    This garlic shrimp lo mein easy recipe and quick, can be put together in 15 minutes. we often make it with egg noodles, but you can also use pasta or ramen noodles. The key to perfecting this recipe is to mince the garlic as fine as possible so the garlic bits can cling to the noodle strings.
    INGREDIENTS (Servings: 2 people)
    To Marinade the Shrimp
    227 g (8 oz) of shrimp
    1/3 tsp of salt
    1 tsp of cornstarch
    White pepper to taste (Amazon Link - geni.us/white-...)
    2 tsp of Chinese cooking wine (Amazon Link - geni.us/Shao-x...)
    To Complete the Noodles
    300 grams (10.6oz) of fresh egg noodles
    2-3 tbsp of pork lard to stir fry
    15 cloves of garlic finely minced
    1 tbsp of soy sauce (Amazon Link - geni.us/light-...)
    1 tbsp of dark soy sauce (Amazon Link - geni.us/dark-s...)
    1 tbsp of oyster sauce (Amazon Link - geni.us/premiu...)
    1 oz of garlic chives, cut into 2 inches long, optional
    A red chili, julienned, optional
    INSTRUCTIONS:
    Marinade the shrimp with salt, cornstarch, white pepper to taste, and some Chinese cooking wine. Set it aside.
    Boil the noodles until al dente, then drain and rinse the noodles under running water to stop the cooking process. In some of my other noodle recipes, I have suggested not to rinse the noodles; that is for Chow mein because you don’t want the excess water to ruin the wok hay flavor. This recipe is lo mein, so it is ok to rinse.
    Heat the wok until smoking hot. Add 1.5 tbsp of pork lard and the shrimp. Stir over high heat for a couple of minutes or until the shrimp changes color. Remove the shrimp from the wok.
    Add another tbsp of pork fat to the wok, along with half of the minced garlic. Stir over low heat until the garlic is slightly golden, then add the remaining garlic. This is called "金银蒜" in Chinese, which means golden and silver garlic. The deep-fried and raw garlic provides different tastes and aromas. Using a mix of them upgrades the flavor of this dish.
    Add the soy sauce, dark soy sauce, oyster sauce, and noodles. Optionally, toss in some garlic chives and julienned red chili. Mix until well combined.

    I've been using spaghetti instead of noodles for a while now, initially just to see what it was like as an alternative, but now because it's cheaper if you buy the store brand stuff, and I can't tell the difference once the sauce has been cooked in. It was reassuring to hear you suggest doing the same!

    Some supermarkets have dried Asian egg noodles. I use those. They take a bit longer to cook than fresh, but are just as good.

    Looks delicious! It's interesting that chow mein translates to stir fried noodles because the chow mein we've been getting for years in the US never comes with any noodles.

    In the USA, Pork Fat is often called 'Lard.' You can buy tubs of it in many grocery stores. I think you can get it in 16-oz containers to 5-gallon buckets at w-mart/sams club.

      Sorry, I deleted that video. Based on my experience, no matter if you season the wok or not, it doesn't affect the non-sticky ability. What matters is to use it correctly, which are 2 things. First: make sure you pre-heat the wok before cooking. Second: maintain the wok daily (wash, dry and oil the surface).

    I like shrimp and I like Lo Mein. Perfect dish! The garlic seems a bit tricky to me, because it burns very quickly when it is chopped so small. I have to keep that in mind when I cook this.

    I will use sunflower seeds oil. I usually add 200 GM of chicken breast strips plus prawns to the noodles . Your more garlic looks better, I will increase garlic to my mein.

    Mandy, I'm not sure exactly how to search for this, so I'm hoping you can help at least give me something I can do to further my search. For years, I had a dish at a restaurant that had a more traditional Chinese cuisine "special menu". It was used heavily when large families of Chinese were dining in, so I am hopeful that this is a real dish. On that menu, I found a favorite that I ate almost every time I went (any many of my work days, as I was less than a 2 minute drive from their location)...but I have no idea how to find a recipe for it.
    On the menu, the recipe had two names: In English, "Stir Fry Shredded Pork with Pickled Tuber Mustard Roots". In Chinese, it was 榨菜肉絲 (I had to use Google Translate to help write out those characters, but I've analyzed them closely, and they should be exactly what was written on the menu).
    Any chance you have made this dish on the channel, or could point me to a resource that might have the recipe? I sadly don't speak Chinese -- I sadly waited too late into life to have success in picking up the complexities of the written language. I just learned tonight that they permanently closed down some time ago. Further, I've seen the dish nowhere else (I've tried a variety of English written names that I hoped were the same, but to no avail).
