different variations, too. Using sesame seeds, using some beer in the mix, using a mix of flours, etc. Well, I'm on week 9 now, and I came back to this video because I wanted to mix by hand again, and your instructions are very easy to follow. I also added chia seeds to my flour mix. The results were amazing. Thank you for igniting a new therapeutic hobby. Have a wonderful autumn this year, John! Best wishes from an expat in Thailand. 🙏

Beautiful loaf, John! I enjoy your videos, because they reflect so many comfort foods that truly are the mainstays of most family's meals. I’ve been an amateur bread baker for about 15 years, and seem to get the best compliments on my simple, basic loaves like this one. I make an Italian loaf with just flour, water, salt, yeast and one ounce of olive oil, which our grandchildren call "Grandpa's bread!" They eat it without any topping, and is the first thing they look for when they visit. I’m a retired handyman and have lots of time to dedicate to making loaf breads, English muffins (American style), sandwich thins for our lunches, as well as dozens of sourdough, no-knead, wheat and rye bread formulas for various seasons and holidays. We have not had commercial bread in our home since I started this hobby. I guess that makes me what is called "old school!" I’m 71, so I guess that's appropriate.
Thanks for the time you put in to make these videos. I have a small channel myself with videos of the most popular breads I make, so our children can follow my methods when they make bread in their homes, so I'm very aware of the time it takes to produce and edit them. 👍👍

Morning John, I am using this recipe of yours with a 30% wholemeal flour mix and must say it is a great bake. The fine line to keep is with your water percentage. It is a fine loaf that comes out of the oven. Thank you once again for your guidance. No more baked bricks in my house!

While I was watching this video I had a loaf proofing which coincidentally was the same recipe you are using. I baked mine in a bread cloche and it turned out excellent. I like using the cloche as it eliminates the need for the pan of water in the oven. Another great video John, every recipe of yours I have tried out has turned into another favourite with the family.

This loaf was delicious!! Chewy, crispy, light and loads of flavour. My family ate the whole loaf before it could get cold!
I use very strong Canadian flour (you can get this in Tesco in the UK) it has 14% protein and tends to make better bread than the usual 12.6% protein strong flour

Well John, I've been baking my own bread at home for years now. Mostly sourdough. When your loaf came out of the oven I could almost smell it. It made me think of my childhood back in the UK. A doorstep of farmhouse bread with a lump of farmhouse cheddar and a dollop of Branston pickle.
I'm off to bake a loaf right now. We can't get Branston here now after Brexit. If you have a recipe for a similar farmhouse pickle, please make a video for all of us Expats.

what flour is used in the uk, I live in America and as we know the food is killing us so im trying to be more self sufficient.
@@JA-iu8bo You need strong flour for bread like this - I am not sure how it would be labelled in the US, but check the protein content on the side of the bag, which should be between 12 and 14 per cent (or grams per 100 grams). All-purpose flour, akin to what is sold here in the UK as ‘plain flour’, usually contains between 10 and 12 per cent protein. If you can find white flour which is unbleached, so much the better.

John, what's your opinion of hand kneading versus machine kneading when it comes to the crumb and taste test? The crumb on that loaf seemed so consistant and fine. It would be interesting to see a side-by-side, like-for-like comparrison on a future video.
I much prefer hand kneading over machine, I think you get a better feel for the dough. But if you have problems with your hands machine is the next best thing. Thanks for watching my friend. @@JohnKirkwoodProFoodHomemade I also prefer hand kneading. I just turned 66. Had to give up hand kneading about 20 years ago for a machine because kneading dough hurt my finger joints. I've worked with my hands ever since I was 12 years old, with the last 30 years working a keyboard for my IT job. Odd thing is typing doesn't bother me but kneading bread dough does. Tried a Bosch mixer, ended up prefering a 6 at. Kitchen-Aid Stand Mixer.

Made this first one not good, proving problems so was not surprised, tried again after finding a defrost setting in main oven, perfect proving temp (my oven light is LED so no heat from it) Loaf turned out great, sliced it up in my meat slicer and froze half.Freezes very well and crust stays crusty. I used my mixer for kneading. Thank you John, despite being a retired cook, I am still learning from your tutorials👍👍👍 Oh and making my own Bread Flour as per your video.

They say you can't teach an old dog new tricks, but I learned one today: after the first rise I was being too gentle knocking back (punching down is what we call it here on East Coast of Canada) the dough. I was always concerned that I was over-handling it. Well, after watching you in action I changed my tactic. The loaf turned out spectacularly. Thanks again. Cheers.

Hay! I use a shower cap to cover my dough. One day I just decided that sence I dont use it for anything why not use it to cover rising bread dough. I was amazed at how well it worked. I bought more to cover dishes I refrigerated too. 👍😊👍

For folks struggling with bread making, I've found the freshness of your ingredients REALLY makes a huge difference. Years ago I baked 2 loaves a week for myself and my husband, and I had access to a health food store that would grind my just purchased grain to flour for me, as well as selling "fresh daily" yeast pellets. On bread-baking day, I'd buy my grain, have it ground to flour, buy my yeast, then go straight home and bake. My loaves would rise so high I had to remove the upper oven rack, and the interior of the loaves were so wonderfully soft, the crusts so crusty, we'd eat a half loaf within 20 minutes of them coming out of the oven, hahaha. So tip: buy flour in small amounts, same with yeast. Anything that's been in the fridge or cupboard for more than a few weeks is going to reduce the quality of your final product (eggs and butter included, if used). You can feel the difference when kneading, also super fresh ingredients will allow you to use less flour, giving you airier loafs.

Goodness me, this is a great recipe. I'm not bad at baking bread, but following this recipe has given me a wonderful sandwich loaf, and I used part of it to make my first ever rolls. I am testing the dried yeast and so far almost half that I bought from a major UK store seems lifeless. However the locally bought yeast goes berserk. One batch of dough I made was with a dubious yeast activity and after an hour there was no sign of movement. My wife won't let me throw anything away so we kept it and it did start to rise hours later.
I am a terrible cook but trying to improve. I followed your recipe for my first ever attempt at making my own bread and it came out amazingly (tastes great too which is an added bonus!)
