How to Pickle Eggs 3 Ways - Golden, Dill, and Red Beet Pickled Eggs

  • If you haven't tried a pickled egg, you have missed out on one of the most unexpectedly delicious edibles! Here is my version of the recipe below! (The original of this recipe was found at PracticalSelfReliance.com by Ashley Adamant)
    GOLDEN EGGS:
    10 Hard Boiled Eggs
    1 Cup White Vinegar
    1 Cup Boiled or Distilled Water (The less chlorine the better)
    2 Tbsp Sugar
    2 Tbsp Salt
    1/2 Cup Onion
    4 Garlic Cloves
    1 tsp Mustard Seed
    1 tsp Celery Seed
    1 tsp Ground Turmeric
    DILL PICKLED EGGS:
    10 Hard Boiled Eggs
    1 Cup White Vinegar
    1 Cup Boiled or Distilled Water (The less chlorine the better)
    2 Tbsp Sugar
    2 Tbsp Salt
    1/2 Cup Onion
    4 Garlic Cloves
    1 tsp Mustard Seed
    1 tsp Celery Seed
    1 tsp Coriander seed
    1 tsp Dill Seed
    3-4 Fresh sprigs of Dill
    RED BEET-PICKLED EGGS:
    10 Hard Boiled Eggs
    1 Cup White Vinegar
    1 Cup Beet Juice (from your recently boiled beets or canned beets)
    2 Tbsp Sugar
    2 Tbsp Salt
    1/2 Cup Onion
    1 Stick of Cinnamon
    8 Whole Cloves
    8 Allspice Berries
    To make the Brine, stir the Vinegar, Water (or Beet juice), Sugar and Salt together over low heat until dissolved and well incorporated.
    In a very clean quart sized canning jar, place onion and all spices in the bottom. Pack with 10 peeled and washed hard-boiled eggs. Pour Brine over eggs until completely covered. Place lid tightly on jar and turn allow to cool to room temperature before placing in the refrigerator.
    Store in refrigerator of 1 week before eating (for fullest taste). Pickled eggs should easily store for up to 4+ months in the refrigerator.

    Another tip for those that have the regular jar lids/rings, don’t use those. Use the plastic lids instead. The vinegar will rust the metal lids and you don’t want that flavor in your brine 🤮

    The yolks turn green, if you overcook them. Bring your water with eggs to boil, cover the pot, turn off the heat and let them stay covered for 15 minutes. Then , open the pot , remove the egg, place them in iced water, let sit for 5 minutes. Peel and eat!

    For anyone wondering, the reason cooking eggs like his works better than boiling is that the steam can reach a higher temperature than boiling water. My understanding is the phase change, from liquid to gas, produces extra heat. The quicker the outside of the egg begins to cook, the faster the air cavity inside the egg expands between the egg white and the shell, which causes the egg white to have less time to stick to the shell before it begins to solidify. This makes it easier to peel.The worst method of boiling eggs is to start them submerged in cold water, as this slow start allows the egg white to begin cooking before the air inside the egg expands and separates the shell from the yolk.

    Sugar IS temperature dependent, so hot water will dissolve it faster and dissolve more of it, that is how you make sweet tea more sweet than adding sugar to cold tea. Salt however will not dissolve any faster nor dissolve more because the water is hotter. In fact the saltiest water is cold, at the arctic or the antarctic. Used to teach chemistry and earth science.

    If you have an egg on the top, just put a scoop shaped onion slice over the top so the egg doesn't touch the air.

    I have watched 6 different pickled egg recipe videos,,,,finally someone who understands how to hard boil eggs correctly. Only one tip,,,get the water to boiling first, then add the eggs. Thank you.

    I absolutely love pickled eggs with my beets always add a stick of cinnamon in my jar. Best ever. Been eating them for 70 years. Never can get enough.

    So fun to watch this! My grandma made pickled eggs for my grandpa every Easter. Must have been the beet juice variety because I called them purple eggs! I remember being little and looking up through the glass jar in the refrigerator during the week they were pickling. My grandma would always tell me, “not yet, they have to sit”. I always thought it was funny that the eggs were sitting and waiting too.

    I just recently came across your channel, love old school cooking. I must say, What an amazing channel, I just made two different kinds of pickled eggs today! As I was watching I kept thinking “this lady seems like such a sweetheart”. Then you spoke of blessing others and I thought right away, I bet she is a Christian...and THEN the scriptures at the end..

    I would put ground pepper with the turmeric for health benefits.
