I'm glad you're back to regular Sunday uploads - I missed my Runaway fix! You both are so happy and upbeat (and I know it's not always, but it's usually) and it makes me happy to watch!
Your videos are a refreshing change of pace from most of what I watch. We used to can and freeze tomatoes and can pickles. Now we only freeze tomatoes, and give away excess as our gardens are much smaller. We live in west Tennessee, and I whine about the heat, will bask in the fall football weather the next 6 weeks then start whining about the cold. There are usually around 3 months of perfect weather every year, then a lot of complaining. I always feel guilty for wasting too much time during those weeks. There was a time when I liked all summer when I did water sports, but age and weight have ended that. We don't have enough wattage to run our central air, but do have a generator to run our camper AC, and the Collierville substation blew last evening due to age I suppose, so we just used our smaller power stations to keep light on and the refrigerator going. We didn't open any freezers and power was back on in a few hours. Everyone needs at least a couple small units, and or a generator.
About once a month, I buy a 24oz. pack of Wright's applewood bacon, cut it into small pieces and render it down to bacon bits for my eggs and mac & cheese, and drippings for my greens, beans and peas. 😋 And if I'm too lazy to make a corn fritter for my beans or peas, I just crunch some corn chips up in a sandwich bag and dump 'em in the bowl. 😋😋
Hey guys, a suggestion, living in the country is easier and more fun with animals, especially if they look after their self. Build a purple Martin box and next year plant some goards to make a few a few nesting goards. There are good sites on internet on how to get started, they feed themselves and eat a lot of skeeters and other aggravating biting bugs, for the cost of one Martin box. Looks like you have plenty of open space!
I love what you are doing and I know this is your first year. Jar (can) everything you can. You guys are off grid. Think worst case. A hell storm in the early spring destroys your solar panels. You really don't want to run your generator 24 X 7 just to keep you harvest from going bad. As long as you can keep your jars at a reasonable temp, they should last for years. We put our Pizza sauce up in 1/2 pint jars (1 cup) and hot water bath them. They can sit under the house, where it never gets above 70 degrees, for years. My grandparents kept Their jarred goods in the well house. It was a big well house just for the purpose. You guys have that nice stream that would keep a "well house" nice and cool all year long. Just another project!
Hey guys. You can now fry those tiny pieces and then take a piece of bread with syrup and squish over the fries and you have a real treat. So much fun watching the lard process. Dont forget to show us the end result. Have a great day.

I make all my own dog food also. I do use a bit of kibble too. Mine is made with chicken though. Carrots, cut string beans and brocoli makes up the rest. My Sabrina loves it.
I lived in east TN for a few years and grew the best garlic ever. I got it from the Mennonite farm down 411. They have a farm in Englewood and Delano. It's something you can grow during the winter and it keeps really well.
Hi guys. Just a note from the older generation. I grew up in Hungary and rendering pork fat was a way of life in our house. Next time do a separate batch leaving some meat in as well and when done and golden brown get a potato squasher and press the fat out and keep the meety part separate. It is absolutely yummy crunchy hot or cold. The name in Hungarian is "töpörtyü". Look it up on Google if you are intrrested. Hope you will like it. Just having my breakfast here Monday morning in Oz but now I want some pork fat🐷🐖😂😅. Good morning😊 Forgot to mention that is a great ingredient for sime scones (pogácsa) recipe. "Töpörtyűs pogácsa" recepe must be tried. Yumyum Great with beer.🍻🍺 cheers
I’m curious about why you add water. I also render mine over flame, I’ve never added water and I’ve never noticed any burning. I put the fat on and just let it simmer. I needs no attention and I go back hours later to filter, and pour into jars for storage. For a first garden on this new property, I think you should be very excited. Learn as you go.

I wanted to do the same, but did more digging thanks to your video detailing your issues with the state. I believe I have solved the problem legally, and wanted to run it by you to compare notes. If you have not,maybe this will help you. I live in Chattanooga. It am looking in Jamestown, Spencer, Pikeville, Cookeville, Dunlap, Sale Creek areas. I will be off grid with EcoFlow power and an atmospheric water generator combined with rainwater collection. Not doing a well at this time. Will need septic of course, but yeah. Love to visit if that's something you would be amenable to, I'm a big homebrewer and gardener as well. Going to try to start keeping bees again.😮😮

I chop my tomatoes add onion and garlic and can them then when I want salsa I just add chili's or spaghetti sauce just add Italian seasoning same with pizza sauce

I have a question that you guys could possibly answer better than most. I noticed you have a cat. I also know that you spent a lot of time on the road in your van, practically just living out of the van. How did your cat act when you were traveling. Most cats have a problem traveling in vehicles. Did your cat learn how to do this from doing it as a kitten. I'm figuring if you have to adapt a cat to vehicles, I would think it would be best to start with them at kittenhood. I would think a kitten would be more adaptable than a grown cat. I once had a grown cat who could travel just fine as long as he was in a kitty carrier. I made the mistake of thinking he was okay with it. So one day I decided to let him out. Once the van started to move, he freaked out and he crapped all over the place. In later needed trips like to the vet, as long as I kept him in the carrier, and placed him so he couldn't see out the windows, he was fine. No freaking out whatsoever.

I'm on the grid but I render in my turkey roaster. I put it on very low overnight. It works great. If I render in Oct/Nov, I do it over a fire.

if i'm not mistaken you can use your crockpot to render the fat. low and slow and no real worries about burning the lard

Question? Are you moving more to animal fats and meat for keto/ health reasons, or just because of what is available and more frugal?
