Thanks a lot for showing the world that Germany is a lot more than just schnitzel, sausage, cabbage and raw meat. I love these little smokers close to the ocean where you can buy a fish role directly from the boat or a booth in front. Freshly made with some red onions.
Oh Marta!!! You make me so hungry with the food you show and very homesick for Northern Germany. During my time in Germany I lived in Detmold (NRW), Hamburg and Essen. I had friends in Schleswig-Holstein and spent much time with them. They also took me to Kiel and Lubeck. All of those wonderful fish dishes you showed in this video look absolutely wonderful. Thank you very much!!!
The saurfleisch dish is something I have made several times. I use the same marinade for sauerbraten, but I add in whole allspice during the prep. For the cut of meat, pork butt is the best for this. I let it sit in the fridge starting Sunday night, and will start cooking it the following Saturday morning. A Dutch oven is good for this, but a crockpot works just as well. For the crockpot though, I would add a pint of a Dunkel. The malts and fats compliment each other.

My ancestors on fathers side were from Erfurt, and I would love to see you trying food there, like Thuringer Rostbratwurst, Thuringer Klosse, Schmollner Mutzbraten, Biersuppe and especially Schmandkuchen.
Nice to see you back ,the area looks very Scenic.All looks delicious, Britiish Beer Battered fish and chips pretty common here .The area all looks charming! When I was kid my brother use to ice fish for perch on Lake St Clair.Use to prepare it similar. And that was one big Timbit. 😉(Tim Hortons doughnuts )

See Seeãll MIT senfsõse, läbskaus oh dear I wish I was a little boy living with my Oma und Opa again Marta. I had forgotten that pineapple limonade until you mentioned it. Was that remoulade Tartar sauce, my Oma made something that I now think was that. Another great trip into my childhood Marta, thankyou
I love all fish. My father's mother's family were all fishermen. I grew up eating all sorts of seafood. Everything you spoke about looked so good. I would like to try the Sauerfleisch. It looked interesting but with the world the way it is I don't suppose I will be getting to Germany any time soon. Thanks for this interesting video.

I love the tea 'ceremony' and will give that a try, if possible. Anjola would be a must try, too. I am not much of a fish eater, but all the dishes looked very tasty and healthy. I found the fish in mustard sauce the most appealing, but probably would get the Sauerfleisch (sour flesh) because I absolutely love meat in sugar/vinegar.

My guess is the beer batter for that backfisch isn't anything special (just some baking soda, salt & pepper added in, might have a touch of garlic powder and paprika). The trick is what happens after it is battered. It would be put in a freezer for about 15 to 20 minutes (outside frozen, inside not). Then it'd be double-deep-fried with a (minimum) 30,000btu, (better) 50,000btu burner. (That's how they do the same in Hawai'i.) The constant high heat of the powerful burner snap seals the batter so that only the exterior gets touched with oil, the fish cooks without drying out, and any rest of the batter is baked. It's the first freezing then snap sealing of the batter that makes it stick so well to the fish.
Yes, herring in Germany is served in two ways: marinated or from the pan. I feel that the marinated version is more popular because it usually doesn’t have any fish bones.
Your wonderful German foodie journey was very enjoyable. But, I do feel that the Star Wars sound effects and double-time editing were a disappointing distraction to your otherwise excellent presentation.

In part I have to agree. Any currywurst that has ketchup on it is Sh... I want mine grilled then simmered in a curry/tomato/paprika sauce. Only a touch of vinegar, celery and garlic powder, and no sugar.
