    The chiblu idli dates back to an era when modern kitchen conveniences of utensils weren’t easily available in villages, and so people would fashion cooking vessels out of resources handy. In the absence of present day idli steamers, village folk would steam idlis in baskets, known as ‘chiblus’ in kannada, made of bamboo, over a wood fire. And thus, these soft, aromatic chiblu idlis came into being. The painstaking effort required to steam idlis using this old-fashioned approach has caused this ancient practice to all but disappear. We travel 80 kilometres to Halaguru to savour this delicious tradition at Babu Hotel, a tiny village eatery that has been serving up the chiblu idli for over half a century now.     Chiblu Idli
    The chiblu idli is aromatic and steaming hot, served with a dollop of butter and alongside palya and red chilli chutney. The idli is soft, porous and carries a tart edge from the fermentation, that the butter helps balance against. The kempu chutney has a good balance of spice, and the crunch of the coconut complements the grainy bite of the hurigadale (roasted gram). The palya is savoury with the flavour of the onions.

    The dose is crisp to the touch and fried to an appealing golden brown. Makes for a simple but satisfying tiffin with the palya and chutney. The masala dose is similar but stuffed with palya and larger in size, with twice the amount of butter.

    I've never tried idli,but i tested dosa in my country's city.Actually, I'm from Bangladesh.About Karnataka,at first come in my mind - Royal challengers Bengaluru,Dr.Devi shetty,Narayana Hospital,kiccha sudip,Yash (KGF star)..& now follow food lover.. I've no any idea about Kannada language..

      @Nihaar Trivedi As its preparation method are going through Fermentation process,it has health benefits ovbiously..I'm a student of Food and Nutritional Scence..During my study period,i had learnt about idli also..Although idlis are not as popular as dosa in our country.and its not so common in our country's restaurant or as street food.. A few restaurants in our capital city Dhaka has these preparation method and prepared as regular basis. So,i decided to test it nearly time..thank you sir...

    Sir you once visit Renukanna Idly hotel coronation road at Tipturu. I bet your quest for idly will end here. They serve tatte idly chutney with butter. Annavaru liked these idlies very much.

      Donno what makes ppl think anglicised, unoriginal pronunciations are cool!

    There are many such small hotels in karnataka which serve delicious meals in such small hotel setup and that too some in between gorgeous farms. U cant make out from the look of that hotel that u will get such awesome mouth watering meals in it. Karnataka needs a means to be explored for tourism.

    It's great to go to these hidden gems. If this was ITALY they would be exporting the dosae mix for 200 INR per kg and when someone else tries to make this. Say this can be only made with this rural rice and wood fire frona specific local wood, on a tawa that is atleast 10 years old. Then sell all these articles at a premium in outer markets. We as INDIANS should value what we have and generate a perception that helps our food industry.

    I love watching ur videos. Not only food we love, but also new hotels, new places, new climate which are really nice. The good thing about your video is that not so famous and big restaurants are shot. But all small small homely restaurants. And lot of beautiful villages, which we hardly get to see.     Shivanna has been visiting this hotel from past many years. There is a hotel just across the road in front of Babu’s hotel. People call it “Poli hotel”. Babu and the owner of Poli hotel are first cousins. Babu just broke away from the original guy and started this hotel across the road. Many film stars have earlier visited Poli hotel.
    I know this because I have been visiting Poli hotel from past 15 years or so.

      Chitranna is different from puliyogare/pulihara.. Chitranna has lemon for the tangy flavour and the puliyogare has tamarind.. Both dishes taste different.

    Almost 13 years ago I visited Bangalore and Mysore and the most memorable thing about that trip was food and Kannada people. During that trip I realised that South Indian food that we eat in restaurants in Rajasthan are not even close to the authentic food served down south.
    If any local of Banglore is reading this comment plz recommend a nice place to have an Authentic Kannada food or any local dish. I might visit there in next few weeks and it'll really help a foodie person like me. Thanks.
