I'd take a good pancake over a good waffle, but I find it easier to come across a good waffle. On average, I'd still choose pancakes over waffles, though :)
I love the little info boxes while dividing the starter! Otherwise I’d probably gotten confused. Now I’m feeling confident in making a starter myself💪🏽
Claire, would you please do a full video on your starter process? Starting a starter (ahem..) is nerve wrecking to me and I'd love to follow your guidance! Love you and your recipes (videos and book!) lots. I can't wait to make these pancakes one day. 💗
Had a flash back to my youth - 60's/70's - when I seem to remember sour dough pancakes were everywhere. But they were little thin things. These look great and love the addition of corn meal! Plus everything you said about breakfast (eggs) and pancakes (home made; need nap) - all truth!
Just made these today and let me tell you… they are the best pancake I’ve ever had! I added 3 tbsp of brown sugar to the dry ingredients, a sprinkle of cinnamon, and some vanilla paste to the wet ingredients. The pancakes were so fluffy and perfectly sweet on their own. I thought they’d be a tiny bit sour due to the whole cup of starter but they weren’t! I think the starter just added to the airy texture.
In essence, you mix flour and water and leave at room temp. You should start seeing bubbles and activity after a couple of days. Then you start feeding it daily to build the yeasts and fermentation activity. There was an excellent video by Jennifer Latham, head of bread at Tartine, posted to social media towards the start of the pandemic.
I made these pancakes this morning and my mind is blown! I have NEVER had a flavor profile like this! They came together in a quick minute and cooked up in a flash. I tossed in some strawberries and freeze dried peaches to a few. The tang from the starter and sweetness of the fruit was a perfect combination.
Just tried this recipe! It’s delicious! I’m new to sourdough starter, started mine from scratch so ours were made from fairly young starter discard. Also living in CO, so altered recipe to a little less than 1 tsp of baking powder, and closer to 1/4 tsp baking soda. Worked wonderfully! Will be making this again! Love you Claire!
I made these last night and they were the best pancakes I’ve ever had!! Added a tiny bit of vanilla extract but made it per the recipe for everything else. So so good with the cornmeal yum
Claire, you are my pancake spirit animal! 100% to the dark crispy edges! 100% to the love of pancakes and the fear of the diner pancake! I may need to make a sourdough starter just to have the discard to make these.
Omg i've never even thought about the griddling effecting the pancake. I always have hit or miss pancakes even when I follow a recipe to the nose. Def need to think about the heat and oil/butter!
My mother made pancakes using a recipe from her 1950’s Betty Crocker cookbook. She whipped her egg whites and folded them in, too. They were great! You had me at ‘cornmeal’ l love cornmeal pancakes! But, we differ on how to cook them. I’m one of those who looks at your’s and thinks they’re burnt😮 I cook them low and slow, not putting down oil or butter after the first ones. No crispy pancakes for me! I’ll give your’s a try using my method and see how they turn out.
You are so close to a million subscribers. Not surprising at all. You explanations for all things culinary are so well said and easy to understand. So look forward to your videos each week.
Hey Claire! My sister let me know she said hi to you the other day, Callie. We have loved your stuff! You got my Sister and my Mom baking during the lockdown and we had so many virtual bakes with our nephew making your recipes. Thank you for continuing with your stuff, they truly bring families together!
I work in a health care facility, and since then I've rethunk my whole method of eating them, I prefer 1 large with lots of butter and syrup. Those looks awesome and I've always wanted to make a bread starter.
Great video! I care about pancakes SO much! They're a part of the most important meal of the day, after all. The second most important meal is the last meal of the day, dessert.
Wonderful video! I love your explanations & small enhancements from the norm. For me, it’s the soaked cornmeal! I make waffles with a very similar recipe like yours. Next time, I’ll add the cornstarch. I make 8 Belgian waffles with my recipe, we eat 2, & freeze the rest. Butter and real maple syrup, jam & sour cream (or good yogurt)…Yum!
Oh wow those sourdough pancakes look fabulous Claire 😍 I’ve only ever made them once when I used to have my own sourdough starter, and they taste so good with butter and honey. Love your videos, thank you as always x
Growing up in the '70s, my Mom cooked pancakes in Crisco for crispy lacy edges, and I'm probably still carrying some of that Crisco in my arteries today. Worth it, though!
I'm with Claire. A savoury breakfast and an element of sweetness. Whether it be fruit, a sweet drink or stealing a bite of someone's waffles and ice cream.
OMG!! My friends always found my method/preference for homemade pancakes that are ALMOST fried (ie, enough butter and with a dark/burnt crispy rim/edge) to be crazy! But I call it DRIZZLE-LET-IT-SIZZLE!!! I saw your crispy edged pancakes and I feel SEEN!!!
So glad you've got your own channel now. If you are allowed to, I would really love to see you bring back Gourmet Makes. It was always fun to watch and learn how commercial food is made.
Claire, I love that you have uh oh moments when you find your bowl choice to be too small. It happens to me all the time. I'm going to try this recipe. Thank you!
I would love more videos of recipes for sourdough starter! This recipe looks amazing and I cant wait to surprise my pancake and sourdough loving boyfriend with them haha
I didn't expect that much from making this pancakes because I never had success in making the best tasting pancakes, its either its too sweet, too salty, not fluffy, dense, burnt, or undercooked. But from the first bite of the first pancake from this recipe, it jumped to #1 in the list of pancake recipes I made. Its so fluffy, and tasty, not too sweet, not salty, and smells heavenly like biscuits. I used Brian Lagerstrom's sourdough starter recipe.
Hey Claire! I LOVE watching your videos and I was hoping you could help.. I have just bought my first house and am in the process of getting a new kitchen fitted. What are your go to kitchen accessories/bits of equipment that you NEED to have? I have absolutely nothing bar plates and cuttlery currently so it’s a blank canvas. I would love to see a video on this🥰
Light, fluffy pancakes. Yes, please. Can anything get a day off to a disappointing start faster than a heavy, leaden pancake? Watching someone repeatedly mash down on an innocent pancake is incomprehensible. These pancakes look light, fluffy, flavorful. Yay, Claire! All the professional tips and tricks are such treasures! Thank you!
Can you please show more recipes with leftover starter? Especially for just 2 people (this is too many pancakes for 2 imo since we like eggs more). I made starter 2 years ago but there was too much waste so I couldn't keep up with it...thanks!
Hey Claire! I have a question: Could you make the batter (exept the egg white mix) and let it sit in the fridge for 1-2 hours so the sourdough would contribute to the levening factor and then beat the egg whites and add them? Or would that ruin the texture? Thanks for the simple explanation of what a starter is! You reall know how to transfer knowledge which I highly appreciate!☺❤ PS: Archie at the end was such a welcome addition to the video, please more.
I grew up eating crispy pancakes that my Dad would make, and that's the only way to eat them! I can't stand the kind of spongy pancakes sold from places like IHOP and McDonald's. Your pancakes look perfect, Claire!
@14:48 Like "Zoolander" I can only flip to the right... LOL 😂 You made me happy with this pancake vid! I am so picky about my pancakes & I think I like'em just this way! I didn't taste yet!🥞
Claire! You need to try Greek yogurt pancakes, they’re the best..but yours look amazing too! I’m going to make a starter now since you’re the first person to explain it and I understand but I’m going to make bread with it. Thanks homie😘
My husband likes his pancakes fried, I like them soft like cake. I think that is part of their greatness, you can cook them to order; and they do have the potential for decadence (chocolate pancakes with chocolate ganache and whipped cream🤪) while they retain a certain wholesomeness, especially if the major ingredients are organic.😏
Of Course people love pancakes Silly lady ... Great info you are one the best cooking person out there... Lover your content , style and you are just a down right classy lady ..
I love the shot of syrup being poured on the finished pancakes, and the sort of Norah Jones-ish music playing like you're about to have a romantic date with the pancakes. lol
Good Morning! Big questions... Pancakes or Waffles?
The bacteria with tiny faces in the air. :) Thanks Editors!
In all seriousness tho, porque no los dos? 🤣🥰
what about both, with some French toast to boot? Breakfast of champions right there.
I'd take a good pancake over a good waffle, but I find it easier to come across a good waffle. On average, I'd still choose pancakes over waffles, though :)
Yes
pleeeeaaase name the starter “half sour saffitz”😌😌😌
Claire having a photo of Julia Child in her kitchen inspired me to put up a photo of Claire in my kitchen!! She is the ultimate kitchen inspiration ❤️

Yes and then they get burned alive and consumed 😅
@@julietrodriguezart hey, no life is perfect.

WOOOO CLAIRE!!!! I just started up my starter, and have been jonesing for pancakes all week. You have made my kids weekend and they don't even know!!!
Can't wait to hear what they think!
@@CSaffitz They were awesome, kids loved them. Thanks again for the recipe.
I’m just going home 🏠 and I’m not going back back until the weekend 😅

sometimes i will just fry up my sourdough discard as it is in butter and sprinkle some green onions on one side with flaky salt-so good
I tried doing this and found it way too sour. Maybe it's just my starter 😕
Sounds like Mike G from Pro Home Cooks
@@noneness Add a bit of flour and water to it before you fry! It mellows down the strong flavour!
@@noneness you could add a bit more salt or even some spice to offset the sourness along with adding a bit more flour and water too

As a lefty, I understand the challenge of flipping the pancake! One ALWAYS ends up on top of another one.
I don't own many left-handed tools, but I do have a left-handed fish spatula!

I loooovvvveeee the ‘mmm’ verdict. Simple, but gets the point across that it’s really good.
Makes me laugh every time even though I know it's coming 🤣
I'd like a little video about starting your own starter if you can't get some from someone! Loved the ep, thanks Claire!

Very good pancake . God Bless you ❤
Claire: "... it just needs like the littlest bit of maple syrup-"
Also Claire: *proceeds to drench the stack of pancakes in maple syrup*
its giving "2 shots of vodka"

Or Jamie Oliver putting "a little drizzle of olive oil" on _everything_ .
Yeah, that's not drenched. My brother's pancakes end up looking like an island in the middle of a maple syrup ocean.🤣
“Littlest bit of maple syrup” is different in America than it is in the metric system.
