    Ah Maultaschen. I remember when we arrived in Germany one time, it was cold and very windy. We were in summer clothes, silly us, and had to wait outside the airport for Wolfgang's dad to come and get us. By the time we arrived home we were frozen but Ma had cooked Maultaschen soup. It was delicious. The kitchen smelt amazing when we walked in and the soup was wonderful. Maultaschen always warms my heart when I hear of it. Wish I could have some again. Also the other dishes looked great. It had me drooling. This and around Stuttgart are my favourite foods so you have covered my interests but that doesn't mean I didn't enjoy the northern dishes as that was very interesting to me since I have never been there. We were in Germany one time when the white asparagus was out. I love it with the hollandaise sauce and I know I would like it with the pancake but mine didn't have that. Keep up the good work. I look forward to your next video.

    Thank you for the tour :) So very enjoyable to see all of the beautiful surroundings, and maybe...a few delicious looking desserts too. As for possible destinations, perhaps Jever up north or Berlin, if they have any specialties.

    I LOVE your channel~ Thank you SO Much for such GREAT descriptions & reviews! I've been watching for awhile bc my Granddad was German & I decided to try & find some German recipes. All of the other YT channels were really boring, LOL. My Gramma was Irish, so I'm finding some Irish recipes, too. They had 10 kids. You can imagine how crazy their house was! My Dad grew up in Michigan, but after he & my Mom got married, they moved to California, where my brother & I were born. I got married here & we had four kids. Our oldest took German in high school bc of his Great-Grampa. They don't offer it anymore, but it was cool they still had it in 2019- early 2000's.

    Black Forest Cake … mmmmmm. Always remember a Sunday drive (which was regular) that I took in direction of Triberg from Lahr. Going through mountains seen this small roadside “cafe” so I stopped. Very nice elderly lady at counter, ordered big slice of cake with coffee - best I ever had.

    It must have a bunch of work for preparing dishes and videos, also pretty hard.
    I like to watch your videos, also learn a lot of delicious dishes.
    I like those dishes; that dish of asparagus let me recall my memory, same as the dish what my mother prepared before, I’ll try it in the next time.
    Sometimes there’re sweet potatoes with different kinds: yellow, red and purple color; I would put some sweet potatoes, and would put a little ginger to cook sweet potatoes, may have another flavor and taste.

    Good morning Marta, for some reason I didn't get a notification until just now. I love Maultaschen, I didn't realise they were a blackforest speciality, we had them in a Hungarian restaurant in Detmold. Cured pork shoulder is lovely. I can't say I've ever had either of the liver dishes but we often had fried liver and onions. My mum used to do Ox tail with horseradish sauce that sounds the same. I've only ever had asparagus with melted butter but that looks lovely. Kalbsröchen sound like rouladen but with veal instead of beef. It all looks and sounds lovely.

    My Dad was German and so many of these dishes are familiar to me.I was an adult before I realised that asparagus also came in a green colour. I am literally salivating looking at the incredible dishes. Unfortunately I can no longer afford to eat them.

    Great video, as always. What made me a little bit astonished was the 'Schäuferle' which looked liked a smoked 'Kassler'. In Frankonia it is roasted/stewed.

    I'm biased as I lived in Schwarzwald but having been all over the country, I think the food is the best. You missed out on Leberspätzlesuppe or Leberknödel which is also Bavarian and Austrian but on most menus in Schwarzwald. It's a bit off-putting to Americans who hate liver but it's very warming in winter. Schwarzwaldforelle or trout is commonly found and very good. We also ate a lot of Flammkuchen which is Alsatian (over the border0 and was a way to test the heat of a brick woodfired oven. My friends there say "We took the best from France and Switzerland and made it our own." The influence is a good one!

    Very interesting video as usual, that looked really delicious, and I love that region already!
    I am very curious to know about Berlin's traditional foods, that would be older than the contemporary currywurst and kebabs which seem to have taken the lead in the typical foods category. I remember briefly visiting West Berlin in the mid-80s, and there was a sort of pub culture with traditional German, local specialty dishes, and we did dine in such a place, I vaguely remember a clear soup and meat dish (not the meatballs) that were said to be typical from Berlin, according to my guide. But it's a long time ago and not very clear, except that the atmosphere was cosy and the people super friendly and open, and I became fascinated with that city. Could you tell us more, even if some traditions are lost?

    Never a dull moment when I see another video from you I absolutely love them it keeps me connected to my heritage and culture I have a question I've been told that saurbraten used to be made with horse meat does anyone in Germany still eat it this way or is it just done with beef I love these videos so much my family and I watch after making a traditional German dish and pretend we are on vacation with you guys thank you so much for everything you do for us subscribers it means alot to many of us and if you ever come to America you and your family are always welcome in our home!

      According to your question yes, in some regions you can still find Sauerbraten from horse meat. The last time I had it it was in Rheinland, I haven’t found it in Franconia though

      @@cooking-the-world I live in the Pacific northwest of the United states and we eat many different types of German sausages but for more variety of meals we eat a lot of pork shoulder and fresh water trout fish always made in the traditional German cuisine and I am excited to try saurbraten with horse meat when my family and I come visit Germany tha k you for your responses and thank you for your wonderful channel!

    Yum, yum, not only because I lived in Göppingen for a while, but also where I lived in Unterfranken (for quite a while) is only a few km away, almost all the meals you showed were very close to how we did them. Btw, I know a Leberle recipe that uses kidneys for the sour. (Have to Google it, but I think that's where it originally came from.) 🤣 I don't make the kidney style, but liver is so unused here in the US, it's the cheapest meat you can buy. But, I love it, and eat it at least once every two weeks. Also Ochsenfleisch mit Meerrettichsoße is a top-top on my list. Just instead of lingonberry jam I like mine with canned Stachelbeeren. ( I like my Meerrettichsoße scharf also.)

      Yes, lingonberry jam is tart but can be very sweet, taking away from the savory taste of the dish. Canned stachelbeeren are more tart and less sweet. If your meerrettichsoße is scharf (spicy) the combination adds to the overall flavor palette. And, while I like potatoes cooked in broth, it almost sounds like they toned down the dish for tourists. Aka, less scharf with the meerrettichsoße , more umami (holy trinity in French cooking) with the potatoes.

    You always make me SOOOO HUNGRY!!!! All these looked delicious! Thanks for letting us see your very active, robust little boy! You might like this recipe for Kirschenplotzer (and I always serve it with Whipped Cream, how can you not?) :)
    5-6 stale buns or french baguette
    450ml milk (or cream, or half and half)
    250g good quality butter
    6 large eggs
    180g sugar
    2 teaspoons cinnamon
    pinch of clove powder
    Black Forest Kirsch Schnapps to taste
    1.5kg fresh sweet dark cherries
    Tear bread into small pieces, heat milk and pour over bread, letting bread swell slightly. In separate bowl, beat butter until frothy. Separate egg whites and yolks. Mix butter, egg yolks and sugar together, then add almonds, cinnamon, clove and Schnapps. Mix bread/milk into this. Beat egg whites until stiff meringue and fold into mixture. Add washed, whole, destemmed cherries into dough. Pour into well greased pan/pans and cook in preheated oven at 200C for 70 minutes.

    I'd love to see if any of the traditional Eastern German dishes have survived since the war. I'm presuming that they may be similar to Polish cuisine, but it would be interesting to find out.

      From what I know (and I have family in Silesia, Poland) the dishes are very different, but I will be glad to find out! The only dish I know that is the same is Häckerle;) thanks, time off is precious with a 4 month year old kid 😂

    Marta I lived in Germany for 7 years. In Augsburg, we would always get this small salad with every meal as a small side with meals. I cannot find a recipe for that. I think it was likely celery root. I'm afraid I lost my cookbook in my divorce. It had a refreshing tart flavor. It was never served as a full salad. Do you know this recipe?

    The Black Forest Cake has actually nothing to do with the Black Forest, except for its name. Its place of origin is controversial. According to a story of its origin, the cake comes from Bad Godesberg, today a part of Bonn, the former German capital city. According to another story of origin, it comes from Tübingen.
