For extra fluffiness, I usually separate the egg yolks & whites, then whip the whites (using a mixer) to a meringue consistency, then incorporate. Small, extra step, but the cloud-like texture seems enhanced a bit when you bite into 'em 😋
Made this morning sprinkled a little brown sugar and cinnamon until it caramelizes then served with butter and maypole syrup! Wonderful treat! Thank you John for the recipe ❤
I just cook the discard itself, it already has that pancake batter consistency I add chia seeds, pumpkin pie spice & lily’s chocolate chips, then I spread organic peanut butter and organic pure maple syrup! So good!
I made this recipe. My husband's didn't know they were made with sourdough discard. He was surprised and excited because they were delicious. Thank you for the recipe. ❤
Dry: 1 1/2 cups of flour 2 tbsp granulated sugar 2 tsp baking powder 1/2 tsp baking soda 3/4 tsp salt (or less) -Wisk until combined Wet (in a separate bowl): 1 cup of sourdough starter 1/4 cup melted butter 1 cup of milk 2 large eggs Optional vanilla extract -Mix the wet ingredients -pour your wet into the dry (Its fine if its lumpy) And then your done 👍
I made these for the second time, just shared this video on my FB as friends are asking for recipes; Gonna buy your book , I just love cooking your recipes and my family loves everything I make from your YT channel.. Thank you 😊 so much! ❤❤❤
I made this and even though i am ready to give up on my sourdough bread (ugh one disaster after another), i will keep my starter to just make these pancakes. My kids declared me 'the best cooker person' thanks to this recipe. kids and my ego is well-fed and satisfied. thank you!
I just started my sourdough journey and all my breads come out so flat and gummy idk what I’m doing wrong I’m ready to give up too but imma try these pancakes with all the discard I have.
That is a neat mixing tool! I use a simple wire potato masher for mixing sticky batters like this and it works great too. Definitely doesnt look as lovely though lol.
I made these this morning with my discard. I did screw up something because I had to much on my counter. I put on of the dry ingredients (teaspoon of one) in with the wet. They still turned out great. I will make these again as a meal prep to freeze.
I'm sure these pancakes taste well but I like to make sourdough fermented pancakes. I feed my starter and let it ferment. The next day I take the same amount of sourdough as I fed it and add buttermilk and flour to it. I let it ferment overnight. The following day I add the remaining ingredients and make my pancakes.
I’m making these as I write this comment, it’s seriously that fluffy!! If my stove wasn’t terrible, they would’ve cooked evenly on the bottom, but dang they are so delicious! Amazing recipe 🙌😌🤩
I make sourdough pancakes often and they are so superior to regular pancakes! My recipe is nearly the same except for no sugar since it will be plenty sweet with maple syrup, and less baking powder/baking soda. Delicious! Oh, and I also let the batter sit for about a half hour.
MY DEAR FRIEND ΠΑΡΑΚΑΛΏ (WELCOME) IN GREEK I AM SO PROUD OF YOU. WHENEVER I WATCH YOUR VIDEOS I FILL SO NICE. AND I TRY ALMOST EVERY SWEET OR SALTY PLATE YOU PROPOSE TO US. THANK YOU SO MUCH HELEN GREECE ❤❤❤❤❤❤❤❤
Ooo, I love fluffy pancakes. My mom made pancakes on Sunday mornings and her's were so fluffy and yummy. I agree about the 85%/15% analogy. Regulating the heat is very difficult. Maybe you should call the recipe "Agnes' Fluffy Pancakes" (after Agnes from Despicable me) because they are awesomely very fluffy! 😁 Thank you! Now I have to watch your starter video.
1.5 cups AP flour is 240gr? In previous videos, and my own experiments, 1 cup is 120gr. So, 1.5 would be 180gr. 240gr is 2 cups. So, do I use 180gr (1.5 cp) or 240gr (2 cp)?
Please consider doing a video on seasoning a griddle or cast iron pan. I have only ever had pre seasoned pans but would love to know how to correctly season them should I have an accident where that seasoning goes
Was gonna ask about that neat stirring utensil. Looks like you could use it skim pasta from the pot of boiling liquid. You definitely wouldn't want to add more butter to the pancakes 🥞
I've noticed you never use clarified butter. I always use clarified butter for cooking things like pancakes, fried, and scrambled eggs. You get nice crispy results without burning what you are cooking in it.
If you have pressure cooker, you can put a can of condensed milk in the pot, add water 3/4 the can, then press pressure cooking for about 45 minutes. Then you can have duche de leche. It may need more time up to how dark you want. Give it a try and see how you go.
I've been looking for an easy method of mixing stuff into my pancakes. I like banana and toasted pecans, but you can't really use the blueberry method of putting them into the batter after pouring some onto the griddle. It's always tricky to get the consistency right. They're either WAY too thick or WAY too thin. When I do get it in the butter zone, they separate in the middle, almost like a pita.
I am surprised you did this!! You don’t need to pour off the liquid at the top of the sourdough discard. It is wrong that it is not good. It’s the best part. Just stir it back in!
It's basically water and flour mixed together, then fermented. You have to get rid of a little once in a while, and feed it with more flour and water. Check his video. That wasn't the best explanation.😅
A video on the different types of salt would be something I would definitely watch.

I came here to say that.
I have tried a few sourdough discard pancake recipes. This one is the best. So puffy and easier. Thank you!

I’m making these as I write this comment, it’s seriously that fluffy!! If my stove wasn’t terrible, they would’ve cooked evenly on the bottom, but dang they are so delicious! Amazing recipe 🙌😌🤩
Did you add 1.5 cups of flour or 240 grams? Google says 1.5 cups of flour is only 180 grams!
I make sourdough pancakes often and they are so superior to regular pancakes! My recipe is nearly the same except for no sugar since it will be plenty sweet with maple syrup, and less baking powder/baking soda. Delicious! Oh, and I also let the batter sit for about a half hour.
Thank you for this recipe. I make sourdough so always have discards 👍
Thank you sir! Kids and I love your channel!!
I love pancakes and I love sourdough so I will be making these!
Add pumpkin to the batter with cinnamon and nutmeg. For diabetes you could use almond flour.

John, I would like u to try Apam Balik recipe. Same ingredients like this but not using sourdough 😊
I had to substitute whole milk yogurt for milk and egg because I had none of those. Turns out sourdough discard is very filling!
Hey John , may you please make dulcé de leche ❤

Honestly don't really look that good but I trust you👌
Hey john can you publish your book here in the national book store in the philippines
Can you overnight ferment pancake batter?
Love your channel!! John - would you please consider making the Tom Cruise’s coconut cake (Doan’s Bakery)? 😊
My favorite is sourdough waffles…. Either way it’s just an excuse to have some maple syrup!
There is a woman at my local farmers market that sells jars of sour dough pancake batter. They are superb and don’t have a sour taste.
I freeze extra pancakes when I make them.
Can you please make a pecan pie cobbler??

How do you accomplish 3/4 without the actually scoop
Pleaseee croissantss, I need a trustworthy recipe for it 😢
Yum!!!
I am surprised you did this!!
You don’t need to pour off the liquid at the top of the sourdough discard.
It is wrong that it is not good. It’s the best part. Just stir it back in!
please shoot the recipe of the ultra fluffy Japanese pancakes
How do I make sourdough
He has videos on how to make it
It's basically water and flour mixed together, then fermented. You have to get rid of a little once in a while, and feed it with more flour and water. Check his video. That wasn't the best explanation.😅
if you pour out the water in the starter is is no longer at the right hydration level.
I put my left over sourdough discard batter in the fridge and they make for better pancakes the next day
