Does he has a commis chef? or he is doing everyting alone in the kitchen? Do anyone have an advice where or how can I find a commis chef job place like this? Im just started my chef job I also work in kitchen on a little ship webhave way smaller kitchen and storage. But I still has to learn a lot and here where I work theres not much opportunity to get from A to B unfortunately.

For 60 meters The original owners along with designers and builder Aberking & Rasmussen build a vessel that utilizes every square inch beautifully. What a sick galley and the storage is phenomenal. Just a gorgeous yatch. Jared your videos are top notch. Dude the views your getting , charts tips and regular salary .. Your a Baller 2019.

Very VERY nice well organized kit! I love it! You can tell you have the passion we have for cooking on the go. I ran my galley onboard the 777 as a flight Attendant this way. A well organized kit makes it all come together… I am happy for you and your staff for being successful doing what you love ….. keep going and enjoy life ..

On a boat I worked onboard the chef would have to work all day and sleep whenever they could, he even got woken up to make a Nutella sandwich at 4am...

I have often wondered about staff for the galley when the owner decides to throw a big party for example. Does the chef have some other chef friends on-call to assist when needed, and if so, where do they come from? How often (if at all) does that happen?
ding020468 it depends on the size of the party really for a dinner party of a group upto 12 one chef could perform the task however anything bigger or massive parties with canapés then a catering company is usually called and the chef oversees everything

Haven’t watched your videos in a while but from the intro I could tell the quality looks even better. Maybe you could show a video of him preparing a full meal or do something like “a day in the life of a super yacht chef” that would be a catchy title.

Another of your wonderful and informative videos. I never imagined how much food and storage space one yacht would have to have for a 12 or more day charter. That's simply amazing! Thanks for that tour, Dean with your interviewer cameraman, Jared. I'll be looking forward to more from the kitchen in future videos. Maybe sometime Dean can talk a bit about how he became a chef on a yacht, what training he had both in cooking and in sailing certifications. He's a very likeable, practical guy and your crew is no doubt very fortunate to have him as your chef.
I use my paco jet to help with herbs. You can pack the Beaker super tight with herbs when they are fresh. Put enough water over the top to cover the herbs. Freeze the beaker. Then shave off some when I need it. It will have a little water with it. I can get rid of that quick enough through cooking or letting the ice melt. PLUS the herbs have their natural color and flavor long after they would have spoiled!

Great Vid, that's the best equipped galley in terms of the number and variety of fridges & freezers along with full sized walkin cold room and walkin freezer I have every seen or heard of on a yacht of its size. Impressive in all its details. Obviously, the catering is taken very serious by management and cuisine second to none in the industry I suspect.
What a beautiful pantry. You look ready to make any culinary delight but, you'll always have that one drunk guest who asks for a grilled cheese sandwich.
He's a good chef because he cares about having everything on board to cook with he's looking out for the guests and crew so that's a good sign of a good chef he got my vote and I wants know do you guys catch the seafood you have on board or get it at the market

I'm so excited to see a demonstration better than just a 3 minute video. Just told my husband our next kitchen will have one, as well as a 1 minute dishwasher lol!
Once again, a great and informative video. When the yacht has a full-house charter, how many people including crew need to be fed. When I was at sea with the Navy we patrolled the Southern Ocean and resupplied bases in Antarctica and we got extra arduous conditions rations. The midnight meal was the best so on a crossing to the Caribbean I would imagine the Middle Watch (0000 to 0400) gets fed.
Wow! The chef must cook a lot of Indian cuisine. I saw curry powder, cumin, star anise, turmeric, cardamom, garam masala, ginger powder, and chili powder. Not saying that Indian food is the only cuisine that uses that - but those are all the primary building blocks of Indian food.
Damn. I’m planning to acquire a super yacht and saw that you can buy a decent pre-owned 50 meter boat for around $20 mill, BUT the galleys are a bit small on most of them. The galley, stores and cold areas on this one are really great which means I now have to think about a 60 meter boat. Yes, you guessed it. I’m not a professional mixologist but I am obsessed with old school classic French and Italian cuisine and cooking so I need a proper kitchen! No two ways about it. I spend a lot of time in France and you’d be amazed to hear about the amount of basic stuff you can’t find here. I’m currently having a big fight with United Biscuits (who seem to be asleep) because I cannot find Jacobs Cream Crackers. Digestive Biscuits have also disappeared (for my Cheesecake bases!). Very annoying! Bloody Worcester sauce is another thing I can’t find and the supermarkets try to sell me some cheap knock off version. Sorry NO! I want the proper kit if you don’t mind!!! I read that there are little companies dotted around the globe which supply everything yachts need for food prep and they charge the earth for their services. Being a professional chef I guess that you have your classic go to brands for everything SO how do you source exactly what you want brand wise? In some respects the lack of supply of some things, like proper Beef Suet for making Christmas Mince Pies and for some puddings, eg Sussex Pond, isn’t too much of a problem. I just make my own, which is better anyway! I’d be interested to hear how you source the things you want. I enjoyed the video. Thank you!
You may have done a video on it already but who is in charge of the boat/crew and do the owners give some form of allowance to be able to go and purchase ingredients and equipment. The galley makes me envious it’s bigger than the kitchen I work in in a pub
Great video. Huge kitchen and storage facilities. When he shops for a charter for all possible guests requests are they charged for the food they don’t eat that was purchased? How is the costs tracked from what the guests consume?
The chef onboard the PSV I work on would be very jealous of that galley. While ours is a bit bigger in size, the Arience galley is much prettier and it is also stocks more varied food than we do.

They can ask for it at anytime. Its rare, usually meal times are discussed but a mighdnight toasty has certainly come up.
