    SLOW COOKER SHREDDED CHICKEN BREAST RECIPE
    2 pounds chicken breasts (3-5 breasts, depending on their size)
    1 teaspoon sea salt
    1 teaspoon black pepper
    1 tablespoon garlic powder
    1 teaspoon smoked paprika
    1 teaspoon onion powder
    1 teaspoon Italian seasoning
    1 cup low-sodium chicken broth
    INSTRUCTIONS
    Place the chicken in the slow cooker in a single layer. Season with salt, pepper, garlic powder, smoked paprika, onion powder, and Italian seasoning.
    Pour chicken broth over the seasoned chicken. I flip the chicken upside down and then upright again before placing it on the lid. Place the lid on and cook on low for 6 hours, until the chicken shreds easily with a fork.
    Using two forks, shred the chicken (this can be done on a cutting board or right in the slow cooker).
    NOTES
    Transfer to an airtight container and store in the fridge for up to 5 days or in the freezer for up to 3 months.
    This chicken is a great starter for chicken salad, tacos, sandwiches, burritos, and quesadillas.

    I’m glad you said what size crock pot you have
    I’ve been wanting to get a crock pot but I didn’t know what size to get
    I meal prep 10 meals each week
    5 meals being one recipe
    And the other 5 being a different recipe.
    I use 6 oz (170 grams) of protein for each meal containers.
    So for every 5 containers I’ll use about 900 grams
    (31 ounces or roughly 2lbs of meat)
    I didn’t know what size crock pot to get for roughly 2 lbs of chicken for every 5 meals.
    I thought I would need a 4 quart size.
    Or even 4 lbs of chicken if I felt like cooking all the protein for the 10 meals at once.
    (I hope I made sense in this explanation 😅)

    When I made shredded chicken on the stove, I used water instead of broth. So juice becames my broth which I froze in ice trays and Mason jars. I find that shredding the chicken with a meat masher/chopper is much easier than using forks. You can also use a hand mixer if you want bigger pieces. Then I put the shredded chicken in one cup container and put them in the freezer. Thaw it when ready and make chicken tacos, chicken salad and/or chicken sandwiches
    *Question:* Would it be ok to save and use the juice from your recipe as broth? Also, if I only used two chicken breast how long should it slow cook on low?

      I don't recall her ever saying that she's vegan. She had beef & chicken on this channel as recently as about 2 weeks ago. Not all of her recipes include meat but she has had lots of recipes with meat and other non vegan foods on the channel for years.

    If you are like me and hare dealing with excessive amounts of liquid, as long as you cook in a single layer you don't need to add any! Yeah, no added liquid at all! Most liquid from the chicken will just condensate in a slowcooker, and after you are done cooking you can simply shred the chicken in the pot.
    Another important thing. Can't say about other brands, but smaller Crockpots run hotter. It may tak as litte as 1.5-2h on LOW for the chicken to be done. You can very much overcook chicken breast in the slowcooker, so start checking the temperature at around 1.5h
