Oh, my goodness. I made this dish but my New Mexico chilis were small so the liquid in the blender was too watery. I boiled another eight Guajillo chillis and put them in. It came out fabulous. Great recipe. Thank you, Claudia, for this awesome recipe.

There used to be a Mexican joint in town that made Chile Colorado with pork. And it was the greatest dish in the world. They served it exactly like this with housemaid tortillas. They used ancho chiles instead. I'm going to make this this this week. The place by my new house gives you the option of pork or beef.

I used this recipe tonight at my husband’s request for this meal. It was very good and great instructions! The only issue is 4 teaspoons of salt! I didn’t use all the salt and it was still very salty 😢 next time I will use maybe 1 teaspoon of salt!
I love this recipe so much I shred it in my blog. lol The one change I make is swapping out the New Mexico chiles for California chiles. They're less spicy.

Yum! I like to use a combination of Ancho, guajillo and pasilla chilies. It makes the sauce alot darker and complex but I have never tried new mexico chilies.. I will for sure!

Growing up, in Los Angeles, I only ever remember it being made with beef. In fact the little corner restaurant I lived down the street from, made it with 2" beef cubes with this lovely Colorado sauce. It wasn't until I moved to Sacramento that I started seeing it everywhere made with pork instead of beef, they also used a lot of oregano, almost overpowering the dish. I've tried some of the pork recipes and I still prefer what I grew up with, the beef. All of that being said, I might try this recipe but with pork, cutting out most of the oregano, sometime in the future.

I think that was my problem too. Mine were too small and it tasted watery. I didn't have any other chilis to add so I added seasonings.

That’s when they add “Chile Ancho” it gives it that dark color 😋 she didn’t add it here. You’re right the dark red ones taste delicious
