Those look like romas (aka plum tomatoes). As opposed to other varietals romas contain very little water which is why they make such a great tomato for salsas, sauces and pastes. It also helps to start with a firm but ripe tomato and a very well-sharpened knife.

Half the video is spent watching you clean up for some reason. You should do another video while cutting it slower so it’s more clear what you’re doing and why you’re doing it.
