    Dry:
    1 1/2 cups of flour
    2 tbsp granulated sugar
    2 tsp baking powder
    1/2 tsp baking soda
    3/4 tsp salt (or less)
    -Wisk until combined
    Wet (in a separate bowl):
    1 cup of sourdough starter
    1/4 cup melted butter
    1 cup of milk
    2 large eggs
    Optional vanilla extract
    -Mix the wet ingredients
    -pour your wet into the dry
    (Its fine if its lumpy)
    And then your done 👍

    For extra fluffiness, I usually separate the egg yolks & whites, then whip the whites (using a mixer) to a meringue consistency, then incorporate. Small, extra step, but the cloud-like texture seems enhanced a bit when you bite into 'em 😋

      Also, let your batter rest in the fridge for at least 15 minutes. You'll be amazed at how airy it becomes!!

    Making this as of the moment but going to keep the batter in the fridge and cook it tomorrow morning. Waking up at 5am and doing everything from step 1 is not easy 😂. Never had sourdough pancakes. Hope my kids love it too❤

    I just cook the discard itself, it already has that pancake batter consistency
    I add chia seeds, pumpkin pie spice & lily’s chocolate chips, then I spread organic peanut butter and organic pure maple syrup! So good!

    Made this morning sprinkled a little brown sugar and cinnamon until it caramelizes then served with butter and maypole syrup! Wonderful treat! Thank you John for the recipe ❤

    I made this and even though i am ready to give up on my sourdough bread (ugh one disaster after another), i will keep my starter to just make these pancakes. My kids declared me 'the best cooker person' thanks to this recipe. kids and my ego is well-fed and satisfied. thank you!

    Please consider doing a video on seasoning a griddle or cast iron pan. I have only ever had pre seasoned pans but would love to know how to correctly season them should I have an accident where that seasoning goes

    I made these this morning with my discard. I did screw up something because I had to much on my counter. I put on of the dry ingredients (teaspoon of one) in with the wet. They still turned out great. I will make these again as a meal prep to freeze.

    I’m making these as I write this comment, it’s seriously that fluffy!! If my stove wasn’t terrible, they would’ve cooked evenly on the bottom, but dang they are so delicious! Amazing recipe 🙌😌🤩

      Did you add 1.5 cups of flour or 240 grams? Google says 1.5 cups of flour is only 180 grams!

    That is a neat mixing tool! I use a simple wire potato masher for mixing sticky batters like this and it works great too. Definitely doesnt look as lovely though lol.

    I make sourdough pancakes often and they are so superior to regular pancakes! My recipe is nearly the same except for no sugar since it will be plenty sweet with maple syrup, and less baking powder/baking soda. Delicious! Oh, and I also let the batter sit for about a half hour.

    Ooo, I love fluffy pancakes. My mom made pancakes on Sunday mornings and her's were so fluffy and yummy. I agree about the 85%/15% analogy. Regulating the heat is very difficult. Maybe you should call the recipe "Agnes' Fluffy Pancakes" (after Agnes from Despicable me) because they are awesomely very fluffy! 😁 Thank you! Now I have to watch your starter video.

    Try beating the whites separately, gently fold them in and then let the batter rest in the fridge about 15 or 20 minutes. Super airy and light!!

    Was gonna ask about that neat stirring utensil. Looks like you could use it skim pasta from the pot of boiling liquid. You definitely wouldn't want to add more butter to the pancakes 🥞

    I'm sure these pancakes taste well but I like to make sourdough fermented pancakes. I feed my starter and let it ferment. The next day I take the same amount of sourdough as I fed it and add buttermilk and flour to it. I let it ferment overnight. The following day I add the remaining ingredients and make my pancakes.

    Add pumpkin to the batter with cinnamon and nutmeg. For diabetes you could use almond flour.

    Does the batter that has the added sourdough starter in it that he made here need to sit for 8 hours in order to have the sour starter rise to get the fluffy pancakes?

    I've noticed you never use clarified butter. I always use clarified butter for cooking things like pancakes, fried, and scrambled eggs. You get nice crispy results without burning what you are cooking in it.

      If you have pressure cooker, you can put a can of condensed milk in the pot, add water 3/4 the can, then press pressure cooking for about 45 minutes. Then you can have duche de leche. It may need more time up to how dark you want. Give it a try and see how you go.

    I've been looking for an easy method of mixing stuff into my pancakes. I like banana and toasted pecans, but you can't really use the blueberry method of putting them into the batter after pouring some onto the griddle. It's always tricky to get the consistency right. They're either WAY too thick or WAY too thin. When I do get it in the butter zone, they separate in the middle, almost like a pita.

    1.5 cups AP flour is 240gr? In previous videos, and my own experiments, 1 cup is 120gr. So, 1.5 would be 180gr. 240gr is 2 cups. So, do I use 180gr (1.5 cp) or 240gr (2 cp)?

      I would go with 240g because that's what he measures in the video. I don't think he would say "240" and proceed to measure out 180g..

      If your flour is sifted it will weigh less. If it’s packed it will weigh more. Going by the weight is more precise.

    I had to substitute whole milk yogurt for milk and egg because I had none of those. Turns out sourdough discard is very filling!
