Chocolate tempering and some of the other parts of her projects should totally fall in line with being a pastry chef. I'm always shocked by how little she knows and how much she cheats at confectionaries.

Being a pastry chef doesn't automatically qualify you to be a baker. Sure, you know a lot of the techniques, but bread and pastries are quite different and both fields are very broad. It's like being a chef and a butcher - just because you know how to cook meat, doesn't mean you know how to butcher a pig. While both have overlaps, they require both quite distinct knowledge.

things don't need to cost more, people already have a hard enough time affording to eat (and live). a) a lot of these things are automated these days and don't take the amount of labour this video shows. mass production exists and it is everywhere. and b) it's the companies and ceos taking more profit than they need to line their pockets while the manual workers make next to minimum wage.

Einar Once you get it going l am sure it is worth it. It's a living creature on it's own. You basically have to treat it like a pet. Many fermented products need to babied! Cheese, wine and so on and so forth

It’s the curse of the kitchen. Frequent washing of the hands can dry them out. When I was a line cook, mine would crack like glass. Hand lotion is a friend.

Einar Once you get it going l am sure it is worth it. It's a living creature on it's own. You basically have to treat it like a pet. Many fermented products need to babied! Cheese, wine and so on and so forth
Just out of curiosity: Where do you live and how much does a bread of this kind cost you?
There are much easier regular white bread recipes online, I made one in about an hour and a half including rise time that was awesome, I don’t love sourdough enough to bother with all of this
