Looks and smells phenomenal from Oklahoma to Southeast Texas! Would you apply the method with chicken thighs? I would love to see a video from you on competition thighs! Respectfully, Jim Mathis
I'm curious if this would also be an effective method for wings, or would they not get enough smoke with so much time being covered? I realize the timing may need some adjustment. I may give it a shot to see what happens!
Awesome...i do kinda the same technique..i pull the skin back and put a rub on it pull the skin back over..i use ckicken broth instead of water for brine, marinate for 24hrs..put chicken in pan same way you do with butter..it gets weird here.. cover chicken completely in pan again with new broth and braise..about the same time line and temp. Take out put chicken on racks with pan like you do..cover chicken out side with rub..back on smoker for a few get the color..take out..sauce, back on for 10min...done. Same results freakn awesome bite threw skin and juicy. I apologize i haven't used ur rubs, sauce or chicken brine on this particular recipe, but i definitely will, sounds amazing, and using the same technique i do with the chicken broth. Im dying to try that bbq sauce for the chicken..keep rocking!!
Chicken soak and beer can chicken ,,, I’ll be ordering them directly, thank you sir, I ❤️ all the brines ,injections and rubs I’ve ordered , you the man!
I’m not a professional like you but I guarantee I can make some of the most tender and juicy chicken. It’s simple, get or raise yourself some pasture raised chickens that are moved every day on fresh grass where they can eat fresh grass and bugs like chickens are supposed to eat. You do that and you won’t have to try so hard to make that crap from the grocery store edible. I never thought there would be as much of a difference but there is.
Good chicken is easy to cook. Perfect chicken is frustratingly difficult. Until you've taken first in chicken - sadly, I suck, so I have not - you just don't know.
Excellent technique yields excellent results.
