    Sounds like herring, sardines, vinegar, potatoes, kale, local pastries, cabbage, apples, onions, dill, parsley, brown shrimp, sour cream, chives, braunschweiger, Sailor’s beef (beef, bacon, butter, marjoram, lemon, capers, etc.), green beans, eggs, flour (breads, etc.), milk, sausage, oats, pickles, lettuce, etc. are some pretty common foods up there. I’m noticing the vinegar-fish-salt trend, fish soups with herbs (the herb thing), the love of potatoes, using butter and cream for more filling foods/main courses/starches, some degree of a love of citrus fruits, red meats and local breads/pastries, as well as the apple thing (are berries and cherries popular in Northern Germany as well?).
    The biggest thing I am noticing is the prominence of fish and potatoes in the Northern German diet. 😊👍

    My family came from Oevenum, Nordfriesland, Schleswig-Holstein, Germany with Friesian ancestry and Stavanger, Norway; my husband's from Hebsack, Rems-Murr-Kreis, Baden-Württemberg, Germany and Schellenberg, Ravensburg, Baden-Württemberg, Germany. His grandfather attended gymnasium in Leipzig in the late 1800s. I hope to come back and visit Northern Germany.

    I've been to Schleswig-Holstein where I saw a lot of smoked fish ... everywhere--- restaurants, along the road, in town -- everywhere. I wish I had known at the time that my great-grandfather came from Fehmarn an island off the coast of Schleswig-Holstein. I hope to go back for a visit.

    Schleswig Holstein is normally considered Northern Germany...being the most Northern state. If you go by states, Niedersachsen and Mecklenburg Vorpommern (plus Hamburg and Bremen) are seen as North. If you go by culture or language, some other parts such as Westphalia could be counted,too.

    Oh that really looked delicious from start to finish. I love fish so this looks like heaven, but the Kassler in the meat dish is also the type of meat I prefer, so I guess I should definitely visit that region again one day! The fish soup looks so healthy and delicious! One of my favorite German specialties is Grie Soß and I have to confess that whenever I visited Frankfurt I'd order salmon and ask to replace whatever sauce with the green sauce. Can I be forgiven? Am I the only one who likes eating it with fish (and potatoes of course)?

    Those dishes are the food of my childhood in Hamburg, we ate fish for lunch a of of days. Mostly Bratfish and BratKartoffeln. (Excuse my spelling) but Oma also made many fish Salats. Herringsalat, Crabbensalat and even fleischsalat and it was all wonderful. The only thing I don't recognise or remember are the sherry Matjes. • @cooking-the-world
      @cooking-the-world  ปีที่แล้ว

      Oh well, the food I am talking about was developed in XVIII, XIX and XX century. At that time people were lucky if they had something to eat, whatever it was 😉 and for the moment there are almost 3% vegans and 10% vegetarians in our country. The most in Europe actually. And the number is growing rapidly every year. So I am curious where this is heading
