Edit to add those turkey grabber claws are also good for any large meat. Pot roast, pork sholder etc. We have brined many a turkey. Never had enough fridge space so we VERY meticulously monitored the brine in a cooler. This method does require a good cooler, lots of ice and a good thermometer.
