This past Thanksgiving I followed your turkey brine recipe and your recipe on how to cook the turkey. I just wanted to let you know that it turned out amazing. It was very tasty and moist. I even used the turkey carcass to make turkey stock. I used that to make turkey noodle soup (based off of your chicken noodle soup recipe) a couple days later with the leftover turkey. Thanks for all the wonderful videos. You have really helped me kick my kitchen skills up another level.
One tip for if your fridge is packed and there's no room for the turkey is to brine it in a cooler. Get a styrofoam one so you don't have to worry about washing it. Just fill it with ice after the brine and turkey go in, and set it somewhere out of the way while you get everything else done. It's what we've done for years and it works like a charm!
My sous chef does not recommend using ice. It sucks having a big turkey hogging everything up. I never thought styrofoam would work! It works for medicines that some people inject sometimes.
Did he say why? We brine pork loin at my job and we always leave some ice in it before we put it in the cooler. Never seemed to hurt it before. I'm too paranoid about giving someone food poisoning to risk no ice at all.

Thank you preppy guy for giving us the ratio, you actually told us how much water. This is the 4th brine recipe, and your the first one to state how much water... so you actually gave us a ratio, thank you preppy dog!!
It wasn't enough water. I used that recipe for my turkey and the turkey and the gravy were salty. More water was needed. I am disappointed. I trusted John because I have used his recipes before and they were always excellent. This recipe was not excellent.

I put my Thanksgiving bird in a brine for 24 hours before smoking it this year. It is a WORLD of difference. It was juicy and SO flavorful. I will always brine from now on.
Any smoking tips after the brine? rub? time etc?
@garygoodwin3461 I put some rub in the brine. Smoked the bird in a pan for 6 hours at 220F.
Brining is the way to go! I've used Rachael Ray's turkey brine recipe for years. I bought a brine bucket with lid from Amazon and I don't have to worry about spilling the brine.

Thank you for mentioning how to include kids in the process. My little one loves to help but it can be too much to have her around the kitchen. Having the kids help with the cup measurements and hanging them count is a really good idea.

I've been brining for years. Game changer! I haven't tried orange peel though. For cook time I put a bundle of celery sticks and leaves into the cavity. It adds flavour to the broth for gravy. I make dressing separate and pour some broth in.

Been brining turkeys since I saw Alton Brown’s show on it on Good Eats 20 years ago. Then cook them on the grill. The drippings make the best gravy.

I brine my turkey every year. I do cut the salt in half though and simmer all my spices together. I also add sage and celery seed. Never used brown sugar though. I will have to try that.
The sugar balances out the salt, so the bird doesn't taste as salty. Works great with pork too! Makes great pork chops!

Tip to get the skin off garlic, separate the cloves and put in a bowl and cover with another bowl and shake vigorously.
Cloves are so strong! Mom used cloves in pumpkin bread a week ago! I ate a slice of it. Oh my god I was taking my night walk & I smelled it all over myself! I was like I know I showered!

I always brine turkey’s and use the Wolfgang Puck recipe, which is delicious, but this is simpler, so I’m going to try John’s recipe this Thanksgiving instead. Brining is the way to go for sure.

@@joanyou6254 It turned out O.K. I thought it would make a big difference in the taste and moisture of the turkey. It did not make a huge difference from how I use to cook the turkey.
I used to marinate it the night before by putting chopped parsley, cloves of garlic and a chopped red onion in the cavity (salt and pepper before I stuffed it with the parsley mixture.. Also basting the bird with olive oil and leaving it in the fridge until the morning I would cook it. I like that method better. The turkey always turned out very moist. I don't think I will make a brine next time! I wanted to give it a try : )

I used Buttermilk and Pickle Juice Brine and it was juicy and delicious
I like getting cornish hens for special holiday meals. Nobody to share with means no reason to get a ginormous bird. I'll definitely be trying this brine recipe on my little birds! Thanks for the wonderful recipe/technique 😁
Also, a comment on the garlic: I do agree that fresh is always better than the weird stuff in the jar. But for everyday use, especially if you don't have the energy to do ALL the steps, I like garlic paste from the refrigerated section. Tastes a lot more like fresh garlic than other prepared versions imo, and all you do is squeeze it out and go to the next step.
You should do daily shorts on your thanksgiving prep for that day
You are awesome. I will definitely try this method this year. I did a similar brine and the apple cider put it over the top as the grandkids loved the Turkey. Then I made Turkey salad sandwiches the next day. Thank you for taking the time to do this very important video.
Thank you for saying that about the garlic. Never buy processed garlic. Anything that you can buy in its original form is best. I keep a small Ikea pestle and Mortar on my island and I will grind my spices as I use them. It makes all the difference.
Instead of to much water i add buttermilk and come out delicious (William Sonoma’s recipe for brine) i used for few years

Some people say to wash the turkey after the brine so it not to salty is this true. I never brine a turkey before and I am going to try it this year.
I always rinse mine off, and I've been brining my turkey for over 15 years. My 5 kids love my turkey. Sending you much thanksgiving love!
Also, after rinsing, pat it dry with paper towels, and make some space in the fridge for it to air dry for about 5 hours or more. You'll have a wonderful juicy turkey, with delicious crispy skin!

Yes just follow whatever recipe you prefer. It's often recommended to rinse the bird after brine to prevent it being extra salty. I usually don't bother rinsing and never had a problem

Hello! After brinning the turkey is should I skip the salt when buttering the turkey before roasting it?
I brine my turkey, after 24 hours I bone the turkey, marinate it it for 24 hours. Then make the dressing, pile it on the spread egalitarian turkey, truss it with twine and let that baby bake. Superb, then slice the turkey like a loaf of bread, google it, it’s easy and so so delicious. Then make a soup all the left over bits. I do this a couple of times a year not only thanksgiving. Many cheap delicious meals, sandwiches for lunch, quick stir fry, so easy to stretch a turkey year round.

I want to follow this recipe but with a spatchcock turkey. What temperature do you recommend? I'm finding anywhere from 350 to 450 for spathcock prepped turkey. So confused. Thanks.
Can we use dry thyme if we dont have fresh thyme? If so, about how many tablespoons/teaspoons?

hey. i just was trying to find a recipe for making homemade pickles, so i went to your channel and didnt find any. not sure why, maybe you never did that yet or maybe it doesnt fit into the kind of things you make, but just thought id write a message to let you know people like me look on your channel for how to make pickles at home. the reason i did was because you seem to provide accurate results and when making something for the first time, im sure other people also want to do things right the first time, so, itll be too late for me cause i have to find a recipe somewhere else to follow, but for other people it would be cool if you made a video for how to make pickles, so they can have great results their first try. thanks for your help with other recipies. hope you and the people close to you are doing well.

In my mind, the paper on the garlic don’t matter because it’ll just get cooked into the brine. It’s not gonna make one iota of difference.

I tried this Brine method for my turkey. I loved all the aroma of all the spices. The downside, for me, is that the turkey was very salty and it lost the taste of turkey meat. Although, to be fair, I think the turkey I bought was packaged in a salt brin solution. My attempt to brine it was redundant. The loss the turkey flavor of meat was disappointing.
Can’t wait to try- what large stock pot would you recommend? I think I need a 20qt for by 14lb turkey but I’m having trouble find a good 20qt stock pot.

Maybe cooking the ingredients will change age their flavor profile. Putting in fresh after boiling will maintain the fresh profile while still getting plenty of flavor because they’re still marinating overnight.

I would put butter on turkey to bake after the brine. I think he mentionned to pat dry the turkey (not rinse it) apply the butter mixture on the skin and under and roast it!
