These were a hit with the family. I made 8 instead of 12, to use for larger pulled pork BBQ sandwiches. It worked at high altitude with no changes. I would probably add just a couple of tablespoons more water to make up for the altitude. But, honestly, coming out of the gate and not having to make huge changes just to make it work, is refreshing. I did an overnight rise, just because I was busy. Hubs said that improved the flavor. Thank you! We'll make these again.

I've just tried this recipe and they turned out exactly like in your video 🙂! I had to let them cook longer and also increased the heat (I think next time I'll start with 10 min at 170°, to let them swell nicely, then 15-20 min at 185°) but apart from that it all went fine! Well, I tried 3, the pizza, (my first self baked pizza) cheesecake (it turned out so fine, haven’t had a better one before) and the sandwich bread (I did it with spelled flour) and I will do one today, maybe the sub or the soft rolls) my oven will get hiccups😉 I just love to be self sufficient and save a lot of money! I got groceries yesterday and I didn’t get bread cause I wanted to do the sandwich bread! I live on the 5th floor and I’m on crutches and our lift is in repair, so I trust Jimmys recipes and my ability to turn his recipes into something good! Keep up the good work👍🏻✌🏻

As someone from east Germany this is very much appreciated. Because we never have yeast we'd use Cement, and as we'd never have flour we'd use sawdust instead!
Those look like something you’d find in Brazil. My second wife is Brazilian and she’s always taking small individual fresh bread and putting butter or catupiry on it and having it with coffee. She also calls you my new best friend because of all the recipes you inspire me to make.

made these on Saturday, came out lovely, as a test i put a third in the fridge and in the freezer, Sunday i think i didnt allow them to cool enough and they were slightly doughy but my fault as Saturday buns were super lovely, hard to resist warm bread

RSI in my shoulders doesnt let me hand knead and I'm currently in a different country to my Kenwood ( oh and without an oven but have an airfryer). I mix then fold and rest 2-3 times before first proofing. I use the same recipe for all breads and buns. Bread 20 minutes in airfryer at about 160°C. Buns 10 minutes in frying pan on low heat with another frying pan for a lid then the final 5 minutes in airfryer.

I made these today. Yet another of John's recipes that has gone on to my "Make this again..." list. Very easy to make. Being quite low hydration, the dough is easy to handle, and not sticky. They came out beautifully. Soft, light and tasty! They made for a perfect bacon roll! 😋

Mate of mine used to make and sell them at his bakery Ryton/Blaydon area as Mini Stotties This was the bread shape that Greggs used to use for their sandwiches in days before going nationwide, they also used to sell this bread over the counter, now I believe they no longer make any bread for retail sale, this is why I say they are no longer a bakery, everything is now factory production line produce

Just tried these rolls and they are really good. Mine didn't rise as high as yours, but that was because I substituted 200 grams of whole wheat and 300 grams of bread flour. But the taste was amazing!

I've made these several times now. Apparently the first several times I made them i was reading the recipe with my southern (US) goggles on so I read 15gm of butter as 115gm of butter. I was genuinely perplexed why my dough was weighing around 100 grams more than it should. Both were excellent, but i think i prefer the higher butter content version. Thanks for the recipe! We've been eating them for breakfast with preserves.

I took 2 yard-sticks, cut in half, then glue 2 short pieces together. This makes for about 1/2 inch thickness when the edges of your pin are spaced to the sides of the pin and your dough in the middle.
For those who don't weigh and are in the USA: 15 grams of butter is 1 tbspn. 18 oz bread flour is equal to about 4-1/4 cups. (1 cup= 4.25 oz). 155 mls liquid is about 3/4 C. or 5-1/4 oz.

Well, I tried 3, the pizza, (my first self baked pizza) cheesecake (it turned out so fine, haven’t had a better one before) and the sandwich bread (I did it with spelled flour) and I will do one today, maybe the sub or the soft rolls) my oven will get hiccups😉 I just love to be self sufficient and save a lot of money! I got groceries yesterday and I didn’t get bread cause I wanted to do the sandwich bread!
I live on the 5th floor and I’m on crutches and our lift is in repair, so I trust Jimmys recipes and my ability to turn his recipes into something good!

As someone from east Germany this is very much appreciated. Because we never have yeast we'd use Cement, and as we'd never have flour we'd use sawdust instead!

Those look like something you’d find in Brazil. My second wife is Brazilian and she’s always taking small individual fresh bread and putting butter or catupiry on it and having it with coffee. She also calls you my new best friend because of all the recipes you inspire me to make.

I'm late to the game & I only had AP flour, but I just made these & they're so tasty. They baked up exactly as they did in the video. Can't wait to try them again with the proper flour.
made these on Saturday, came out lovely, as a test i put a third in the fridge and in the freezer, Sunday i think i didnt allow them to cool enough and they were slightly doughy but my fault as Saturday buns were super lovely, hard to resist warm bread

RSI in my shoulders doesnt let me hand knead and I'm currently in a different country to my Kenwood ( oh and without an oven but have an airfryer). I mix then fold and rest 2-3 times before first proofing. I use the same recipe for all breads and buns. Bread 20 minutes in airfryer at about 160°C. Buns 10 minutes in frying pan on low heat with another frying pan for a lid then the final 5 minutes in airfryer.

I made these on Aug 19th, also made the Cauliflower cheese dish, I added some fresh garlic and freshly picked green beans to the cauliflower mixture....we were super pleased with the results.Thank-you John. Awesome recipes.

We have a good Italian restaurant owned by Italians that use scrap pizza dough to make buns for the table. They serve them with spiced olive oil.
I made these today. Yet another of John's recipes that has gone on to my "Make this again..." list. Very easy to make. Being quite low hydration, the dough is easy to handle, and not sticky. They came out beautifully. Soft, light and tasty! They made for a perfect bacon roll! 😋

This was the bread shape that Greggs used to use for their sandwiches in days before going nationwide, they also used to sell this bread over the counter, now I believe they no longer make any bread for retail sale, this is why I say they are no longer a bakery, everything is now factory production line produce

Just tried these rolls and they are really good. Mine didn't rise as high as yours, but that was because I substituted 200 grams of whole wheat and 300 grams of bread flour. But the taste was amazing!

I've made these several times now. Apparently the first several times I made them i was reading the recipe with my southern (US) goggles on so I read 15gm of butter as 115gm of butter. I was genuinely perplexed why my dough was weighing around 100 grams more than it should. Both were excellent, but i think i prefer the higher butter content version. Thanks for the recipe! We've been eating them for breakfast with preserves.

Hi, I'll be trying these, they look great and a perfect thickness for a sandwich. I'm a big fan of your sandwich loaf too as is the Mother in Law who looks forward to a fresh baked loaf every visit. Totally agree on the rolling pin, I bought one some time ago for making pies as I'm one of those who can't roll well and it makes rolling evenly practically foolproof.

I took 2 yard-sticks, cut in half, then glue 2 short pieces together. This makes for about 1/2 inch thickness when the edges of your pin are spaced to the sides of the pin and your dough in the middle.
For those who don't weigh and are in the USA: 15 grams of butter is 1 tbspn. 18 oz bread flour is equal to about 4-1/4 cups. (1 cup= 4.25 oz). 155 mls liquid is about 3/4 C. or 5-1/4 oz.
