When I lived in Germany 48 years ago, my mother-in-law introduced me to Kartoffelpuffer. After frying them, she would sprinkle sugar or put some applesauce on top. I did not like that combination so she was surprised when instead, I would eat mine with salt, pepper, and ketchup 😮 LOL 😆. She passed away a long time ago. Seeing this video brought fond memories of her; a nice and jolly, down-to-earth, simple dear lady. ❤️
I also never liked the fatty+fried and desert-sweet combination. Kartoffelpuffer with applesauce or Kaiserschmarrn (leftover pancakes cut up and fried again) with vanilla sauce always macd me sick in the stomach. One thing i absolutely love are Käseröstis. Grate potatoes like you would pizza cheese. Do the same with a lesser amount of cheese ( ~1/3 of the potatoes), add a few oats, 1-2 eggs, pepper and salt. Fry like Kartoffelpuffef until crunchy. We ate it with Kräuterquark or with our speciality, Kräuterquark with a little bag of instant salad dressing in it. The latter one doesn't agree with many other people, because they can't get used to Kräuterquark in sour, but i love it. Haven't ever tried them with something like Ketchup.

How about trying them with something like hot, roasted jalapeño peppers and roasted tomatoes salsa 😨. My aunt (RIP) Made these & I looked all over for a recipe that didn't use left over mashed potatoes. Thx, don't know if my arthritis will allow that much grating🌞but I want..looks yumyum
my oma made the best she did it differently than the video ofc first she Finely grate 12 potatoes all by hand and me and my 4 little sisters helped her she would strain the potatoes and then add 4 eggs along with the starch and since she knew i loved Garlic would always make a separate batch with garlic and papkria in the mix though i loved them either version then in an old school well seasoned cast iron 20 inch pan she get usually Canola Oil or Olive Oil mixed with a smidge of butter and she make them in little panckes of joy fried to perfection with little bits and parts on the edge being crispy the middle soft and fluffy and a beautiful mix of Golden brown and a little more burnt on the outside but so chewy it reminded me of Airheads she never bothered with Applesauce or Sugar the only sweet thing she would usually put on hers and my little sisters was Cinnamon. God i miss her so much

My mom made these ONCE when I was in 7th grade. I guess since it was so labor intensive (large family) and scarfed down so fast, she never made them again. I begged every year for my birthday, offered to do the grating/mixing… but she never did. Once she tried to trick me by making them from a powdered box mix. Those were utterly disgusting. I will be making these very soon!
Making Kartoffelpuffer or hash browns is a right palaver, but with some organisation in the kitchen it can go moderately easily. First peel potatoes and plunge them in cold water to prevent discolouration. Get a large bowl half full with cold water and place the box shredder in it. Now shred the potatoes directly into the water. Drain the shredded potato through a sieve or strainer. I use a conical stainless steel strainer so that I can press down on the potato shreds with a heavy spoon to remove as much water as possible. You'll be surprised at how much water keeps trickling out as you press down with the spoon. (Someone should invent a potato shred press!) Now the shreds are ready for frying. Add salt and pepper as required. I don't add either egg or flour.
We Persian have same thing but we add ground beef or any meat and no eggs ! It is a completely food ( vegetable is onion and meat is protein and potatoes are carbs ) we eat it with flat bread and some kind of pickling 😋

We use a toast rack on a sheet pan to drain our potato cakes, then put the drained cakes on another sheet pan to keep warm in the oven. For topping we like to use mixed frozen fruits to make the sauce, as the out of season apples are rather disappointing. Often make these as the bun for burgers using ring moulds to shape them for those that have issues with wheat burger buns.

I was surprised that the cook added the starch back in. Normally one wants to remove the starch when frying potatoes e.g. for fries or chips. And I'm not sold on the idea of mixing the finely shredded potato with the coarsely shredded. I only use the coarse side of my box grater. However, I do this for hash browns, which are similar to Kartoffelpuffer.
I am German and I have a recommendation for you: Forget the apple sauce. Just use plain Sriracha or Sweet Chili Sauce! Spicy potato pancakes taste much better than sweet potato pancakes!
